Grilled Lamb Chops With Lemon Butter : Grilling Out

Serves: 4 / Prep time: 15 minutes / Total time: 45 mintues2 pounds lamb loin chops, about 104 cloves garlic, peeled, minced1 heaping tablespoon fresh rosemary1 tablespoon fresh chopped thyme1 teaspoon kosher salt½ teaspoon ground black pepperJuice of one lemon Rosemary sprigs for garnishBalsamic glaze, optional

Place the lamb in a dish. Set aside. In a glass measuring cup, combine the garlic, rosemary, thyme, salt, pepper, lemon juice, olive oil and balsamic vinegar. Whisk to combine. Pour the marinade over the lamb chops. Turn the chops over to cover them completely. Cover the dish with plastic wrap, refrigerate and marinate at least 3 hours or overnight. Remove and uncover the lamb about one hour before you are ready to grill. Preheat the grill to low-medium heat about 300 degrees. You are going to cook the chops at low heat first, then sear them over high heat.Place lamb chops on the grill. Close the lid and grill about 10 minutes or until chops reach an internal temperature of about 110 degrees. Increase the heat on another side of the grill to high. Move the lamb chops over to the hotter side of the grill and sear on each side about 2 minutes, just so you get a nice crust on them. For medium-rare, the internal temperature will be about 130 degrees. Remove from the grill and let rest 5 minutes before serving.Place the lamb chop son a platter, garnish with rosemary sprigs and serve with optional balsamic glaze.

Rack of lamb This is a trimmed rack of six chops that can either be roasted whole and carved into chops, or cut into cutlets that can then be quick-cooked.

Lamb cutlets Taken from the rack of lamb, these neat chops can come with a layer of fat surrounding the eye of the meat that extends to the bone, or they can be French-trimmed to expose the bone. These can be simply pan-fried, griddled or quickly barbecued and sometimes find their way into a casserole.

Lamb lollipops This is a well-trimmed cutlet that has had the eye of the meat batted out.

Loin chops Cut from the saddle, these meaty chops have a T-shaped bone in the middle which is so thick the meat is quickly roasted.

Barnsley chops

Chump/rump chops A boneless slice of the chump, these are very good value and can be pan-fried or barbecued like a steak.

Leg steaks A cross-section of the leg, these steaks can vary in size and normally have a piece of bone in the middle that the marrow can be eaten out of once cooked. A great steak to barbecue.

How To Make Lamb Chops

  • Marinate the chops for at least 2 hours, but youll get the best flavor if theyre marinated for at least 8 hours.
  • Grill: Sear both sides of the chops on high heat then reduce the heat and cook until the desired internal temperature is reached.
  • Dont feel like grilling? Make these lamb chops on the stovetop too!

    Stovetop Directions: Allow the meat to sit at room temperature for about 30 minutes before cooking. Using a cast-iron skillet is preferred, but stainless steel will also do. Sear each side of the chops for 4 to 5 minutes over medium-high heat until desired internal temperature is reached. Allow the meat to rest on a plate for a few minutes before cutting and serving.

    Grilled Lamb Chops Flavor Variations

    While these lamb chops are delicious as-is, you can change up the flavor profile by adding different ingredients to the marinade.

    • Spicy: Add crushed red pepper flakes or hot sauce to the marinade to taste.
    • Asian: Use a blend of olive oil, sesame oil, fresh lime juice, soy sauce, brown sugar, minced ginger and garlic. Omit the parsley, thyme, rosemary, lemon zest and Dijon mustard.

    The Lamb Chops You Use Matter

    Lets talk lamb cuts, so we can understand exactly what were grilling here.

    There are several lamb chop cuts, and which you use may change the difficulty or grilling time.

    So, we have :

    • rib lamb chops, the most common
    • lamb loin chops
    • lamb shoulder chops

    Now, rib chops have the most fat marbling, which is going to give you a nice and tender grilled lamb. These are going to reach medium-rare and come off the bone nicely in a few minutes, about 7.

    Theyre also the most common and expensive kinds of lamb chop.

    Loin chops are a bit less flavorful and also tougher than rib chops. This is because the animal will move around a lot, and the loins are used quite a bit, which hardens the muscle.

    As such, these will have a little less fat marbling than rib chops.

    And finally, lamb shoulder chops are the toughest of the 3. Still tender, but when compared to the rib theres a clear difference.

    So for best results I recommend you use lamb rib chops. If you use other cuts, be sure to marinate them properly and for longer.

    Lamb shoulder chops require significantly shorter cooking time than other cuts. The easiest and fastest method to prepare them is to cook them on the stove top in a heavy bottomed skillet or a grill-pan.

    There are two types of lamb chops depending on which part of the animals shoulder they are cut from arm chops and blade chops.

    How Long To Cook Lamb Chops On The Grill:

    Since all lamb chops are of different sizes I find using a thermometer is the best way to get your lamb chops cooked to the temperature you prefer. 110° for rare, 130° for medium-rare or 150° for medium.

