  • 1Trim fat and tendons off your chicken. You can put your chicken in a brine fresh or frozen. Before you brine, though, prepare your breasts by trimming away any fat or tendons. Fat is typically a white or creamy color and will be around the edges of the breast, while tendons will be tough, reddish spots.XResearch source
  • 2Put your chicken in a pan or bag. You can put your chicken in either a large, shallow pan or a sealable bag to brine. If you choose to put your chicken in a pan, lay the breasts out side-by-side, making sure they do not overlap.XResearch source
  • 3Add your brine. Pour your brine into your container over your chicken. There should be enough brine to completely submerge your chicken. Seal your bag and roll it lightly to get your brine into all areas of the chicken. If your meat is in a pan or dish, cover it with foil or cling wrap.
  • 4Put your chicken in the refrigerator and allow it to rest in the brine. The longer your chicken rests, the juicier and more flavorful it will be when you cook. Brine your chicken for an hour for every pound of meat.
  • Larger chicken breasts or large quantities of chicken may be brined overnight to get the best flavor and texture.
  • You can quickly brine your chicken by splitting it up into half-pound servings and letting each one soak in their own dish or bag for one and a half to two hours.XExpert Source
  • Always Preheat The Grill

No matter the type of chicken on the menu, there is one thing your grill needs before it starts the heavy lifting of cooking dinner: the preheat.

Run the grill on high for at least 15 minutes. Allow the cooking grates to absorb heat so they will have the needed heat to pass on to the chicken.

Does it take longer to ready a charcoal grill than a gas grill? While it does take time to light charcoal briquettes, this only adds a few more minutes to the process. In the end, the setup time for both is almost a wash.

When the grill is lit and preheated, use a grill brush to clean the grates of any leftover food particles.

How To Brine Chicken For Grilling

Have you ever roasted a chicken and it was as dry as a sun-baked riverbed? It happens, but brining is a surefire way to ensure your roasted, baked, or grilled chicken is juicy and flavorful. And the cool thing about brining is you can do it with chicken pieces or with a whole chicken. Im sharing a step-by-step process of how to grill an entire chicken. Since the chicken is going to be spending a significant amount of time on the grill, brining is a great way to help the chicken retain moisture and prevent it from drying out. But brining is also a way to add deep flavor too. The base of any brine is salt, sugar, and water, but feel free to add ingredients like lemon slices, cinnamon sticks, thyme, rosemary, brown sugar, soy sauce, Worcestershire sauce, or whole peppercorns. For this brining recipe, I start with equal parts of salt and sugar.

I brined this whole chicken overnight in the fridge but if you dont have that much time 2-4 hours will do just fine. After brining make sure to give the chicken a thorough rinse with cool water, then pat it down with paper towels to get rid of any moisture.

Next, I trussed the chicken with kitchen twine to ensure the chicken cooks evenly.

When you remove the excess water and brush or rub the skin with a mixture of 2 tablespoons of extra virgin olive oil and two tablespoons of melted unsalted butter, it will produce crispy skin and will ensure that your chicken is golden brown all over.

Whats The Difference Between A Brine And A Marinade

Both brines and marinades are meant to enhance plain meat, but they do it differently. A brine has more salt than a marinade, and meat gets totally immersed in a brine. It works because the salt penetrates the meat as the brine and the meat reach an equilibrium. Brining adds moisture to the meat that keeps it from drying out while grilling, helping it to come out juicy.

A marinade often contain oil, and the oil does not penetrate the meat. The meat is usually not immersed in a marinade. Marinade flavors only the outside of the meat so theres a chance it will come out dry after grilling.

A brine is unlike a marinade. Some meats are left in the refrigerator to marinate overnight, using an acid-based or oil-based marinade. This gives the meat lots of flavor.

If you leave the meat in a brine overnight it will#1. get too salty and, #2. the watery brine will actually start to pull out some of the natural flavorings of the meat. You dont want that.

Brining chicken adds moisture and flavor to ensure a tender and tasty piece of chicken.

These thighs were put into a gallon ziplock bag with the brine, placed in a suitably sized bowl, and refrigerated for 3 hours.

Very lightly oil the skin with olive oil, then grill, skin side down 7 or 8 minutes to get a nice char.

    How To Grill Chicken Wings

There are several ways to grill wings, but first, lets look at the wing itself.

