- All Natural: The wood itself should be enough to flavor your food. If planks are treated with additives or chemicals, you should stay away from them.
- Food Safe: You dont want any old wood from the lumber yard. Make sure the planks youre buying are food-safe. This includes everything from sourcing to manufacturing.
- Made in the USA: You want to know where your planks come from.
How To Prep Your Salmon
The first thing you’ll want to do, as with most any fish, is give it a good thorough pat-down with a clean dish towel or a few paper towels to get rid of any excess moisture.
Then add your marinade, rub, and/or seasoning to your salmon any way you would like. I like making a marinade of dijon mustard, brown sugar, some fresh dill, and a little sea salt or seasoning salt. Whether you go for a dry rub or a marinade, make sure to coat the flesh of the fish evenly. The skin doesn’t necessarily need marinating, but there are different schools of thought on that, so to each our own. A little olive oil or butter on the skin does help keep it from sticking.

How To Cook Salmon On A Cedar Plank:
This cooking method is so simple. Just follow these important steps:
- Soak the plank for at least 30-minutes and up to 2 hours
- Pat the plank dry
- Season the fish with olive oil and place skin side down on the plank
- Season the top of the fish with your seasoning of choice. We use our own homemade Potlatch Seasoning.
- Grill for about 20 minutes for a large piece of salmonand 12-15 for a smaller fillet

I cant believe that living in the Seattle area, Ive never posted a single recipe for salmon. Cedar Plank Grilled Salmon should make up for lost time! This is our absolute favorite way to cook salmon and beats any restaurant, even in the Pacific Northwest. And its so, so simple.
I like to buy a pack of food grade cedar planks to ensure the quality of the wood is good. Ive learned that shopping at specialty baking stores is the #1 way to buy overpriced cedar planks. I like to buy or in the bbq aisle at the grocery store or home improvement store.

How To Cook Salmon On A Cedar Plank
This Thai sweet chili salmon on cedar plank is super simple and requires only four steps!
- Soak the cedar planks: Soak them for at least one hour. I usually do this in my kitchen sink using a few inches of cold water and a couple of heavy glasses to weigh them down.
- Prepare the Thai sweet chili glaze: Simply follow this sweet chili sauce Its super simple to make by combining all the ingredients in a small pot and simmering for 10 minutes. If your grill has a side burner, you can cook the entire dish outside.
- Begin grilling the salmon: Preheat the grill to medium-high heat . Then place the salmon fillet on the cedar plank and brush with about ¼ cup of the Thai sweet chili and grill, covered, for around 10 minutes.
- Glaze the salmon: With the remaining sauce , then cover and grill for a further 10 minutes or until cooked to your preferred level.

How To Make Cedar Plank Salmon Step By Step:
For a detailed printable recipe, refer to the recipe card at the end of the blog post.
STEP 1. Char the cedar plank
Use one of the two methods described above to char the plank.
STEP 2. Preheat the grill
Preheat the grill to 300 degrees or medium fire .
Set the grill up for INDIRECT METHOD grilling.
Add Pinot Grigio wine or water to an unused food-safe spray bottle.
STEP 3. Grill the salmon
Place the salmon skin side down on the prepared cedar plank. Add the lemon slices and dill on top.
Place the cedar plank onto the grill grates over indirect heat . Spray with the wine and close the lid.
Check the internal temperature after 20 minutes and every 5 minutes until the internal temperature registers 135-140 degrees.
Remove from grill and allow to rest for 5 minutes.
Cut into four portions and serve.
Char The Plank Separately
Preheat the grill to medium-high, about 400 to 450°F . Place the water-soaked plank on the grill grates close the lid. When the plank begins to smoke and lightly char, about 7 to10 minutes, flip over and remove from the grill to begin salmon preparation. This charring step allows the wood to transfer more smokey flavor before the salmon starts to cook.

I buy my cedar grilling planks on Amazon, and this one comes as a 12-pack. Its very important to prepare the planks.
We recently had a minor emergency situation while making cedar plank salmon. I didnt listen to my own instructions when soaking the planks, and they started on FIRE while cooking on our BGE. Mike was there for the rescue operation, and was able to get the fire out before the salmon was ruined. WHEW. My guy really is a super hero!
Moral of the story. Make sure you soak the planks for AT LEAST 3-4 hours, and dont let them stick together during that time. Lesson learned!

Have a food-safe spray bottle on hand!
I have a small BPA-free food-safe spray bottle used for water or wine spritzing on the grill.
Spritz the salmon and the plank during grilling with pinot grigio wine. Spritzing the cedar plank causes some steam, fully releasing the flavor of the cedar into the salmon.
If using water, just use it to spray the plank to encourage steam. Dont spray the salmon with water.

Cook With Cedar Planks
Can You Reuse A Cedar Plank
Yes, but it will have a less intense flavor output as some of the woods natural oils get used up from the previous cooking, making it drier. However, this can be partially remedied by lightly oiling the surface before soaking again.
I tend to discard the planks after use because the salmon skin tends to stick to the board and its easier and affordable to buy new ones. Although if the plank is still in good shape after the first use, you can wash and dry it for later. I have also used the plank again but by itself. I place it on the side of the grill to add cedar flavor to other foods.
