Every half hour to hour we sprayed it with apple cider and added more chips and charcoal.

One thing we did learn was the importance of keeping the heat LOW.

After about the first hour the heat spiked a bit and sped up the cooking. Our ribs were nearly done at about 2 hours, when they should have taken longer.

We decided to lower the heat and leave them on for just a bit more, to see what would happen. Unfortunately, the ribs got a bit darker than we were hoping.

But, even with the darker color, after 2 1/2 hours we had some incredibly delicious ribs.

How Much Rub To Put On The Ribs

Estimate 1 tablespoon per pound of ribs. My ribs below are about 3.5 pounds each, so I put on 3.5 tablespoons of rub to each rack.

After it is rubbed down, put it back into the fridge until its time to smoke. We want the ribs cold when they go on the smoker. Colder meats take longer to cook, which allows for more smoke absorption.

How Long To Cook A Rack Of Ribs On A Gas Grill

An approximate cooking time of 3 hours is recommended for a medium-sized rack of ribs. If the ribs are too tiny, or if you are unsure about your barbecue setup, start inspecting them after around 2 hours of cooking. A thick slab may take up to 4 hours to complete. If youre cooking more than one slab on a vertical rack, allow an additional 30-60 minutes for each additional slab.

Cook them at 350 degrees for 1 1/2 to 2 hours if you want them quick.. If the seasoning is done well, any manner is excellent. I know this because the grilling enthusiast I live with is pretty passionate about smoking ribs. According to David, it is hard to beat a rack of perfectly smoked baby back ribs slathered in sauce.

Tips For Cooking Baby Back Ribs

The Lid: These ribs will be turned every 15 minutes. This means opening the grill lid often and introducing a rush of oxygen to the coals. Were cooking at 400° F and the oxygen will cause temperature spikes, so work as quickly as possible when flipping to reduce the amount of time the grill lid is open.

The Timing: Flip every 15 minutes, its important. I find it easiest to use a large timer for grilling and cooking so I can see it at a quick glance. Using my phone as a timer is just a hassle. Either I forget to set it, my hands are dirty and I cant get it out of my pocket, or I cant get the phone to unlock while doing other things, so consider grabbing one of these inexpensive grill timers.

The Mop: Its not just for flavor on the ribs. It certainly adds a huge punch of flavor, but the mop sauce dripping down on the hot coals creates a ton of flavored steam. That steam helps cook the ribs and keeps them moist, so be generous when mopping the ribs.

The Temperature: Stay as close to 400° F as possible that can be a challenge when opening the lid so often. Much past that and youll risk burning your ribs. If you notice the temperatures rising, just close down your grills exhaust vents to restrict airflow. As always, I highly recommend using a reliable leave-in thermometer to monitor grill temperatures.

Using a knife and a paper towel, carefully cut away the membrane on the rear side of the ribs. Use a large amount of dry rub. Place the seasoned baby back ribs on the grill and cook them for 2 hours on low heat until they are tender. Approximately 2 hours after removing the ribs from the smoker, cover them in aluminum foil.

How Do You Know When Your Ribs Are Done

Pick them up with your BBQ gloves and give them a slight bend. When the ribs easily start to break you know you are about finished. This should take upwards of 5 or 6 hours. In fact, dont be surprised if this takes 10 plus hours. It all depends on your average temperature and when you smoke on a charcoal grill you will have violent temperature fluctuations. The dome temperatures can easily fluctuate from 225, 250, 300, 275, and 177 after 1, 2, 3, 4, and 5 hours of cooking respectively. So if you average in the lower 200s you will need extra time. If you average 250 or 275 you can finish your ribs in about 6-7 hours or maybe less. Just dont average over 300 degrees of you will lose the tender fall off the bone effect that makes this meal worth it!

When you have almost 1 or 2 hours left, start making your barbecue sauce. You can use any sauce you like but Ill share this sauce because it is simply the best. The recipe comes from my BBQ mentor Joe.

Ingredients in Joes barbecue sauce:2 cups ketchup¼ cup apple cider vinegar¼ cup worcestershire sauce1 tsp ground white pepper1 tsp ground ginger 1 golden delicious apple which has been peeled, cored and finely grated 1 small onion

    Despite the name, baby back ribs do not come from baby pigs. Baby back ribs come from a part of the rib connected to the backbone. This is part of the loin muscle that runs along the back on both sides of the pigs spine. Whereas the spare ribs come from the belly.

Prepare and season the ribs with your favorite rub. Preheat your smoker, charcoal grill, or gas grill to 225°F – the ideal temperature for cooking ribs. Smoke/slow cook for 3 hours using indirect heat. Wrap the ribs in foil with some liquid and continue cooking for 2 hours.     How To Apply Bbq Sauce

    When the ribs are approaching done, apply your BBQ sauce. Be careful here: as tempting as it might be to thickly paste on the sauce, I strongly recommend spreading it in thin layers. Doing this will give us the satisfying and sticky surface of our ribs.

    If we apply it to thickly then it wont have the chance to dry, giving us a disgusting wet coating.

    Layer carefully by applying a thin layer on one side, before turning over and doing the other side. Once both sides are coated, close the lid on your grill and leave for 5 minutes before repeating the process again. Repeat 4-5 times in total. Once done, remove from heat and put to one side.

    Baby Back Ribs Indirect Grilling Method

    Do you like eating ribs when you go out to eat, but hate paying the money for them? Well you can make them at home just as tasty and save a few bucks as well. Making ribs is not that difficult.
