Air Fryer Grilled Cheese
This is so simple, but it brings back an ancient classic, Grilled Cheese it tastes like it was almost on a skillet. Even though it is a simple recipe, it is one I recommend trying.
We originally found this classic when my kids were brought my parents to an upscale restaurant, where they had a grilled cheese sandwich for a price tag of over $20. Do you imagine that what is worse is that my son ordered, and my parents went along with it? My oldest son tried it, and he absolutely loved it, so when I got my air fryer, I put it in my list of items to figure how to make it in the Air Fryer.

Grilled Cheese Method: Butter
About this method: I stuck to the basics with this method. I followed the steps described above, spreading one side of each slice of bread with 1/2 tablespoon of softened unsalted butter.
Results: This method is arguably the most common for making grilled cheese and its the way Ive always cooked grilled cheese myself. It wasnt bad, but it wasnt amazing either. The butter made the bread brown before the cheese had a chance to melt, and I actually set my smoke alarm off making the sandwich. Granted, my alarm may be sensitive, but I could definitely see wisps of smoke coming from the pan before I removed the lid. This wasnt super surprising, though, since butter on its own tends to burn easily. All in all, this method produced a sandwich that tasted good, but I had to deduct points for the overcooked bread and the smoky situation.
For Memorable Grilled Cheese Good Cheese Matters
The first big tip? I dont recommend Velveeta. Those sandwiches of my childhood stood out in my memory as the ne plus ultra of grilled cheeses, until I replicated one as an adult and found it impossibly insipid.
Oooozy melted cheese is our goal. Hard cheeses like parmesan dont get very oozy when they melt, and soft cheeses like ricotta are too high in moisture. What cheeses work best? Melting cheeses, of course. Such as:
A cheese thats too flavor-packed can overwhelm the sandwich. My cheesemaker friend, who has weekly Grilled Cheese Thursdays at her creamerys tasting room, handles this by blending a few cheeses together for grilled cheese: about 30 percent something exceptional and expensive to 70 percent workaday .
Real talk: I make utterly satisfactory grilled cheese sandwiches with mass-market orange cheddar. Ultimately, if you are hungry, the cheese you happen to have in the fridge is plenty good enough.

In order to make grilled cheese with olive oil, simply coat your pan with enough olive oil to keep the sandwich from sticking, usually about 1-2 tablespoons, the same way you would with butter. You may or may not need to add more oil between flips. Be careful not to use too much oil when cooking your sandwich as this can render the sandwich too oily.
Remember that cooking with olive oil can impart a very potent taste to your sandwich. Use light-tasting olive oil to prevent overpowering your sandwich.
Garten Called For A Panini Press To Be Used In This Recipe But I Didn’t Have One On Hand So I Made My Own Version Instead
With a panini press, both sides of it get hot. Because of that, I didn’t want to just use a cold plate and can to weigh the sandwich down.
Instead, I heated a smaller skillet on the stove until it was hot, and then sat it on top of the buttered bread, weighing it down with a large can of tomatoes. The hot pan acted like a heated top portion of a panini press.

Between the bread, Stewart stacks tomatoes , three slices of cheese, sweet-hot pickles, Dijon mustard and bacon.
And here’s the big twist: She puts mayo not butter! on the outside of the bread before she sends it to the pan to sear.
Why? “Supposedly fewer calories and very tasty and the bread doesn’t burn,” she advises. Stewart does, however, add some butter on the inside of the sandwich later on.

Were partial to regular old cheddar cheesesharp or medium, depending on your preference but a great grilled cheese sandwich can be made out of lots of different cheeses, and our grilled cheese recipe will work with almost any cheese you favor. Here are a few great melters to try:
- Monterey Jack. This mild, creamy white cheese is an even better melter than cheddar, and is extra lovely mixed with a little sharp cheddar.
- Gruyère. Nutty and delightfully salty, Gruyère is an Alpine-style cheese that is widely available in the U.S. and makes for a richly flavorful grilled cheese.
- Raclette. Another gorgeous Alpine-style cheese that is quite literally made for melting. This washed-rind cheese is funkier than Gruyère and will definitely take your grilled cheese into grown-up territory.
- Blue / Chevré. Tangy chevré or sharp blue cheeses can be delicious additions to a grilled cheese, but we like to use them sparingly and coupled with mild, melty cheeses like Jack or cheddar.

Once Everything Was Prepped I Started To Assemble My Sandwich
I chose to use sourdough bread for this sandwich. As per Garten’s instructions, I buttered one side of each slice before flipping them both over to generously slather the other sides with the wet mixture I had made.
“Don’t neglect the corners!” Garten wrote. I was sure to give them some extra love.
I carefully laid out my one-inch pieces of bacon on top of the cheese spread on one slice of bread, and then covered them with the Gruyère and cheddar mixture before closing the sandwich with the other piece of bread on top.
