French style slow braised short ribs in a tasty sauce! Pure comfort food! Brown the beef in a large, oven-safe, sauce pan over medium-high heat, about 3-4 minutes per side, and set aside before draining off all but 2 tablespoons of the grease. Add the onions, carrots, celery, and mushrooms and cook until tender, about 7-10 minutes.

Season short ribs evenly with salt and pepper. Preheat a skillet to medium high, add oil and sear short ribs on all sides . Set short ribs aside in casserole pan. Add shallots and thyme to skillet and sauté 1 minute. Stir in 1/2-cup wine and simmer 3-4 minutes while scraping up browned bits from pan.
Sprinkle remaining garlic over the top of the ribs. Add enough beef stock to cover the ribs about 1/2 to 2/3 the way up their sides. Cover, place in the oven and braise for 2-2 1/2 hours. While the ribs are cooking, make the potato and parsnip puree. Fill a medium pot with cold water and add some salt.

How Long Do You Grill Boneless Ribs
BBQ provides ribs with their distinct taste, while baking gives them more time to cook. Oils and fats used in baking are healthier than those used for BBQ, which is why baking is a healthier option. You can bake ribs without the need for high heat, since you dont need to add fat to get the same result. This is especially important when you want to bake a large amount of ribs at once. Instead of using a slow cooker, you should use a microwave oven. Microwave oven cooks ribs quicker than a conventional oven, allowing you to finish cooking them sooner. If you prefer to use your oven to roast your meat, try roasting your pork chops instead. Roasting gives your chicken a more tender texture and helps it retain its juices longer. To roast a whole chicken, place it in an aluminum foil pan and cover with aluminum wrap.
Grilled Beef Short Ribs Ingredients:
- Beef short ribs
- Andrias Steak Sauce
I almost feel like they should have dots ranging from 1-6 on the side and I should be rolling them down some green felt. They also remind me of this pic I put on :
Simply coat all six sides of the beef short rib cubes with salt, pepper and the rub:
Now time for the Andrias Steak Sauce:
I know some of you are wrinkling your nose right now. Dont think of that certain A-OK steak sauce. Think heaven. This stuff is not something you dip your steak in after you cook it because a steak needs no sauce after its cooked other than maybe a little compound butter melted on top. This is a basting and marinating sauce. Its absolutely amazing. I use it on everything from meatloaf, scallops to steaks. A poor, but somewhat adequate substitute, for Andrias is Worcestershire sauce and some granulated garlic.
I poured some on the plate and then dipped each side of the beef short ribs in the Andrias. Then I dropped the soon to be grilled beef short ribs into my smoker which was hovering right around 300 degrees:
How long does it take to get these short ribs to temp? Depends on how hot the fire is. I did them around 300 and it took close to 3 hours. If you were to do them at say 225, they would take significantly longer. The moral here is dont judge by time. Judge by temp. Get an instant read thermometer and stop taking the guess work out of your grilling. I cant tell you how much better my grilling has become since I got one.
So how did I do?

After a while of smoking, spray the rib ends with water to make sure theyre moist enough to hold their shape. After about an hours of roasting, sprinkle the meat with salt and pepper to keep the moisture in. When the time comes to remove the heat, let the roast rest for about 15 minutes before slicing. You can also slice the entire roast after it has rested for 15 minuets. This will give you a nice, crispy, browned exterior. Be careful not to slice too thin, though, since this can cause the outside of your meat to become soggy. For the best results, slice your roast right before serving. Serve with mashed potatoes, gravy, vegetables, rice, noodles, etc. Do not skip the gravy.

Beef Short Ribs Vs Back Ribs
Shorties and back ribs are often confused, but there are some stark differences between the two beef cuts. The main one being that short ribs carry more meat, and are mightly impressive when served as a single rib.
Back ribs are often cut from below the prime rib roast, a famously expensive beef cut. As a result, back ribs dont tend to carry a lot of meat on top of the rib, but they do have some delicious stuff between the bones. Unlike shorties, they tend to come in 8-inch slabs.
They can be cooked in a similar way and can be done in six hours cooked low and slow. Check out our smoked beef back ribs recipe to find out more.