    If you dont have a thermometer you can use the following guidelines for timing on a 1 1/2 lamb chop to achieve

    • Rare: use 3-4 minutes per side on the lower heat section of the grill and then 1 minute per side on the high heat area of the grill for searing.
    • Medium-rare: 4 minutes medium heat, 1-2 mins sear
    • Medium: 5 minutes medium heat, 1-2 minute sear)

    A rack of lamb takes about 15 minutes to cook on a grill over medium-high heat to a medium-rare to medium doneness. Rotate halfway through, or grill about 7 minutes per side to evenly sear the rack. Cook directly over the heated grates, indirect heat is not needed.

    Its best to close the lid when grilling a rack of lamb, as well as most meats, for even cooking. The outsides will still sear and the built-up heat inside will more evenly cook the center.

    When youre ready to grill these babies up, heat your grill to medium-high heat. You want to get these beautifully seared. Grill the lamb chops for 7-10 minutes, or until they reach an internal temperature of 135 degrees F , then its time to take them off. At that point, theyll be about medium, which is how I like them. You definitely dont want to cook these well done. Theres nothing worse than a dried out, over-cooked lamb chop.

    Place the cooked lamb chops on a plate, and cover with foil. Allow them to rest for 5 minutes before serving.

    Tips For Grilled Rack Of Lamb

    Bring the lamb chops to room temp: As with most meats, you want to bring the rack to room temperature before grilling. Otherwise, the outside may char before the insides can evenly cook. About 30 minutes is needed to bring it to room temperature. This is a perfect time to let the seasonings soak into the meat.

    Pre-season: Generously coat both sides of the lamb rack with a simple mixture of salt and black pepper, or you can use other preferred seasonings. Ill recommend some of my favorites later in this post.

    Preheat the grill: Preheat the gas grill to medium-high. You want the grill hot before adding the lamb chops to prevent sticking and to create a nice sear.

    Lightly grease the grill: Add a bit of cooking oil to a paper towel and carefully wipe on to heated grill grates. Then immediately add meat to prevent sticking.

    Wrap the bones in foil: The bones have a tendency to burn before the rest of the rack is cooked. If it does this is fine and doesnt affect the flavor. To prevent this, wrap the bone tips in foil while grilling.

    Dont overcook: As with all meats, cook just to the desired doneness. I prefer medium, or about 145 degrees F. The centers will still be a bit pink and extra juicy.

    Let rest before serving: Let cooked meats sit at room temp 5 to 10 minutes to rest hold in more juices. Then cut and serve.

    What Type Of Lamb Should I Buy For Chops

    I prefer to use a whole rack of lamb instead of chops. While you can purchase pre-cut chops, they can dry out on the grill much easier.

    Chops have the advantage of cooking faster and also have more surface area for searing. However, a rack of lamb gets plenty of sear on the edges, while being much juicier. With a rack, its easy to get a crisp, grilled outside and juicy, medium to medium-rare center with little effort.

    What Temperature Should Lamb Chops Be Cooked To

    Lamb chops range in thickness from ½ to 1-inch in size, depending on the butcher. The tender meat needs brief high heat cooking like a steak, and its best to eat at medium-rare to medium temperatures.

    Target 125°F for medium-rare, or 135°F for medium. Ensure to rest the meat for at least 10 minutes to allow for carryover cooking and hitting just the right doneness temperature. Overcooked or well-done lamb will be dry and stringy.

    How To Serve And Store Leftovers

    Let the lamb chops sit at room temperature about 10 minutes after grilling, then slice between the bones to create chops.

    For leftovers, refrigerate or freeze based on the times below.

    • The marinade can be prepared up to 3 days in advance. Store the marinade in the refrigerator until youre ready to use it. The olive oil may solidify in the refrigerator. If this happens, simply place the marinade at room temperature for about 20 minutes and the oil will liquify again.
    • Grilled lamb chops stay fresh in the refrigerator for up to 3 days. I recommend reheating the chops in 30 second increments in the microwave until just warmed through. This will help to keep your lamb from overcooking.

    What Cuts Of Lamb To Select To Grill

  • There are three kinds of lamb that work on the grill, loin chops, shoulder chops and rib chops. I find the loin or rib chops work the best because you can trim off most of the fat which prevents them from starting the flare-ups on the grill.
  • You can also grill a leg of lamb, but its not a quick meal for entertaining. They are delicious, but I find I need those meals that can come together quickly in the summer and fall.
  • Buy the chop at a width of 1 1/4 1 3/4 thick, and make sure the cut is the same thickness for the whole chop.
  • The chop cooks evenly and doesnt dry out in parts if you make sure the cut is uniform for all of the chops.

    How Long Should Lamb Be Cooked

    Lamb meat is more delicate than beef. Therefore, the ideal way is to cook it at low temperatures, over a flameless grill and for longer than other meats.

    Depending on the cut, lamb gets more tender the longer you cook it. If you cook a lamb shank low and slow, it will become more tender as long as you dont let it dry out. A lamb chop, on the other hand, will reach optimum tenderness at medium-rare. After that, it will become tougher as it cooks.

    So, depending on the cut you choose, in general, the lamb should be cooked for 2 to 3 hours, always paying attention to the grills temperature and whether the meat is not getting dry drizzle it with a marinade sauce so that it does not dry out.
