Resting The Prime Rib Roast

Prime Rib On A Gas Grill – Ace Hardware

When the meat has reached the designated temperature, remove it from the grill and place it onto a cutting board or other flat surface. Tent loosely with aluminum foil and let it rest for at least 20 minutes if not an hour.

During this resting period, the meat fibers will relax and reabsorb some of their lost juices, leading to a more tender and flavorful meat. Additionally, this extra time allows the residual heat inside the roast to distribute evenly, raising the temperature by about 5 degrees and ending the cooking process.

Rule #: Grass Is For Funk Grain Is For Fat

Used to be that most 100% grass-fed beef was lean, lean, lean. These days, with more folks getting into the game, that’s not always the case. But 100% grass-fed beef tends to be a little more grassy and funky in its flavor than grass-fed, grain-finished beef, which tends to be richer. For the record, all beef is raised primarily on grass. Grain-fed steer are only finished on grain for the last few months of their lives. .

Rules For Perfect Prime Rib

Grilled Prime Rib Roast
  • Email

I admit that I’m often guilty of hyperbole and severe misusage of words, particularly when it comes to “perfect.” Truth be told, there’s no such thing as a perfect recipe, because if a truly perfect recipe did exist, then there’d be no reason to continue exploring and experimenting in the kitchen, which would mean that my mom was right and what the heck am I doing with my life?!

So when I use the word “perfect,” what I really mean is, “I’ve given this issue a lot of thought and spent countless hours studying and testing it, and to the current best of my knowledge, this is the best method for getting from point A to point B with minimal fuss, but it may well turn out that in a few years, a few months, or maybe even a few days, I’ll discover something that makes me change my mind about something that I was convinced of or at least fairly certain of or at least could make a good argument for in the past, so please take it with a grain of salt when I say that this is perfect.”

In other words, any recipe writer , who is unwilling to go back on their word in the face of new evidence or better technique has already lost the long, hard battle towards beauty and truth.

Rule #1: Use A Thermometer

Timing is at best a loose guide to when your meat will be ready. It can’t take into account variables like oven cycles, fat content, convection patterns, or nosy relatives poking their face in the oven every few minutes. A thermometer is the only way to guarantee perfectly cooked meat, and a good instant read is the best one for the job. Aim for 115 to 120°F for medium rare , or 125 to 130°F for medium . And remember, a roast will continue to rise by 5 to 10°F as it rests , so make sure to pull it out early to account for that!

Rule #: Only Dry Age At Home If You’ve Got The Proper Resources

I’ve seen a copule sources recommend a form of pseudo dry-aging at home . Having thoroughly tested this method and having administered multiple blind taste tests with the results, I can confirm with multiple blind taste tests that the method absolutely does not workat least, if true dry-aged flavor is what you’re after. It willdessicate the exterior a bit, making for more efficient browning, but other than that there are precisely zero detectable flavor differences of texture differences between 1-week home “dry-aged” beef and completely fresh beef.

True dry-aging at home is possible, but it requires the right cut of meat and the right aging environment. Given the proper technique, it is possible to do at home. Check out our Complete Guide to Dry-Aging Beef at Home for more details.

Tips For Cooking Prime Rib:

The first time you cook a prime rib it can be intimidating since it’s an expensive main dish and usually it is for a celebration or holiday. Honestly, it’s one of the easiest holiday meals to prepare.

The secret to cooking the best prime rib is to use a digital meat thermometer to get the internal temperature where you want it. I like this thermometer from Amazon. They are quite affordable and just the ticket for cooking meat on the grill or indoors.;

It is very important to let your prime rib rest after cooking. 20-30 minutes is perfect. Loosely cover with foil to keep it warm and let the temperature rise slightly and you will end up with a juicier slice of meat.

Are you nervous about cooking for your upcoming holiday or celebration? Try a practice run on a rump roast and apply the same method. You will enjoy a wonderful dinner and build your confidence.; Keep in mind while the rump roast is delicious, it will not be as tender and flavorful as the more expensive cut of prime rib.;

We also enjoy this Garlic and Herb Prime Rib that is cooked with the same method. It’s a great holiday meal.;

S To Grilling This Prime Rib Roast

Grilled Prime Rib
  • Buy a roast from your butcher or supermarket. Plan on at least ½ to 1 pound per person. A roast with 2 rib bones should feed 4 people, 3 bone is for 6 people and 4 bone is for 8 people.
  • Let the roast sit out for 30 to 60 minutes so that it comes to room temperature. Rub the roast with some olive oil and your favorite seasonings. I like to use my favorite HOMEMADE BEEF SEASONING. This contains kosher salt, pepper, garlic powder, paprika, onion powder and oregano.
  • Get your grill hot to about 350 degrees. Cook the roast bone side down on indirect heat for about 15 minutes per pound. Roast is done when a meat thermometer placed inside the meat reads 125 degrees for rare, 130 for medium and 140 for well done.
  • Let the roast rest for 15 minutes before slicing. Remember that the roast will continue to cook while resting.
  • Remove the bones by slicing along the ribs to remove them. Separate each rib and put them aside. Slice the roast in the same direction as the ribs. Serve on a platter with the ribs.