Also sold as: galbi or kalbi , Jacob’s Ladder , asado de tira .
Where it’s cut from: The ribs. Short ribs can be cut numerous ways, but come from the area of the ribs a bit further down towards the belly than rib steaks or strip steaks . When cut into long slabs with bone sections about 6 to 8-inches in length, they are referred to as “English cut.” When sliced across the bones so that each slice receives four to five short sections of bone, they are known as “flanken style.”
Like all meat, short ribs can vary in quality. The very best short ribs come from high up on the ribs, close to where ribeye steaks are cut from. The top six inches or so is what you’re looking for. With steaks cut from this region, you’ll find a bone about six inches long, one and a half inches wide, and half inch thick along with a slab of meat sitting on top of it about an inch tall.
Some less scrupulous butchers will sell sections cut from much lower down on the rib as “short ribs.” You’ll recognize these by the skimpy amount of meat on them. Don’t bother with these, they won’t work at all . Look for meaty ribs with plenty of intramuscular fat known as marbling.
Either English or flanken cut will work just fine on the grill, but I personally prefer to buy my ribs English cut. This affords me the possibility to remove it from the bone into one, relatively thick steak, like this:

How To Cook Beef Short Ribs
Ribs come from well-used muscles in the steer. That means there is lots of connective tissue that must be broken down by long, slow cooking times. Although short ribs need to cook for an extended period of time to get tender, its definitely worth the wait!
For this recipe, you lightly coat beef with olive oil and then season both sides generously with a beef rub.
After rubbing in the dry rub thoroughly on all sides of the beef, place ribs in covered dish or Ziploc bag and refrigerate for 2-4 hours.
Next, remove ribs from refrigerator and place on foil lined baking sheet. Cover ribs completely with another piece of foil and seal the edges so that no steam can escape. Bake for 3 1/2-4 hours. Carefully open the foil. Using a meat thermometer, take the temperature in between the bones. The connective tissue will start to melt at 170°F and your desired end temperature is around 200°F for them to be fall-off-the-bone delicious. The only way to know these temperatures is with an accurate meat thermometer .
After cooking, drain the excess fat. Then, if desired, you can slather the ribs with your favorite BBQ sauce and cook for another 5 minutes under the broiler. Below is our favorite homemade BBQ sauce. Its quick and easy with only a few pantry ingredients. Or, you can use your favorite store-bought sauce.
Clean-up is easy since everything is one pan. If you want to make it even easier, cook the ribs in a disposable pan.
How To Slice And Serve Boneless Beef Short Ribs
After letting the meat rest 10 minutes, we slice the short ribs thin against the grain.
What does this mean? Meat is made up of bundles of muscle fibers that run parallel to one another. The fibers form a pattern that is referred to as the grain it looks similar to wood grain.
Slicing against the grain means cutting the fibers into shorter pieces. This makes tougher cuts such as boneless short ribs more pleasant to eat because shorter lengths of muscle fibers are easier to chew.
Its easy to cut boneless short ribs against the grain because the muscle fibers tend to run diagonally. That means that as long as you slice the meat lengthwise, youll be cutting against the grain.
We like the grilled short ribs served with nothing more than a sprinkle of flake sea salt and a spritz of tart lemon juice to balance their richness, but theyre also terrific with a bold, bright sauce. Lan developed two sauces that get their backbones from fermented products. Kimchi-Scallion Sauce features kimchi combined with a hit of fresh scallions, and Preserved LemonAlmond Sauce marries citrus and nuts in the form of tangy, floral preserved lemon and crunchy toasted almonds.

How To Tell Your Beef Ribs Are Done
In this low and slow method, your beef ribs will take six to eight hours to cook. You may see the fleshy part start to loosen from the bone as they reach the end. Use your tongs to see how tender they are. You can also cut into the meat to make sure there is no pink remaining.
If your ribs are in a rack, you can twist the center rib. If it comes away from the meat easily, your ribs are ready.
What about a meat thermometer? Ribs are not the most practical cuts into which to try to insert a probe. Some areas are pretty thin. Temperature measurements near the bone do not tell you about meat in the center of the rib.
However, where meat thermometer placement may be tricky, toothpicks work like a charm. When ribs are ready, a toothpick should slide easily in and out of the flesh between the bones.
