How To Saut Shrimp
Heat olive oil in a pan on medium heat until the oil makes nice waves in the pan. According to Jendrytzko, the ideal temperature for cooking shrimp is around 360 degrees. Add shrimp and flip them around for a few minutes until they start to curl into a tight C-shape and the outsides are pink. The insides should be opaque, not translucent. Depending on the size of the shrimp, this will take about five minutes.
Dry The Surface Thoroughly
After draining as much water as possible from the colander place the raw shrimp on a sheet pan lined with paper towels. Pat each shrimp dry with more paper until the surfaces are no longer wet.

Raw shrimp is the best choice for the grill, though precooked shrimp will work. Due to safety and flavor concerns,;do not refreeze shrimp;that have been thawed out. My personal preference is to buy individually quick frozen pieces that are sold in 1 to 2-pound bags. Theyre frozen shortly after being harvested and will have the freshest taste. To defrost, simply add the needed quantity into a colander and run under cold water until theyre no longer solid, about 3 minutes.

- 1 pound extra large shrimp , shell on, deveined
- ¾ teaspoon salt

Youll bring a large pot of salted water to a boil with some fresh lemon juice. Once boiling, add the shrimp and boil until theyre pink and cooked through, about 2 minutes. Remove the shrimp to an ice bath, which is a bowl of water and ice. This will stop the cooking immediately, leaving the shrimp perfectly tender.

S Choose What Works For You
Once youre done marinating the shrimp, theres 3 option to cook it.
- Grilled I prefer the grilled way because I love the smokey taste it gave to the shrimp, and during Summer why not grill it and make the most of the grilling season.
- Stove Top If you dont want to set the fire on the grill or just because its -20F outside, you can cook this on stove top on a griddle pan or a regular pan will work too. Simple spray the pan with oil just to coat it, heat the pan and transfer the shrimp. Then cover and cook until the water has drained. Then continue cooking for few minutes until the shrimp is slightly charred .
- Bake. Spray the pan with olive oil, then bake until the shrimp is no longer translucent. I havent try this, but I would say at 350F and check after 15 minutes, then adjust baking time as needed until the shrimp is cook through.

First Marrinate The Shrimp
In a large bowl combine the yogurt, shrimp, and spices and toss to combine. When ready to cook simply heat a skillet with a little bit of olive oil and add the shrimp to it when it is hot enough. Cook on both sides for a few minutes.
If you have frozen and divined shrimp it means it is already cooked so all you have to do is heat it on the pan. If the shrimp is fresh or uncooked monitor the color. When it is red-ish or orange color it is ready to be taken out of the pan.

The cook time for this recipe is seriously quick. It takesjust 3 to 5 minutes to grill shrimp, using medium-high direct heat . Timing will depend on the exact temperature, whether youre cooking with the shell on, and how big the shrimp are.
For this recipe, we used shrimp that were 26 to 30 per pound size. Weve tested it both with shrimp in the shell and shell off, and both turned out wonderfully.

How Long Can I Store This Meal
This shrimp recipe can be stored in the refrigerator for up to three days, or you can freeze the shrimp after cooking it and allowing it to cool. It will last in the freezer for about three months. Be sure to use an airtight container so the shrimp doesnt take on any odors from the fridge.
To reheat the meal, you can toss it in a pan over low heat. If it has been frozen, be sure to thaw it before reheating. Shrimp does not reheat well in the microwave.
How To Thaw Frozen Shrimp

What I usually do is take the shrimp out of its package, put it in a bowl or colander in the sink, and run cold water over them for about 5 minutes. Toss the shrimp occasionally to make sure they are all exposed to the cold water.;You will know that the shrimp is thawed and ready when they are no longer frozen solid but soft, easily bendable, and slightly translucent. This will only take a few minutes. Pat the shrimp dry with a paper towel.
