Place The Ribs On The Grill
Where you place the ribs on the grill is most important. You need indirect heat to cook ribs without drying them out or overcooking them. The goal is to hit temperatures up to 375 F/190 C.
If you have a grill with the burners running front to back, you will need to use one of the burners on either end. Let’s say you are using the left side burner. This means you place your smoke bombs directly over this burner . The ribs will be placed on the grate to the right of the hot burner. If the rack of ribs is short enough to be placed running parallel to the burners, set it near the hot burner but not over it. Otherwise, you might have to place it in a more diagonal position on the grill, which will require rotating the rack of ribs occasionally to even out the cooking.
Place the rib rack bone-side down on the grill, close the lid, and adjust the grill until it holds a temperature of 300 F/150 C. Let the ribs cook for 30 minutes. Don’t open the lid as keeping it closed will hold in as much smoke as possible. Don’t expect a lot of smoke to billow out of the grill as there won’t be a tremendous amount of smoke production.
How To Cook Pork Ribs On A Gas Grill
To cook ribs on a gas or propane grill, you’ll need to set up the grill for smoking. You’ll need to leave the burners off on one side of the grill, and place the ribs there. The other burners will generate the heat. This is called cooking over indirect heat.
Some gas grills simply aren’t big enough to allow for indirect heat cooking, at least not for a cut of meat as generous as ribs.
If your grill does have enough space, you can start thinking about flavor. You can use wood pellets to generate smoke flavor. These pellets can go in a smoke box, or in foil packets.

How To Cook Pork Ribs In An Oven
Cooking ribs in the oven is a straightforward process, but you can’t get any natural wood smoke flavor to the meat.
Also, ovens may not maintain consistent low temperatures the way your Traeger can, so it’s best to cook at a slightly higher temperature, like 250-300 degrees Fahrenheit. You’ll want to wrap the ribs tightly in foil, and place them on a baking sheet. Preheat the oven to the desired temperature, and cook for 3-4 hours.
The timing here is never going to be exact, it will depend on your oven and on the ribs themselves. Use a thermometer to check the temperature of the ribs after about 3 hours. 203 degrees Fahrenheit is ideal.
If you want to brown the surface of the ribs, you can set them under your broiler for a couple of minutes after they’re cooked. Or you can finish them off outside on the grill.
How To Remove The Membrane/skin Off Baby Back Ribs
This is a controversial and personal step when cooking ribs. I grew up eating ribs with the skin left on and only started removing them about 10 years ago advice from a chef. Personally, I love the chewiness of the membrane when left on, BUT, I also love the ease of eating ribs with it removed.
Go with what YOU love!
- Turn ribs over with bone/rack-side facing up. Carefully slide a blunt knife under the membrane at one end of the rack.
- Lift to loosen the membrane off of the bone.
- Using a sheet of paper towel to hold onto the membrane, peel it off the back of the ribs.
- It should come off in one piece.

To Precook Or Not To Precook
The rationale behind pre-cooking ribs is to tenderize the meat before it hits the grill. Then the grilling portion of the cooking process is more to add the char and adhere the sauce to the ribs. But is it necessary? If youre making side ribs, then yes, its a very good idea. As mentioned earlier, side ribs tend to be tougher than back ribs and benefit from some low-heat cooking to tenderize the meat.
Pre-cooking back ribs is optional it can make for an exceptionally tender rib, but it can be bypassed if youre not interested in cooking for hours. Do not precook country-style ribs if you intend on grilling them or they will be very dry.
Putting The Ribs On The Grill
With the grill set up for smoking, we can add the ribs. At most, you will probably be able to fit two racks of baby back ribs or one rack of spareribs. Alternatively, you can buy a rib holder that props up the ribs so they stand on end so that you can fit more ribs at a time. Of course, this really depends on the size and type of charcoal grill you are using. What is important is that the ribs are not set on top of each other. It is important to expose as much of the surface of the rack to heat and smoke as possible.
At this temperature, it is going to take about 3 to 4 hours to cook the ribs completely. We are looking for a final temperature of around 180 F to 185 F/80 C to 85 C. This is the point of maximum tenderness before the meat starts falling off the bone. Remember that great ribs have bones in them and don’t fall into a pile of meat when cooked. That whole “falling off the bone” thing was created by bad restaurants that boil ribs.
Place the rack of ribs on the cooking grate of the grill, rib side down, next to the water pan. No part of the ribs should be directly over the fire. We will turn the ribs in a little while to provide for even cooking.

Whats In Grilled Baby Back Ribs

You’ll need around a 1/2 cup of rub for a rack of ribs. Apply your rib rub directly to the slab by seasoning the meat evenly on both sides. Let it rest on the rack for at least 30 minutes, then cook them on your wood-fired grill.