    What You’ll Need For This Grilled Prime Rib Roast Recipe

    In order to make this recipe, you’ll need a few ingredients first. Luckily, outside of the prime rib roast itself, they’re all fairly cheap. You might even have most of the major components in your home right now.

    • Charcoal or propane/gas grill .
    • Chunk charcoal or propane.
    • Freshly ground black pepper, coarse grind.
    • Prime beef rib roast, about 18 pounds .

    What About The Sauce

    Since publishing this Perfect Prime Rib recipe, the most frequently asked question has been, “what about the jus?”

    See, the great thing about that method is that it absolutely minimizes moisture loss within your meat. There are very few drippings into the bottom of the pan. A 10-pound roast will leave about this much:

    This is good news for your beefit means that rather than having its juices squeezed out into the pan, they’re all trapped safely inside the meat, leading to juicier, tastier results. But there’s one downside: without any flavorful drippings, there’s no easy way to make a tasty just or gravy to drizzle over that meat, not to mention make your Yorkshire Puddings.

    The easiest solution I’ve found? Use some extra beef. By searing off a few hunks of beef shin or oxtail in a Dutch oven, deglazing the drippings with wine and stock, adding some vegetables, then roasting the whole lot along with the prime rib in the same oven, you can build a powefully flavorful jus, with the added benefit of having a pile of fall-off-the-bone tender braised beef oxtails to serve alongside that roast dinner.

    What’s that? Too much beef for one holiday table you say? That’s alright, you’re not invited to my place either.

    What Size Of Prime Rib Roast To Buy

    A common question people ask is How much prime rib roast should I buy per person? ;A full prime rib roast is seven ribs, close to 15 to 18 pounds, and enough to feed a crowd of 14 or more people . ;The term standing means the bones are included in the roast, thus the roast can stand by itself. ;A prime rib roast comprises of seven ribs starting from the shoulder down the back to the loin.

    Do not even bother with less than a three-rib roast, any less than that is not a roast but rather a thick steak and would be better treated as such. ;For a generous serving of roast, figure on two people per rib. ;That means if you plan to serve:

    two people one rib roast

    six people three ;rib roast

    eight people four rib roast

    ten people five rib roast

    twelve people six rib roast

    fourteen people seven rib roast

    The cook time for your prime rib will vary depending upon the size of your roast. The first thing you want to do is make sure you take it out of the refrigerator at least 30 minutes before you start to grill it. You want to allow your roast to come up to room temperature.

    I used vegetable oil for the rub but you can use olive oil if you like. Make sure that you work the rub all over so that the whole roast is well covered.

    Rule #: Season Well And Season In Advance

    For best results, salt your prime rib on all surfaces with kosher salt at least 45 minutes before you start cooking it, and preferably the day before, leaving it in the fridge uncovered overnight. Initially, the salt will draw out some moisture and end up dissolving in it. Over time, this salty liquid will dissolve some meat proteins , loosening its structure, and allowing the salty juices to be re-absorbed into the meat. Your meat ends up better seasoned with less salty run-off.

    The Perfect Gift: Prime Rib

    The holiday season is right around the corner, which means its time to start thinking about gifts for family and friends.;;In my eyes, the most genuine and honest gift you can give someone is an amazing;grilled meal.; This is one true and honest way to show them how much you appreciate and love them.

    Here are some of the ways to go about doing this:

    First, you need the best grill;possible to cook your food.; Luckily, Weber grills has you covered.

    Next, you need to get the best beef products possible.; This is where I can refer you to one of the best butchers in the USA, if not the world, Lobels of New York.; They have been beef experts and masters for over 160 years.; The quality of their products far exceeds anything I have ever had before, and their service, attention to detail, and beef are second to none. ;

    Lobels only buys USDA prime beef, which accounts for less than 2% of all beef. On top of that, they pay a high premium for the best of the prime category. The quality is the absolute best top tiered prime beef you can buy.;

    Now, with the right grill and the right beef, its time to season the meat and get the right instructions on how to grill the particular cut for that day.;

    Here are my top 5 tips for seasoning the prime rib roast:

  • Salt, pepper, and granulated garlic are all you need. One part salt, two parts pepper, and two parts granulated garlic.
  • For an extra flavor boost, try fresh herbs or Herb de Provence to really bring out the flavor of the outside crust.
