This recipe calls for Country Style Pork Ribs. The ones I bought most recently were mostly boneless, but a few had bones. They are in the meat section with other pork cuts.

Unlike the name implies, country style ribs dont actually come from the rib area of the pig, but instead the shoulder. Usually they are boneless, but occasionally youll find them with pieces of the shoulder blade, so be sure to give them a good once-over to make sure.

Country style ribs have a similar shape and consistency of baby back ribs, but theyre meatier because theres no bone and there is a nice marbling that makes them tender.

I made my recipe with 2 ½ pounds of ribs and this amount of sauce was plenty. You could probably cook up to 3 ½ pounds with this amount of sauce.

Should I Brine Or Not

You can choose to brine your boneless country-style ribs before grilling them if you want. This is a great option for short on time, but you will need to use some quality ingredients to make the perfect blend of flavors.

A good mixture consists of:

  • Two cups of salt
  • One cup of brown sugar.

Mix all ingredients in a non-reactive bowl and pour over your pork ribs before placing them into the refrigerator overnight. Brining ensures that you will get flavorful meat on the bone. It has several steps that can be used on pork spareribs, country-style ribs, or pretty much any other type of pork rib simply adjust oven time up for meatier cuts. How To Grill Ribs

At last, youre ready to throw those ribs on the grill. Believe it or not, this is actually the simplest part. Because your ribs are already fully cooked, tender, and flavorful, all youre really doing is a reverse sear to get some color and roasty-toasty flavor. This is also when you coat your ribs in a BBQ sauce, which will caramelize and become sticky on the grill.

You can use a gas or charcoal grill for this.

  • Preheat your grill. If your ribs are coated in sweet barbecue sauce, preheat the grill to medium. Otherwise, you can grill them over a hotter grill but you need to pay close attention to them so they wont burn.
  • Place your rack of rib, individual ribs or sections on a preheated grill over direct heat and brush on your BBQ sauce evenly in one layer. For individual ribs, it may be easier to toss them in barbecue sauce before placing on the grill.

    These Grilled Country Style Ribs are first dry rubbed with a blend of ground cumin, oregano, black pepper and other warm spices before grilling. The exterior gets crusty and the tender interior is juicy. No typical BBQ sauce on these for an alternative, but feel free. Plus, no rib bones to deal with, just seasoned meat!

    Typically my thoughts of any rib goes to a tender piece of meat, seasoned well and covered in a delicious, lip smackin sauce thats sticky and has a little kick. Well, like my Memphis Style Ribs, you dont always need to have a sauce on your ribs for a killer meal.

    Take these Grilled Country Style Ribs for instance. I decided to go the Mediterranean style route for the dry rub, but feel free to use whatever dry rub suits you. For the mop sauce I just used lemon juice and a little honey.

    No BBQ Sauce on this round of ribs, but again, feel free to use whatever you like. The cooking time on these will be the same.

    How To Bake Country Style Ribs

    Start by preheating the oven. Next, mix the homemade spice blend together in a small bowl.

    Lay the boneless pork ribs out in a single layer in a casserole dish, and sprinkle half of the spice blend over them. Rub the spice blend into the ribs so that it really sticks to them as they bake.

You dont want to dry the meat out, and this is how you know you will have flavorful, juicy, and tender pork.
