And the cool thing about brining is you can do it with chicken pieces or with a whole chicken. Im sharing a step-by-step process of how to grill an entire chicken. Since the chicken is going to be spending a significant amount of time on the grill, brining is a great way to help the chicken retain moisture and prevent it from drying out. But brining is also a way to add deep flavor too. The base of any brine is salt, sugar, and water, but feel free to add ingredients like lemon slices, cinnamon sticks, thyme, rosemary, brown sugar, soy sauce, Worcestershire sauce, or whole peppercorns. For this brining recipe, I start with equal parts of salt and sugar.

    I brined this whole chicken overnight in the fridge but if you dont have that much time 2-4 hours will do just fine. After brining make sure to give the chicken a thorough rinse with cool water, then pat it down with paper towels to get rid of any moisture.

    Next, I trussed the chicken with kitchen twine to ensure the chicken cooks evenly.

    When you remove the excess water and brush or rub the skin with a mixture of 2 tablespoons of extra virgin olive oil and two tablespoons of melted unsalted butter, it will produce crispy skin and will ensure that your chicken is golden brown all over.

    Youll need about one and a half cups for 4 chicken breasts.

    Or boneless, skinless chicken thighs, which are my favorite cut of chicken by far.

    Brine the chicken in the pickle juice overnight with some brown sugar as well.

    Just put it all in a gallon bag and into the fridge for at least 24 hours.

    When youre ready to grill remove the chicken from the bag and get rid of the brine.

    Pat the chicken dry and sprinkle with a little Old Bay seasoning on both sides.

    All thats left to do now is grill these babies over medium to medium high heat.

    They will take around 5 to 6 minutes per side.

    LOVE those charred grill marks!

    How Long Do You Brine Chicken

    These tasty chicken thighs were brined for 3 hours. If youre brining skinless, boneless breasts, 1 to 2 hours is adequate.

    Skin on, bone-in chicken, 2 to 3 hours. A whole chicken should be brined for 3 to 4 hours. Any longer than this, the chicken will get too salty.

    Use the time you haveit all adds up to added flavor!

    A brine is unlike a marinade. Some meats are left in the refrigerator to marinate overnight, using an acid-based or oil-based marinade. This gives the meat lots of flavor.

    If you leave the meat in a brine overnight it will#1. get too salty and, #2. the watery brine will actually start to pull out some of the natural flavorings of the meat. You dont want that.

    Brining chicken adds moisture and flavor to ensure a tender and tasty piece of chicken.

    These thighs were put into a gallon ziplock bag with the brine, placed in a suitably sized bowl, and refrigerated for 3 hours.

    To prep them for the grill, remove them from the brine and pat dry. You can leave on any bits of herbs that stick to the chicken when you take it out of the brine.

    Very lightly oil the skin with olive oil, then grill, skin side down 7 or 8 minutes to get a nice char.

    Turn and let cook 10 or 12 more minutes until the internal temperature is around 160°F. Let the chicken rest for 5 or 10 minutes, then serve it. The chicken brine will have done its work!

    There are several ways to grill wings, but first, lets look at the wing itself.

    Wings can either be left whole or separated into drumettes and flats. With this method, I remove the wingtip, saving them with additional chicken parts for a future batch of chicken stock. Separating the wing creates more work on the grill, but in my opinion, it makes for easier eating one-hand eating especially when the other hand is clutching a beer.

    Now, on to the grilling part!

  • Brush the wings with olive oil and season. Before grilling, its important to brush the wings with olive oil and season with at least salt and pepper.
  • Grill wings continuously over direct medium heat . You can also smoke them over direct low heat . Flip as needed until the wings are almost cooked through and the inside reads 160º F internal, approximately 20 to 25 minutes.
  • Finish over direct high heat . Finish the wings over direct high heat to sear and crisp the skin.
  • Apply sauce, if using. Adding sauce too soon sets the stage for the sauce to burn. If using a sauce, apply it towards the end of the cook or toss with the wings right before serving.

    Now when youre done seasoning the chicken. Please time onto the grill and make sure that you dont. Have very high flames. Furthermore, The optimum chair time for cooking time to 12 ounces of chicken pieces at 350 degrees for heights is 30 to 40 minutes. This cooling time is on indirect heat. Its recommended to cook the chicken on indirect heat throughout but if you still want to cook it on direct heat just move the chicken onto the direct flames for several minutes after cooking heat or indirect heat.
