Boneless chicken breasts wont have as much flavor as the bone-in/skin-on variety. Thats why basting in BBQ sauce at the end of the cooking time is where youll find a lot of flavor. And when seasoned and cooked correctly, even my recipe for basic sauce-less grilled chicken breasts can taste flavorful and juicy every time.
Most chicken eaters prefer the white meat of chicken breasts. So for chicken thats cooked quick, I use basic, skinless, boneless chicken breasts. Of course you can use this same cooking method for skin-on, bone-in BBQ chicken breasts, or for legs and thighs too. The technique is the same, the cooking times will vary.
Larger chicken breasts do not always translate to better chicken. Bigger breasts take longer to cook, and cook unevenly or overcook. Look for chicken breasts that are between 6 to 9 ounces per piece. If youre chicken breasts are thin on the ends and fat in the middle, trim the thin ends off so they dont crisp and burn..
If you want an extra fast BBQ chicken breast, slice your boneless breasts in half lengthwise to make two thin cutlets. Theyll cook in half the time.
Making Bbq Chicken Ahead Of Time
I dont like to let my chicken breasts brine for more than an hour or two , so I wouldnt make this entirely ahead of time.
That being said, you can certainly make up the rub ahead of time just keep it in an airtight container on the counter.
If youre making your own bbq sauce, that too can be made ahead of time . My favorite homemade bbq sauces are:
Leftover chicken should be refrigerated in an airtight container and consumed within 3-4 days.
How To Cook Bbq Chicken On The Grill
Prepare clean grill grates to minimize sticking and preheat the grill at 400-450°F. Drizzle the chicken breasts with olive or canola oil and season with kosher salt and freshly ground black pepper. Arrange the breasts on the hot grill grates and cook for 4-6 minutes with the lid closed. If the chicken sticks to the grill grate, let it cook a minute more before trying to flip again. Cook on the second side for another 4-5 minutes. Baste with your favorite BBQ sauce, flip, and cook for 1-2 minutes more. Repeat on the other side side. The chicken is done when the internal temp is 160°F and the juices run clear. Let the chicken rest a few minutes for the temp to raise to 165°F and the juices to settle before serving.

How To Grill Chicken Wings
There are several ways to grill wings, but first, lets look at the wing itself.
Wings can either be left whole or separated into drumettes and flats. With this method, I remove the wingtip, saving them with additional chicken parts for a future batch of chicken stock. Separating the wing creates more work on the grill, but in my opinion, it makes for easier eating one-hand eating especially when the other hand is clutching a beer.

Any propane gas grill will work. However, more burners usually means a larger surface area, as well as more even heat distribution. How To Keep Chicken From Sticking To The Grill
Stop your chicken sticking to the grill. From canola oil to grill brushes, these four easy tricks will keep your grilled meat tender and intact.
There are few things that get under a grill masters skin more than when chicken sticks to the grill.
After slaving over the grill, to see half of it come away when trying to lift it from your grill grates can be really disheartening.
So how do we prevent this?
In short, it can be prevented with four simple tricks.
The first is to lightly cost your chicken with olive oil prior to placing it on the grill. The second is to try to keep your chicken within a temperature range of 425°F-450°F. Going above this will leave your chicken prone to sticking to the grill.
Using oil with a high smoking point will ensure that your oil doesnt reach a temperature where it starts to produce a carbon adhesive, effectively bonding the meat and grates.
Finally, time is a crucial factor. Aim to grill your chicken for 4 and a half minutes per side. If you try to flip or remove the chicken and its still sticking, just close your grills lid and give it another 30-60 seconds.

How long can I keep the chicken in the marinade?
We’d recommend no longer than 24 hours! Technically you can keep raw chicken refrigerated for up to 2 days, but we don’t recommend marinating that long.
How do I keep the chicken from sticking on the grill?
As long as you give each side enough time, it shouldn’t! When your chicken gets those nice charred lines, it naturally releases from your grill grates. If you try to flip and the chicken feels stuck, try giving it another minute or two! It’ll release naturally, when it’s ready.
What should the internal temperature of my chicken be?
According to the FDA, all chicken should be cooked to an internal temperature of 165°. We prefer our chicken breasts closer to 150° because we’re rule breakers. Jokes aside, the real reason we don’t go all the way to 165° is because boneless skinless chicken breasts have basically no fat, so in order to maintain some juiciness we pull them a little early.

How To Store And Reheat Leftovers
Once your chicken has cooled, refrigerate it in an airtight container for up to 4 days. Dont leave it out at room temperature for more than 2 hours. If youd like, you can wrap it tightly in plastic wrap or foil and freeze it in an airtight container for up to 4 months.
Reheat the chicken over medium-low heat until its warmed through. You could also warm it up in a 250°F oven for about 25 minutes. If your chicken is frozen, thaw it out in the fridge before you reheat it.