Wings can either be left whole or separated into drumettes and flats. With this method, I remove the wingtip, saving them with additional chicken parts for a future batch of chicken stock. Separating the wing creates more work on the grill, but in my opinion, it makes for easier eating one-hand eating especially when the other hand is clutching a beer.

Now, on to the grilling part!

  • Brush the wings with olive oil and season. Before grilling, its important to brush the wings with olive oil and season with at least salt and pepper.
  • Grill wings continuously over direct medium heat . You can also smoke them over direct low heat . Flip as needed until the wings are almost cooked through and the inside reads 160º F internal, approximately 20 to 25 minutes.
  • Finish over direct high heat . Finish the wings over direct high heat to sear and crisp the skin.
  • Apply sauce, if using. Adding sauce too soon sets the stage for the sauce to burn. If using a sauce, apply it towards the end of the cook or toss with the wings right before serving.

What Do You Need For Chicken Wing Brine

For making a chicken wing brine youll need:

    • Chicken wings
    • Any liquid can make do beer, wine, vinegar or fruit juice but I almost always just go for good old fashioned water. While you might intend to make a different flavor of brine by using a different liquid, I find that water does a great job without taking much away from the flavors of the meat itself. Use warm water.
    • Table or kosher salt. Ensure it doesnt contain any additives, as these can affect the purity of your mix. Because kosher salt has no iodine content it can form clumps, which makes it ideal for brining.
    • A large container. Avoid any container that can corrode when used. The best containers tend to be plastic or stainless steel.
    • A weight. A plate can make do in this case, keeping your meat submerged in the water
    • Sugar. This helps give your meat a beautiful crisp when smoked or barbecued.
    • Your choice of extras. For example, red pepper flakes, white pepper, black pepper. These added flavors will come down to your personal preference, but as an absolute minimum I tend to include black pepper.

Follow these six simple steps and youll have made light work of your chicken wing brine.

Why Should We Brine Chicken Wings

    Basic Chicken Brine

As you may know, brining is a meat preparation process that helps prevent meat from drying out. This is particularly important for BBQ and smoking, where meats are left exposed to high temperatures for long periods of time, leading them to them drying out.

This is even more key for chicken because its a very lean type of meat, with very little fat content. This makes it prone to turning from juicy to dry in mere minutes.

Add to this the fact that wings tend to carry less meat than cuts like breast, and were asking for a lot of trouble if we dont do the right prep.

A prepared brine of water, salt, and seasoning can be mixed together and used to submerge the chicken. Salt is an excellent agent for helping meat lock in its juices and flavors. This means that once its cooked it will remain beautifully moist and tender.

The brining process is very common for recipes involving turkey. In fact, it has been utilised in cooking by our ancestors! They knew back then that brines help preserve food as well as affect the overall tenderness.

Usually, water is the base of the brine. However, chefs generally like to add wine, tea, vinegar, juice, beer or broth for extra flavour.

For these brined chicken thighs, you can experiment with adding hints of either vinegar, beer, wine or broth.

When you add the salt, keep in mind that if you use a salty broth, your brine might need less salt. Also, a trick to nailing the brine is to wait until the salt dissolves entirely into the solution.

Keep tasting the solution as you go along. before adding the raw chicken though!

When you add herbs and spices to a chicken brine, it can act as a marinade. You can consider the following herbs that typically pair well with chicken:

    • bay leaves

You can also add spices such as:

    • cayenne pepper
    • chilli powder
    • chipotle powder

When it comes to the actual brining process, depending on how many chicken thighs you brine, the recommended brining time is roughly 2 hours.

Just dispose of the brine. Besides, you can easily prepare another batch in just a matter of minutes.

So What Does Brining Do And How To Brine Chicken Wings For Grilling

People familiar with marinating and preparing the food for deep-frying or grilling can relate to this term but for newbies, brining is a process of soaking meat into saltwater to help them get the moisture tenderness and enriched taste, all at the same time.

The main benefit of wet brining is that you can add any desired flavor to the saltwater and bring your desired flavor to the meat. The following reason might explain well why brining the chicken wings makes so much sense:

  • The second property that saltwater gives to the wings is tenderness. It relaxes the will between the proteins in chicken wings. The results are more tender cooked wings that taste amazing.
  • Thirdly, the overall taste of the chicken wings enhanced to the next level. Brine consists of sugar elements and mixed flavors of other liquids and herbs. This enriches the overall wings flavor.
