    Frozen lobster tails can be from clawed or clawless lobsters. There are a couple of ways to tell which ones are being sold. Check the package or ask the fishmonger for the region the lobster was caught in. If it doesnt say, take a look at the color: Maine lobster tails are generally dark green-brown with hints of red. Spiny lobsters are lighter in color, with a range of relatively pale yellows and browns, and some have distinctive spots. Maine lobster tails are prized for their sweet flavor and are more expensive than spiny lobster tails, which dont cook up as sweet. Both are fine choices for grilling, but if I had to pick one over the other, Id go with Maine lobster tails.

    Because lobsters must be cooked or frozen immediately after theyre killed, raw lobster tails are always sold frozen. Instead of removing the tails from whole fresh lobster, I find it easier to buy frozen lobster tails since theyre usually processed and flash frozen soon after theyre caught. I usually buy one6- to 8-ounce lobster tail per person, although you can always go smaller or larger depending on what else youre serving or what your store carries.

    The best way to defrost lobster tails safely and evenly is to put them on a plate or baking sheet in a single layer in the refrigerator and let them thaw for about 24 hours. This keeps them at a safe temperature and thaws them more evenly than leaving them out at room-temperature or thawing them under cold running water.

    Preparing Live Lobster For The Bbq

    You can grill whole lobster without prepping them as some chefs do, but we suggest splitting them to allow the smokiness of the grill flavor to come through. According to tests by Cooks Illustrated, a split lobster was the best way to get the real grill flavor and maximize the sweet flavor of the lobster meat.

    Now with no danger of getting pinched, remove the bands from the claws. Place your chilled or blanched lobster on its underside and with the tip of a sharp chef knife start behind the eyes at the head and split the lobster lengthwise all the way through the tail. Use a good pair of kitchen shears to help cut through the tail section. Remove the small grey sac behind the head, the jet black roe , and the green tomalley and discard. Also remove the intestinal black vein running from the stomach sac to the tip of the tail.

    Grilled Lobster Cooking Times

    When the grill is at medium heat, not high heat, place the halves of your lobster flesh side up with the shells on the grate. Season the lobster meat with salt and pepper and with a pastry brush paste the shell and exposed meat with olive oil or your favorite butter mixture. Close the grill and cook for about 3-6 minutes. Quickly baste with more butter or oil and cook for an additional 4-5 minutes. We do not suggest flipping the lobster as you will lose all the juices. The oil or butter not only keeps the lobster moist, but it will also help char the shell making it easier to crack.

    Since lobsters cook quickly keep a close eye on the grill. Again, cooked too long, theres no turning back. One or two minutes too long and the meat will dry out and be tough. The meat is done when it starts to firm up and turns opaque white. It is important to note that your lobsters will continue to cook even after they are removed from the grill.

    If you cook lobster tails on a pellet grill, the dish you have after grilling will taste sweet, delicate and juicy.

    First, this method requires grilling the lobster in high heat without cooking it directly. Please dont ignore our indirect reminder otherwise, your lobster tail will be so charred and inedible!

    Before you start grilling, dont forget to prepare and season your lobster tails! In a small bowl, mix the butter, lime juice, chives, garlic, parsley, and any other ingredients you like.

    As for the tail, use scissors to cut the top of the lobsters shell from the flesh of the tail. In detail, use the knife to slice along the middle line but dont go too deep into the lobster! If youre extra careful, insert a skewer vertically on the lobster to prevent the tail from curling when grilling.
