Most charcoal grills contain a bottom vent and a top vent, Haas adds.

Grill Over Indirect Heat
I know our tendency when grilling is to cook hot and fast from start to finish, but we can tear a page out of the low and slow playbook to really improve the overall texture and tenderness of our grilled chicken breast. The key is to bring the chicken up to temperature over indirect heat. This means you have direct heat going on half of your grill and no heat on the other half.
Your chicken breasts are going to be grilled on the indirect heat side of your grill where the heat is circulating and cooking the chicken without charring the outside edges of the chicken or burning those thin ends to a crisp before the middle is done. Your overall grill temperature should be hovering around 350 degrees F. This means you will have juicy, flavorful chicken from edge to edge!
Use a great internal thermometer in the thickest part of your chicken breast to check the temperature of your chicken as it cooks. I recommend an instant read thermometer from ThermoWorks. Your target temperature for this indirect cooking step is 150-155 degrees F before moving on to the next step. If you can keep your grill temperature at 350 degrees F, depending on the size of your chicken, this should take about 20-25 minutes.
Select The Right Heat Level
Cook the boneless and skinless chicken breasts over high heat to allow them to retain their moisture. If you are grilling chicken breasts on the bone or large chicken breasts that have not been pounded will need to be grilled over medium-high heat. They will be cooked slowly, so the outside of the chicken breasts does not burn while the inside of the meat reaches its desired temperature.

How long can I;keep the chicken in the marinade?
We’d recommend no longer than 24 hours! Technically ;you can keep raw chicken refrigerated for up to 2 days, but we don’t recommend marinating that long.
How do I;keep the chicken from sticking on the grill?
As long as you give each side enough time, it shouldn’t! When your chicken gets those nice charred lines, it naturally releases from your grill grates. If you try to flip and the chicken feels stuck, try giving it another minute or two! It’ll release naturally, when it’s ready.
What should the internal temperature of my chicken be?
According to the FDA, all chicken should be cooked to an internal temperature of;165°. We prefer our chicken breasts closer to 150° because we’re rule breakers.;Jokes aside, the real reason we don’t go all the way to 165° is because boneless skinless chicken breasts have basically no fat, so in order to maintain some juiciness we pull them a little early.

Indirect Vs Direct Heat Grilling
You can create different cooking “zones” on a charcoal grill, which is great for searing, cooking, and keeping food warm. After the charcoal is lit, don’t cover the entire grill with the briquettes. Create a “hot zone” or direct heating area on one end of the grill by evenly distributing the coals under half of the grill. This is the perfect spot for searing meat and getting beautiful hatch-marks. Then move to a “cool zone” or indirect heat with fewer or no briquettes to finish cooking. This will prevent flare-ups and cook food more evenly. If you leave it over direct heat for too long, you often end up with a burnt exterior and raw interior. Plus, if you are grilling a large cut of meat , cooking over the indirect heat with the lid on will create the same effect as using an oven.

How To Add More Charcoal To The Fire
If you’re still in a grilling frenzy but the briquettes are losing steam, don’t add unlit charcoal to the grill. This can produce a lot of acrid-tasting smoke and a quick rise in temperature, which may burn the food already on the grill. Instead, light a few more briquettes in your chimney and add them to the direct heat side of the grill to keep you going.
Put The Lid On And Grill Chicken Wings On One Side For About 25 Minutes
The longer cooking time using indirect heat renders more fat out of the wings. Also it prevents the meat from drying out. Cook until the fat on the chicken skin gets crispy and browned all over.
NOTE that timing will depend on the grill set-up temperature, size of the wings and how cold the wing pieces are to start with.

Getting The Charcoal Grill Running
When dinnertime looming closer, start preparing the grill to cook the chicken. Here are the things you need to do to make sure your charcoal grill is ready:
Lighting up the Charcoal
Lighting up the charcoal is one of the most pressing questions people ask when cooking on a charcoal grill. It is easy to get overboard and stuff the barbecue with charcoal, but you will end up burning the chicken breasts within a few minutes. Adding tiny lumps will take ages to cook the meat. Here are three ways to determine the amount of charcoal to be used and how to light it up:
Pyramid Style: Place the briquettes to create a pyramid and then add the lighter fluid and light them up.Electric Starter: Arrange the briquettes to create a pyramid and then right in the middle of the coals, insert the electric starter. Plug the electric starter in and wait for the charcoal to light up, which typically takes about eight to ten minutes. Chimney Starter: This is the most commonly used way of lighting the charcoal grill. Crumple up some paper and spread on the grill rack. Place the starter on top of the paper and then fill it up with briquettes. Light the paper up, and the coals will start burning up. Once they are ready, remove them from the chimney starter and spread on the grill.
