Obsessed may be an understatement actually. Its my life.

Because basically everything is getting shoved into a foil packet and baked right now it just depends on my mood.

And with this asian salmon in foil and these parmesan zucchini foil packets, Ive had this same dinner nonstop for weeks.

No, wait. Sometimes these zucchini packets are my only dinner. Thats all you really need veggies and Parmesan cheese.

Oh, and I havent done dishes in two weeks with these foil dinners so theres that.

Veggie foil packs are great for throwing on the grill while the meat cooks. Versatile and healthy, they make cooking your whole meal outside a breeze.

Veggie foil packs are actually known around here as hobo packs. I believe they originated with scouting as an easy way for young scouts to prepare a hearty meal over their campfire.

Of course, if meat is included you would truly have an entire meal in one little package of aluminum foil, but we like to just use vegetables to make a healthy and delicious side dish.

Our favorite combination is zucchini and yellow squash, with optional additions of tomatoes and/or onions. The recipe below is written that way, but versatility is the real beauty of veggie foil packs.

Additional vegetables that would be good are below, but you can get creative use whatever is fresh in your garden or at the farmers market.

Tip For Grilled Zucchini Packet On The Grill:

The zucchini side dish continues to cook after you pull it off the grill. Go ahead and open up the packet quickly and remove it right before it is done, so you dont end up with soggy zucchini.

I like my zucchini still slightly crispy so make sure to open the packet if you prefer the zucchini the same.

How to Grill Squash and Zucchini in Foil

This recipe for Grilled Zucchini and Squash has quickly become our favorite recipe for all the summer squash our garden produces. And, it all started in an effort to keep the kitchen cool! Plus, it is great for any real food diet including GAPS, Paleo, Keto and AIP.

Squash is one vegetable that our garden produces a lot of. No, I am not complaining – in fact, I love it!

But, I normally use this recipe for grilled zucchini and yellow squash since that is what I grow. And, the yellow and green give the meal a nice pop of color!

Grilled summer squash is definitely a family favorite. Besides tasting good, it is super duper easy.

How To Make It:

STEP 1:Cut zucchini and yellow summer squash into slices about 1/4 inch thick. If you prefer you can cut them into wedges. I like slices better because theyll cook faster. Either way, be sure to cut them so they are about the same size so theyll cook evenly. You dont need to worry about peeling them first.

STEP 2:Place vegetables on a piece of aluminum foil. If you want to add eggplant, tomatoes, onions, etc. this is the time to do it. Youll want to use a piece of foil thats big enough for the vegetables to kind of spread out. I dont like them to be more than about 3-4 layers of veggies.

STEP 3: Cut 2 Tablespoons of butter into three or four pieces and set butter pieces on top of zucchini. Sprinkle with seasonings.

STEP 4: Bring the edges of foil together and fold over three times to seal the packet. I usually use one big piece of foil and bring the sides up and fold together. Today, I used two pieces of foil Either way works. Just make sure its sealed tightly.

STEP 5: Cook foil pack on the grill. This recipe is really versatile so the cooking temperature and time can vary. And you can cook them until the squash is tender/crisp or well cooked. We like it cooked until its pretty soft. I always cook the packets right along with my meat at whatever temperature the meat is cooking. Youll need to adjust cook time if the zucchini is cut in bigger chunks. Here are a few suggestions on cook time, but remember all the factors we just talked about!

How Thick Should You Slice The Zucchini And Squash

I recommend slices around 1/2 inch thick and no thinner than 1/3 inch. If your slices are too thin theyll cook too quickly and may stick to the grill. Thicker slices will require more cook time. The most important thing is to try to keep your slices the same so everything cooks evenly and in the same amount of time.

Now, lets get to the grilling! All you need to know is the grill temperature and basic timing. Once youve got that down, memorize this recipe and make it on repeat! Here are the basic steps :

  • Preheat a grill to medium high heat. Thats about 375 to 450 degrees.

When it comes to preparing your squash for the grill, you have a few different options depending on how you plan to grill it and use it.

  • Horizontal Planks: This is my preferred method for cutting yellow squash for the grill. Simply slice the squash lengthwise into long 1/2-3/4 inch thick planks. Thinner then that and they will fall apart. The genius of using planks is that they won’t fall through the grill grates and are easy to flip. You can always chop them into smaller pieces when they come off the grill if needed.
  • Wedges: Another good option for the grill is cutting the summer squash into long wedges. Start by cutting the squash in half lengthwise. Then slice each half in half again and then into quarters. These can go right onto the grill and also won’t easily fall through the grates. My kids like this option since I can cut them down into “fries” after that they can grab with their hands.
  • Rounds: For large yellow squash, you can cut them into coins or rounds. Simply cut into circular pieces about 1/2-3/4 inch thick. You can cut straight down or at a diagonal for a slightly larger piece.
  • Chopped: If you plan on using a grill basket or foil, you can chop the squash into smaller pieces – either half moons or smaller chopped chunks.

Assuming you cut the squash to 1/2-3/4 inch thick and cook the squash over medium high heat, it will likely take 3-4 minutes per side. It is ready to flip when it easily releases from the grill and has nice, browned grill marks. If it is stuck to the grill, it isn’t ready to flip. Try not to overcook the squash to the point of mush. It should still have some texture and bite.
