As I mentioned earlier, using a meat thermometer to check when your pork ribs are finished isnt always the best way.

Thats why I always use the following hacks to know when my ribs are at their best.

Remember, the only ribs that should fall off the bone are ones that have been boiled or steamed.

Smoked or cooked ribs will pull cleanly off the bone as you bite the meat with your teeth however, there should still be some resistance and chew .

How To Cook Pork Ribs On The Grill

You start by rubbing racks of pork baby back ribs with an aromatic mix of paprika, chile powder, cumin, coriander, cayenne, salt, pepper and brown sugar. The ribs are then wrapped in foil and cooked covered on the grill over direct medium heat for 1 hour. I personally prefer using a charcoal grill, but you could easily make these on a gas grill. The key is to maintain a temperature of 350°F 400°F within the covered grill.

The ribs are then unwrapped and finished on the grill with the addition of hickory wood chips and store bought barbecue sauce. You baste and turn the ribs a few times over 10 12 minutes, resulting in saucy, smoky, charred ribs. So. Yum.

Slow smoked ribs are a favorite of almost everyone, and theyre actually rather simple to prepare if you know how. Im going to take you through a few videos that will show you how to slow cook ribs on a Weber charcoal barbecue.

Here are four videos that demonstrate how to prepare ribs in a kettle.

The general procedure is as follows:

  • Remove the membrane from the ribs backsides.
  • Season both sides of the ribs with salt and pepper.
  • Set the grill to 225-250 degrees Fahrenheit with indirect heat.
  • The ribs should be cooked for 3-6 hours.

While the methods above appear to be simple, there are a few tips to learn along the road! The most important trick is that the temperature on the lid thermometer does not correspond to the temperature on the grate where the ribs are cooking. By at least 75 degrees, the lid thermometer will always be higher than the grate temperature!

On A Gas Barbecue What Temperature Do You Cook Ribs At

The 3-2-1 method is ideal for smoking or slow roasting your ribs. This is the simplest rib technique to master, and the results are quite constant. Use your preferred rub to prepare and season the ribs. Preheat your smoker, charcoal barbecue, or gas grill to 225 degrees Fahrenheit, which is the perfect temperature for ribs. Using indirect heat, smoke/slow cook for 3 hours. Cook for another 2 hours after wrapping the ribs in foil with some liquid. This is a slick little sucker, but removing it results in the most delicate, fall-off-the-bone ribs youve ever had. I slit the membrane on the far left side with kitchen scissors and pulled it out. It comes off in one piece part of the time, and some of the time it doesnt. This is an excellent tutorialI appreciate how it suggests pulling the membrane off using a paper towel it makes things a lot easier.

Second Step: I divided my ribs into two slabs , then coated them with a mild dry rub mixture.

Third Step: Cover pan securely with foil and bake for 3-4 hours, or until ribs are falling off the bone and internal temperature reaches 190-205 degrees. Guys! Youve already gotten 95% of the way there! The next step is to make them sticky and caramelized. Despite the fact that it is optional, I strongly advise you to do this step.

  • Visual inspection
  • Actually cutting into the ribs
  • Simply going by time

Some of these work better than others, but non of them are 100% accurate. Worry not though, there is a 100% accurate way to determine if your pork ribs are done, and Ill explain that in detail.

The most popular method is looking for the bones to start peeking out. Youll see about a quarter inch of the bones start to peek out all along the slab, or portions of it. Thats usually a pretty good indication that the ribs are about ready.

Its not foolproof by any stretch, but it is an easy visual cue that doesnt take long, requiring only a glance.

Another method is to bend the slab of ribs. The bend test is done by using a pair of tongs or gloves and requires slightly more time than quickly peeking at the bones but its not difficult. Simply pick up the slab and give it a slight bend towards a U shape.

If there is no separation or cracking between the ribs, theyre not ready. A slab of ribs thats ready cracks easily between the bones and almost breaks in two.

Many pit masters will use whats called the toothpick test. If you have experience cooking a brisket, youll be familiar with this method.

I use the point of a temp probe needle and simply probe the meat in between the bones. When doing this, Youre looking for minimal resistance and for the probe to slide into the meat and pull out cleanly.

How To Cook Slow Cooker Ribs

  • Cut the pork back or baby back ribs into large pieces and place them in a 6-quart slow cooker along with the barbecue sauce. Cook on low for 9 hours or on high for 4-5 hours.

    How To Grill Baby Back Ribs

    Easy Smoked Ribs Recipe
  • On a large rimmed baking sheet, rub each rack of ribs all over with the rib dry rub and refrigerate overnight. Make sure to cover the entire racks well and pat down the rub. Its called a rub for a reason. rub rub rub and pat pat pat on both sides, you want a really nice coating!
  • Bring the ribs to room temperature when ready to cook. Clean the grill grates. You want nice clean grill grates for these baby back ribs. Light gas grill to medium, approximately 300°F.
  • When grill is warm, place the ribs on the grill grates and close the lid. I like to check on these ribs every 20 minutes or so. I move them around a bit if I feel they are cooking unevenly. Grill for approximately 1 hour.
  • Mix the BBQ sauce and garlic powder. At the 1 hours mark, brush the ribs with the BBQ Sauce using a basting brush. Give them a good coating.
  • Turn the heat to low and shut the grill for approximately 15 minutes. Only baste with BBQ sauce in the last 15 to 20 minutes of grilling or the sugars will burn.
  • Remove from grill and transfer to a large cutting board. Let the ribs rest for 10 minutes. Using a sharp knife, cut each rib in between each bone.
  • Serve with additional BBQ sauce on the side.
