Following the few simple steps mentioned below, you can quickly grill the Costco ribs and serve your loved ones.
- At the start, you have to preheat the gas or charcoal grill.
- Set the temperature near to 375 °F.
- Put the ribs inside the grill . Close 2/3 vents if you are grilling on a charcoal grill.

It can be challenging to get an authentic BBQ flavor when you cook ribs on a gas grill. The reason is that gas grills are perfect for fast and hot cooking, but getting delicious and tender ribs requires slow grilling at a low temperature.
However, you can still use a gas grill for ribs provided you take specific steps to grill it low and slow. You should indirectly cook your ribs, so the grills heat is not directly under the baby back ribs but instead on the grills other side. Otherwise, the ribs may burn with high temperatures.
Ensure that the gas grill you would be using contains at least two burners and is spacious enough to hold the rack of ribs on one side with sufficient space on the other.
A full rack of trimmed spareribs is used in this guide. However, you can still apply the same method to a baby back rib or other types of ribs you like.
While the trimmed spareribs take between an hour and a half to two hours to cook, you would need to reduce the cooking time for baby back ribs by about 5 minutes per step.

Cooking time depends on grill temperature. The idea is to keep the grill at a consistent temperature of around 225°F .
Low and slow is the name of the game and why you need to give yourself plenty of prep time.
At 225°F , its going to take at least 5 hours, possibly just over 6 to cook them.
Although we want the internal temperature of ribs to be 190°F minimum, it doesnt mean theyre ready. It takes time to break down the connective tissues that make them tender, and sometimes we need to take them and slowly up to as high as 205°F
The basic timeline looks like this:
- 3 hours of smoking unwrapped
- 2 hours of cooking wrapped in foil
- 1 hour of cooking unwrapped at a higher temperature to finish
Your ribs may take more or less time depending on your grill. Remember to occasionally rotate them, check fire, smoking wood & water every 30 minutes.
Test for doneness, not time or temp, and you should be ready to serve perfect ribs. Ill talk about doneness in a moment.
Keeping The Ribs Moist
The one thing about cooking ribs is that you should not be in a hurry. We know theyre delicious, we love them too. They get you licking your fingers clean, but for as tasty as they require, they require an equal amount of patience.
If you try to speed up the process and try to turn up the heat, the ribs are going to lose their moisture and dry up in the blink of an eye. Thats why we say: cook them slowly on a low grill temperature. Wrapping them up in foil is also going to help.
As with other alternatives, you can brine and marinate them beforehand so that they soak in some juice and have a little more strength to them. You can place a water-filled pan in the cooking chamber. This prevents the ribs from drying out and also helps you maintain a consistent temperature of the grill.

Can You Make Baby Back Ribs In The Oven
If weather isnt permitting, oven baked ribs are the perfect solution!
Set the oven to 325°F, and place the meat bone side down on top of a wire rack set in an aluminum foil lined baking tray.
Then, use the same cooking instructions as shown above Cooking time varies depending on thickness of ribs. You want the pork to cook to an internal temperature of 145°F, but for super tender meat that falls off the bone, keep them on until 195-200°F.
Cooking them to 195° F will still give you a little chew and resistance, 200° F and above will give you fall off the bone goodness.
How To Prepare The Grill
Our main aim here is to turn our grill into a smoker. This actually takes a bit of skill because we need to keep a good, constant heat of about 250F/120 C. Not only will this require the use of a good meat thermometer, but also a little knowledge of indirect cooking.
If you’re unfamiliar with indirect cooking, it’s a method that places charcoal lumpwood under one half of your grill grate, leaving the other side clear. You then put your meat on this clear side, allowing the heat inside the grill to cook it rather than the direct heat from the flames.

With this approach, we’re going to be a bit creative and call on the help of a disposable aluminum pan. We’re going to fill it with water and use it to add moisture to our grilling environment, in turn helping to regulate the temperature. More on this in a moment.
Make sure your BBQ’s grates and drum are both thoroughly clean before cooking. There are a lot of benefits to having a spotless BBQ, so if your grill is dirty then I’d put aside half an hour to really clean it.
