How To Reverse Sear Pork Chops On A Grill
One popular way to get the most smoke flavor, the perfect cooking temperature, and those appetizing grill marks, is to reverse-sear the pork chops.
Set the Traeger grill temperature to 275 degrees Fahrenheit and preheat, with the lid closed, for 10 to 15 minutes.
Because of the lower temperature, you’ll more than double the cooking time. Cook at the same temp for 60 minutes .
After you reach an hour, you should remove the pork chops from your grill and set your temperature to 500 degrees Fahrenheit. Once the grill is hot, place the pork chop back on the grill and sear for three minutes per side or until they reach an internal temperature of 145 degrees Fahrenheit . Then rest for at least three minutes and serve.

How Long Do You Cook Grilled Pork Chops
Pork chops that are 1 1/2 inch thick, grilled over high heat, will take approximately 15 minutes per side for a total of 30 minutes of grilling time. Reverse-seared pork chops, cooked over lower heat and then finished over a hot grill, will take closer to 1 hour.
Regardless of the cooking method, you want to cook until the pork chops reach an internal temperature of 145 degrees Fahrenheit, followed by a 3 minute rest this is considered medium, and is the recommended safe temperature for pork chops. Some cooks are comfortable cooking their pork chops to lower temperatures, like 135 degrees Fahrenheit, which can give you more tender meat.

Using A Dry Brine For Juicy Grilled Pork Chops:
Because pork chops are fairly lean, brining is helpful for tenderizing and evenly seasoning the meat. To make things easy, I use a dry brine rather than a liquid brine .
My dry brine is simply salt and pepper, rubbed evenly into both sides of the pork chops! Once seasoned, the pork chops go into the refrigerator, uncovered, for 2 to 24 hours. This is where the brining magic happens.
The salt draws out the meat juices through osmosis, of which then dissolves the salt, basically turning into a natural brine even though there isnt any liquid added. This brine is reabsorbed into the meat, breaking down tough muscle proteins to help achieve pork chop perfection.
Breaded And Grilled Pork Chops

Most people automatically reach for a pan full of hot oil when they come across breaded meat. Its breaded, so we have to fry it, right? Wrong! Ever thought about grilling that breaded pork chop? No? Do golden brown breadcrumbs infused with the smoke from an open flame sound good? Of freakin course it does! Not only are these breaded and grilled chops delicious, they are also MUCH better for you than when fried. The only similarity these chops have with their greasy fried cousins is the golden brown color. Were not even going to dredge these and create a batter, were just going to give them a thin layer of some delicious crumbs. Lets do this!

Going Straight From Fridge To Grill
Pork chops, like most other meat, benefit from getting close to room temperature before hitting the grill. So while it may seem easier to throw the meat in the fridge, then simply grab it when the grill gets started, that’s just not a good way to go. Plainly put, if you start with a very cold piece of meat, it will take longer to heat. This creates the potential for overcooking those pork chops.
“Let your meat come to room temperature before you slap it on the grill,” said Buitoni. It will help in your goal to grill your pork chops just the bare time needed to reach the right internal temperature.
And remember, you don’t want to grill wet pork chops. “Pat them dry before resting them on the grill as surface moisture is another element to lengthen cooking,” said Buitoni. While you’re waiting for the chops to come to room temperature, you can always set the table or whip up a quick salad or another side.
Do You Grill Pork Chops With The Lid Open Or Closed
The heat doesnt build up and intensify the way it would if the lid was down. Thin pork chops, shrimp, and burgers tend to cook quickly. Leaving the grill lid up will slow the cooking process by reducing the temperature around the meat. For thicker cuts, you want to close the lid to keep the temperature high and even.

How Do You Keep Pork Chops Moist After Grilling
The key here is to not over-cook your pork chops. While the internal temperature of pork needs to be 145 degrees F. to be considered safe to eat, you should take them off the grill when they hit approximately 140/142 degrees F. Then, as they rest, the internal temperature will continue to rise that last 5 degrees or so. Also, if you cant eat immediately, you can always brush them with a little avocado oil and then cover with foil then will stay plenty juicy!

Tip #: Buy The Right Type Of Pork Chop
Its common knowledge that quality ingredients make a quality meal. And grilled pork chops are no exception. James suggests picking out 1-inch rib chops. Why? A thicker chop has a higher tolerance for direct heat. This means itll yield a nice sear without overcooking. Plus, rib chops have more fat than other chops-and fat equals flavor. Lastly, choosing a bone-in chop is important, too. The bone helps insulate the meat, keeping it moist and flavorful as it cooks.
What Is The Best Wood For Smoking Pork Chops
Wood pellets are the best choice. They burn far hotter and way slower than standard wood chips, which gives master grillers a lot more control over the temperature of their pork chops. Hardwood pellets also provide you with more smoke consistency without the build-up and they come in a wide range of blends that are ideal for pork chops.
The blend you go for really depends on what youre looking for in a grilled pork chop. Traeger maple wood pellets are amazing at bringing out the natural flavor in your pork while adding a mild, seasonal sweetness. Apple pellets are always a dependable choice if youre on the hunt for that light, slightly fruity flavor a lot of your guests naturally associate with grilled pork chops.
If you want to play around a bit, our all-natural pecan hardwood pellets give pork chops a trace of nuttiness, while our signature blend of hickory, maple, and cherry hardwood adds a full-bodied kick of flavor.

Trick For Perfectly Cooked Pork Chops
- Pork is considered safe to eat at 145 degrees F. Its internal temperature will continue to rise as the pork rests, however, so if you wait until your pork chop hits 145 on the grill, it will be overcooked by the time you eat it.
- I prefer to pull pork from the grill when it reaches 135 degrees F, covering it, and letting it rest for 10 minutes to let the carry over cooking finish the job and the meats juices to reincorporate. This method yields perfectly cooked, juicy pork every time!

What Temperature Pork Should Be Cooked To Eat Safely
For years, cooks have been told to cook pork until well done, resulting in a dried out piece of meat nobody wants to eat. No more!
According to recent changes in the USDA guidelines, it is safe to eat pork cooked medium rare. Cook the pork chops to an internal temperature of 140°F and still barely pink inside, then rest for about 5 minutes for the residual heat will continue to cook and raise the internal temperature.
For thin cut, bone-in pork chops about 1/4 inch thick, cook over direct medium-high to high heat for a total of 3-5 minutes, with the lid closed, turning once.
For 1-inch thick boneless pork chops, cook for 8-12 minutes over direct heat turning every 3-4 minutes or until well grill marked with the lid closed. Add another 5 minutes resting time for the juices to set in the meat.
If cooked properly, the pork chops will release a bit of juice as they rest, a sign theyre still nice and juicy on the inside.

The Best Cut Of Meat For Grilled Pork Chops
Pork chops are a loin cut perpendicularly to the spine of the pig and usually contain a rib or part of a vertebra. There are four major sections where pork chops come from: shoulder chops , rib chops , loin chops , and boneless chops .
Shoulder chops have a lot of fat, connective tissue, and tough gristle, so the meat does best when it’s tenderized or braised in slow, moist heat over a long period of time. By contrast, rib chops, loin chops, and boneless chops are naturally lean and tender, so they are best suited for quick-cooking over high heat — making them perfect for grilling!

Insert into the thickest part of the meat and remove from grill after it reaches 145 degrees.
