Adding Chicken To The Brine
Always Preheat The Grill
No matter the type of chicken on the menu, there is one thing your grill needs before it starts the heavy lifting of cooking dinner: the preheat.
Run the grill on high for at least 15 minutes. Allow the cooking grates to absorb heat so they will have the needed heat to pass on to the chicken.
Does it take longer to ready a charcoal grill than a gas grill? While it does take time to light charcoal briquettes, this only adds a few more minutes to the process. In the end, the setup time for both is almost a wash.
When the grill is lit and preheated, use a grill brush to clean the grates of any leftover food particles.

How To Brine Chicken For Grilling
Have you ever roasted a chicken and it was as dry as a sun-baked riverbed? It happens, but brining is a surefire way to ensure your roasted, baked, or grilled chicken is juicy and flavorful. And the cool thing about brining is you can do it with chicken pieces or with a whole chicken. Im sharing a step-by-step process of how to grill an entire chicken. Since the chicken is going to be spending a significant amount of time on the grill, brining is a great way to help the chicken retain moisture and prevent it from drying out. But brining is also a way to add deep flavor too. The base of any brine is salt, sugar, and water, but feel free to add ingredients like lemon slices, cinnamon sticks, thyme, rosemary, brown sugar, soy sauce, Worcestershire sauce, or whole peppercorns. For this brining recipe, I start with equal parts of salt and sugar.
I brined this whole chicken overnight in the fridge but if you dont have that much time 2-4 hours will do just fine. After brining make sure to give the chicken a thorough rinse with cool water, then pat it down with paper towels to get rid of any moisture.
Next, I trussed the chicken with kitchen twine to ensure the chicken cooks evenly.
When you remove the excess water and brush or rub the skin with a mixture of 2 tablespoons of extra virgin olive oil and two tablespoons of melted unsalted butter, it will produce crispy skin and will ensure that your chicken is golden brown all over.

Whats The Difference Between A Brine And A Marinade
Both brines and marinades are meant to enhance plain meat, but they do it differently. A brine has more salt than a marinade, and meat gets totally immersed in a brine. It works because the salt penetrates the meat as the brine and the meat reach an equilibrium. Brining adds moisture to the meat that keeps it from drying out while grilling, helping it to come out juicy.
A marinade often contain oil, and the oil does not penetrate the meat. The meat is usually not immersed in a marinade. Marinade flavors only the outside of the meat so theres a chance it will come out dry after grilling.

If you leave the meat in a brine overnight it will#1. get too salty and, #2. the watery brine will actually start to pull out some of the natural flavorings of the meat. You dont want that.
Brining chicken adds moisture and flavor to ensure a tender and tasty piece of chicken.
These thighs were put into a gallon ziplock bag with the brine, placed in a suitably sized bowl, and refrigerated for 3 hours.
To prep them for the grill, remove them from the brine and pat dry. You can leave on any bits of herbs that stick to the chicken when you take it out of the brine.
Very lightly oil the skin with olive oil, then grill, skin side down 7 or 8 minutes to get a nice char.
Turn and let cook 10 or 12 more minutes until the internal temperature is around 160°F. Let the chicken rest for 5 or 10 minutes, then serve it. The chicken brine will have done its work!
How To Grill Chicken Wings
There are several ways to grill wings, but first, lets look at the wing itself.
Wings can either be left whole or separated into drumettes and flats. With this method, I remove the wingtip, saving them with additional chicken parts for a future batch of chicken stock. Separating the wing creates more work on the grill, but in my opinion, it makes for easier eating one-hand eating especially when the other hand is clutching a beer.
Now, on to the grilling part!

Another mitigating factor is the size of the chicken. Use the chart below as a guide, but to be on the safe side, check the internal temperature with an instant read thermometer.

What Do You Need For Chicken Wing Brine
For making a chicken wing brine youll need:
- Chicken wings
- Any liquid can make do beer, wine, vinegar or fruit juice but I almost always just go for good old fashioned water. While you might intend to make a different flavor of brine by using a different liquid, I find that water does a great job without taking much away from the flavors of the meat itself. Use warm water.
- Table or kosher salt. Ensure it doesnt contain any additives, as these can affect the purity of your mix. Because kosher salt has no iodine content it can form clumps, which makes it ideal for brining.
- A large container. Avoid any container that can corrode when used. The best containers tend to be plastic or stainless steel.
- A weight. A plate can make do in this case, keeping your meat submerged in the water
- Sugar. This helps give your meat a beautiful crisp when smoked or barbecued.
- Your choice of extras. For example, red pepper flakes, white pepper, black pepper. These added flavors will come down to your personal preference, but as an absolute minimum I tend to include black pepper.
Follow these six simple steps and youll have made light work of your chicken wing brine.

Why Should We Brine Chicken Wings

As you may know, brining is a meat preparation process that helps prevent meat from drying out. This is particularly important for BBQ and smoking, where meats are left exposed to high temperatures for long periods of time, leading them to them drying out.
This is even more key for chicken because its a very lean type of meat, with very little fat content. This makes it prone to turning from juicy to dry in mere minutes.
Add to this the fact that wings tend to carry less meat than cuts like breast, and were asking for a lot of trouble if we dont do the right prep.
A prepared brine of water, salt, and seasoning can be mixed together and used to submerge the chicken. Salt is an excellent agent for helping meat lock in its juices and flavors. This means that once its cooked it will remain beautifully moist and tender.

The brining process is very common for recipes involving turkey. In fact, it has been utilised in cooking by our ancestors! They knew back then that brines help preserve food as well as affect the overall tenderness.
Usually, water is the base of the brine. However, chefs generally like to add wine, tea, vinegar, juice, beer or broth for extra flavour.
For these brined chicken thighs, you can experiment with adding hints of either vinegar, beer, wine or broth.
When you add the salt, keep in mind that if you use a salty broth, your brine might need less salt. Also, a trick to nailing the brine is to wait until the salt dissolves entirely into the solution.
Keep tasting the solution as you go along. before adding the raw chicken though!
