How Long Should You Brine Pork Chops

Pork chops can benefit from just a 20-minute brine, but for best results its best to plan ahead for a couple hours. A few hours will better break down some of the muscle tissue and draw moisture into the meat.

  • Thick-cut, bone-in pork chops: best brined for 1-4 hours in the refrigerator.
  • Thinner or boneless pork chops: best brined for about 30 minutes at room temperature up to 2 hours in the refrigerator.

Another important tip is to take the marinating pork chops out the fridge and let them reach room temperature before grilling them. Cooking time: Do not overcook pork or it will become tough and dry. The USDA recommends cooking pork to an internal temperature of 145°F. Cooking to 145°F will result in clear or slightly pink tinted juices and meat that is tender and juicy.

Let it restbefore and after cooking: Take pork out of the refrigerator about 15 minutes before cooking. Bringing the meat to room temperature will help it cook more evenly.

Let cooked pork rest for at least 10 minutes before carving. This allows juices to be distributed throughout the meat and results in juicer pork.

Tips For Making Grilled Pork Chops

Pork chops are pretty straightforward to cook on the grill, but I have a few tips for you that will help ensure your chops come off the grill perfectly cooked and totally juicy.

  • Utilize two-zone grilling. Use two-zone heat on your grill to achieve juicy, perfectly cooked pork chops with that slightly charred grilled flavor.
  • Make sure that the pepper is freshly cracked. When mixing up your grilled pork chop rub, try using freshly cracked black pepper for a brighter flavor.
  • Dont poke the meat! Dont stab your pork chop with a fork or cut into them while they are still cooking. Youll lose a lot of the juices out of the meat.

What Makes This Recipe The Best

What sets this Grilled Pork Chops recipe apart from the rest is the homemade spice rub and homemade barbecue sauce. Ive scaled down both the rub and barbecue sauce from my other recipes because you dont mess with perfection, and I added a brine for optimal tenderness. The dynamic spice rub is made with smoked paprika, chili powder, garlic powder, onion powder, chipotle pepper, salt and pepper. The seasonings envelop the pork in a smoky, earthy, robust, crust with just the right kick of heat that creates a caramelized seasoned crust once grilled.

And then theres the homemade barbecue sauce. Here are just a few comments regarding its deliciousness :

Absolutely incredible!! My husband is a huge BBQ rib fan. Hes been to rib competitions always looking for the best BBQ sauce. He was blown away. I havent even finished digesting and felt the need to leave this comment asap. Lol thank you... Danielle

.is the best BBQ Sauce I have ever had and I will be making my own from here on out. I was skeptical reading all the posts about how good it was and I now know why. Absolutely amazing Terry

How Long Does It Take To Grill Pork Chops

First, a little disclaimer: The time it takes to grill pork chops will depend on the particular cut , the thickness of the pork chops, and the grill and meat temperature before you start grilling.

That said, a 1-inch thick boneless or bone-in pork chop usually takes around 10 minutes to reach 145°F on the grill. Thicker 1 ½-inch to 2-inch thick pork chops typically take around 15 to 20 minutes. I find I have the best results using 1 ½-inch thick bone-in pork chops, which is why I will often go talk to the butcher if I don’t see the particular cut or thickness I want on the shelf.

Keep in mind though that while having a timeframe is helpful for grilling pork chops, it’s no substitute for a good meat thermometer.

Homemade Dry Rub For Pork And Chicken

Dry rubbed grilled pork chops, these were so amazing!!!!

Yep, and we arent stopping there either. We have used this as is on our dry rub air fryer wings and also tweaked it just a bit later on to make it a bit spicy.

You too can do the same with a tsp of dry Sriracha or red pepper flakes is a great option too. There is already a bit of chili powder but it still is only mild made as is below.

This is what youre going to need to make this multi purpose dry rub recipe

  • Chili powder or cayenne pepper works
  • A little bit of thyme
  • Mason jars are perfect to house this spice mixture / spice rub so you can make a big batch and then not measure going forward. Just use enough to coat the homemade pork recipe you are working on in the future as then there would be no measuring. I tsp per chop is typical. Personally I like it kinda thick on both sides, thats up to you.

Here are a few questions you might have before you get going

How long should dry rub sit on pork?

That depends really. It does need a minimum of 15 minutes but could also be prepped hours ahead of time and left in the fridge covered. The longer it sits on top the more intense the flavors will be so keep that in mind. My preference is a good 60 minutes.

These grilled pork chops are super easy to make. All you have to do is brush them with olive oil, rub with a perfectly awesome seasoning, and smoke them on the grill. Theyre an explosion of flavor and juicy goodness!

You can even make these pork chops up to a day in advance, if youd like. The longer they sit in the marinade, the juicier and tastier theyll get!

Whats The Deal With Brining Pork Chops

Its a good rule of thumb to always brine pork chops before grilling. Because pork chops are fairly lean, submerging them in a brine does two things. First, it keeps the meat moist by introducing extra moisture, which provides a little insurance in case the meat gets a little overcooked. Second, it evenly seasons the meat beyond just the surface.

The base of this easy brine is just cold water whisked with salt. I like to add some sugar to help with browning on the grill, and you can also throw in aromatics like citrus peel, peppercorns, or bay leaves . Diamond Crystal kosher salt is what I use in my brine, but if you want to use another kind of salt, I recommend using an equal weight, not volume, of salt since the size of the salt granules vary greatly across brands and weight is the most accurate measurement.

Brining doesnt have to be elaborate or take a long time. Since these are chops and not a big bird like a turkey, even brining for 30 minutes does wonders, and thats about how long itll take to heat up the grill. The chops can sit in the brine for up to two hours, but dont go beyond that or the texture of the meat can get spongy. You can even brine individually frozen pork chops just put them in the brine for the full two hours. Theyll be defrosted and ready to grill at that point.

How Long Do Pork Chops Take On The Grill

When preparing an outdoor grill for pork chops, youll need to heat it for two levels of heat. The chops get seared over high heat to get those gorgeous grill marks for about three minutes per side, then moved over to medium heat to finish cooking, which will take anywhere from four to seven minutes depending on the thickness of the chops. This creates a nice crust on the outside and juicy meat inside. And remember to keep the grill covered the whole time so that heat doesnt escape.

What Is The Best Cut Of Meat For Grilled Pork Chops

There are four different cuts of pork chops. The most preferable is the center cut rib chop.

  • Rib Chop: This is the most desirable cut of pork chop. It comes from the rib section and has a large bone running along one side. This cut is very tender with a nice pork flavor.
  • Loin Chop: This pork chop cut has a t-bone in the middle. It has two different kinds of meat on it, with loin meat on one side, and tenderloin meat on the other side. These two meats cook at different rates so it is a more difficult cut to work with.
  • Boneless Chop: This is the most lean cut of pork. It is very easy to over cook this cut and dry it out as it has very little fat, connective tissue, and doesnt have any bones. This is the most commonly sold pork chop cut in the United States, but it is certainly not the most desirable because it is lean, and so easy to overcook.
  • Shoulder Chop: This is the least desirable cut of pork chop and is not commonly found in American grocery stores. They have lots of flavor, but also have a lot of gristle and bones. This cut of chop is best braised.

    • Add a smidgeon of oil. To make a paste, combine a small amount of oil with the rub and distribute it over your meat. The end result will not be a crusty topping, but it will be flavorful.
