How To Smoke Beef Ribs

Low and slow is the name of the game when smoking beef ribs. You need enough smoke to properly season the meat and give you that beautiful dark coveted bark. These guys also need plenty of time to render that fat and tough connective tissue to get them to a perfect fall-off-the-bone texture.

  • Prep. There is a layer of fat on top of the ribs and another papery membrane on the bone side of the ribs. You can ask your butcher to remove the membrane or you can do it at home. Either way, that membrane is not very pleasant to eat and you want it gone. If youre doing it at home, work a butter knife underneath the membrane, use a paper towel to get a good grip, and lift it off.
  • Season. Slather the trimmed ribs in spicy Dijon mustard , and season liberally with either my Beef Rub or equal parts salt, pepper, and garlic powder. The mustard gives a little hint of flavor while also helping that dry rub cling to the outside of the ribs.
  • Smoke. With your smoker preheated to 250 degrees F, place the seasoned ribs on the smoker, close the lid, and smoke for 3 hours.
  • Spritz. Spritz these ribs with a vinegar and hot sauce blend . These ribs are not wrapped, so to keep things moist and help develop that yummy bark, the spritz is crucial. Dont be fooled into thinking it is too spicy, its really not. It just adds a little extra bite and wow to the ribs . Continue to smoke until the ribs reach 203 degrees F.

    French style slow braised short ribs in a tasty sauce! Pure comfort food! Brown the beef in a large, oven-safe, sauce pan over medium-high heat, about 3-4 minutes per side, and set aside before draining off all but 2 tablespoons of the grease.     I know some of you are wrinkling your nose right now. Dont think of that certain A-OK steak sauce. Think heaven. This stuff is not something you dip your steak in after you cook it because a steak needs no sauce after its cooked other than maybe a little compound butter melted on top. This is a basting and marinating sauce. Its absolutely amazing. I use it on everything from meatloaf, scallops to steaks. A poor, but somewhat adequate substitute, for Andrias is Worcestershire sauce and some granulated garlic.

    How long does it take to get these short ribs to temp? Depends on how hot the fire is. I did them around 300 and it took close to 3 hours. If you were to do them at say 225, they would take significantly longer. The moral here is dont judge by time. Judge by temp. Get an instant read thermometer and stop taking the guess work out of your grilling. I cant tell you how much better my grilling has become since I got one.

    What Are Boneless Beef Short Ribs Anyway

    These so-called ribs, which typically measure about 2 inches thick and 5 inches long, are not real ribs at all. They are cut from the area above the ribs closest to the chuck, or shoulder, of the animal, where most of the meat is made up of the heavily marbled serratus ventralis muscle.     Where it’s cut from: The ribs. Short ribs can be cut numerous ways, but come from the area of the ribs a bit further down towards the belly than rib steaks or strip steaks . When cut into long slabs with bone sections about 6 to 8-inches in length, they are referred to as “English cut.” When sliced across the bones so that each slice receives four to five short sections of bone, they are known as “flanken style.”

    Like all meat, short ribs can vary in quality. The very best short ribs come from high up on the ribs, close to where ribeye steaks are cut from. The top six inches or so is what you’re looking for. With steaks cut from this region, you’ll find a bone about six inches long, one and a half inches wide, and half inch thick along with a slab of meat sitting on top of it about an inch tall.

    How To Cook Beef Short Ribs

    Ribs come from well-used muscles in the steer. That means there is lots of connective tissue that must be broken down by long, slow cooking times. Although short ribs need to cook for an extended period of time to get tender, its definitely worth the wait!

    For this recipe, you lightly coat beef with olive oil and then season both sides generously with a beef rub.

    After rubbing in the dry rub thoroughly on all sides of the beef, place ribs in covered dish or Ziploc bag and refrigerate for 2-4 hours.

    Next, remove ribs from refrigerator and place on foil lined baking sheet. Cover ribs completely with another piece of foil and seal the edges so that no steam can escape. Bake for 3 1/2-4 hours. Carefully open the foil. Using a meat thermometer, take the temperature in between the bones. The connective tissue will start to melt at 170°F and your desired end temperature is around 200°F for them to be fall-off-the-bone delicious. The only way to know these temperatures is with an accurate meat thermometer .

    After cooking, drain the excess fat. Then, if desired, you can slather the ribs with your favorite BBQ sauce and cook for another 5 minutes under the broiler.     How To Slice And Serve Boneless Beef Short Ribs

    After letting the meat rest 10 minutes, we slice the short ribs thin against the grain.

    What does this mean? Meat is made up of bundles of muscle fibers that run parallel to one another. The fibers form a pattern that is referred to as the grain it looks similar to wood grain.

    Slicing against the grain means cutting the fibers into shorter pieces. This makes tougher cuts such as boneless short ribs more pleasant to eat because shorter lengths of muscle fibers are easier to chew.

    Its easy to cut boneless short ribs against the grain because the muscle fibers tend to run diagonally. That means that as long as you slice the meat lengthwise, youll be cutting against the grain.

    We like the grilled short ribs served with nothing more than a sprinkle of flake sea salt and a spritz of tart lemon juice to balance their richness, but theyre also terrific with a bold, bright sauce.     In this low and slow method, your beef ribs will take six to eight hours to cook. You may see the fleshy part start to loosen from the bone as they reach the end. Use your tongs to see how tender they are. You can also cut into the meat to make sure there is no pink remaining.

    If your ribs are in a rack, you can twist the center rib. If it comes away from the meat easily, your ribs are ready.

    What about a meat thermometer? Ribs are not the most practical cuts into which to try to insert a probe. Some areas are pretty thin. Temperature measurements near the bone do not tell you about meat in the center of the rib.

    However, where meat thermometer placement may be tricky, toothpicks work like a charm. When ribs are ready, a toothpick should slide easily in and out of the flesh between the bones.

Thicker ribs will need more time to cook thoroughly. However, you can safely assume that the ribs will take between 5 and 8 hours to cook.
