How To Grill Prime Rib:

  • Bring roast to room temperature by placing on the counter for a couple of hours before you are ready to grill.;
  • Prepare a grill fire to 500° with hickory for smoke flavor.;
  • Rub entire roast with olive oil.;
  • Season with granulated garlic, salt and pepper, rubbing all over the roast.;
  • Mince garlic and rosemary and sprinkle over roast, pressing lightly to adhere the herbs to the roast.
  • Place over indirect heat and cook with the grill closed for about 20 minutes.;
  • Lower grill temperature to about 250°and continue to cook for about 20- 25 minutes per pound until desired internal temperature is reached using a digital thermometer. A digital thermometer; is a must- have to grill the perfect prime rib and they are very affordable.;We cooked ours to about 125°.
  • Remove to a cutting board and tent with foil for 20 minutes before slicing. This is crucial to have the juiciest slices of prime rib, don’t skip this step. The internal temperature will rise about 10° as it rests.;

I admit that I’m often guilty of hyperbole and severe misusage of words, particularly when it comes to “perfect.” Truth be told, there’s no such thing as a perfect recipe, because if a truly perfect recipe did exist, then there’d be no reason to continue exploring and experimenting in the kitchen, which would mean that my mom was right and what the heck am I doing with my life?!

So when I use the word “perfect,” what I really mean is, “I’ve given this issue a lot of thought and spent countless hours studying and testing it, and to the current best of my knowledge, this is the best method for getting from point A to point B with minimal fuss, but it may well turn out that in a few years, a few months, or maybe even a few days, I’ll discover something that makes me change my mind about something that I was convinced of or at least fairly certain of or at least could make a good argument for in the past, so please take it with a grain of salt when I say that this is perfect.”

In other words, any recipe writer , who is unwilling to go back on their word in the face of new evidence or better technique has already lost the long, hard battle towards beauty and truth.

And remember, a roast will continue to rise by 5 to 10°F as it rests , so make sure to pull it out early to account for that!

I’ve seen a copule sources recommend a form of pseudo dry-aging at home . Having thoroughly tested this method and having administered multiple blind taste tests with the results, I can confirm with multiple blind taste tests that the method absolutely does not workat least, if true dry-aged flavor is what you’re after. It willdessicate the exterior a bit, making for more efficient browning, but other than that there are precisely zero detectable flavor differences of texture differences between 1-week home “dry-aged” beef and completely fresh beef.

  • Buy a roast from your butcher or supermarket. Plan on at least ½ to 1 pound per person. A roast with 2 rib bones should feed 4 people, 3 bone is for 6 people and 4 bone is for 8 people.
  • Let the roast sit out for 30 to 60 minutes so that it comes to room temperature. Rub the roast with some olive oil and your favorite seasonings. I like to use my favorite HOMEMADE BEEF SEASONING. This contains kosher salt, pepper, garlic powder, paprika, onion powder and oregano.
  • Get your grill hot to about 350 degrees. Cook the roast bone side down on indirect heat for about 15 minutes per pound. Roast is done when a meat thermometer placed inside the meat reads 125 degrees for rare, 130 for medium and 140 for well done.
  • Let the roast rest for 15 minutes before slicing. Remember that the roast will continue to cook while resting.
  • Remove the bones by slicing along the ribs to remove them. Separate each rib and put them aside. Slice the roast in the same direction as the ribs. Serve on a platter with the ribs.
