How To Grill Chicken Thighs:
To start, grab a medium sized bowl and whisk together your marinade. This consists of olive oil, lemon juice, lime juice, garlic, onion powder, salt, pepper, mustard, soy sauce, dijon mustard, and brown sugar. Pantry staples! Trim any fat from your chicken thighs if necessary, and place in a large bowl or a large zip-top plastic bag. Pour the marinade over the chicken.
This recipe calls for 2-2.5 pounds of chicken thighs, or about 8 total. As you can see from the photos, you will want to use bone-in and skin on chicken thighs for best results with this recipe. After you have poured your marinade over the chicken, seal the bag, getting out as much air as you can. Now, massage the meat inside the bag to make sure all of the chicken is well coated. Marinate in the refrigerator for at least 30 minutes, and up to 12 hours. For best flavor, I prefer marinating for at least 2 hours, but a shorter time will work in a pinch. Once the chicken has marinated, allow it to sit, covered in the bag at room temperature for 15-20 minutes while your grill heats up. - Make certain that the grill is preheated before adding on the chicken thighs. This will ensure they develop a nice crispy crust as you grill them.
- Use an instant read thermometerto check the inside temperature of the chicken to make sure its 165 degrees F. This isnt something that you want to guess or estimate.
- When grilling, make sure to maintain medium heat, if you turn up the grill to high the skin will burn and the chicken wont be fully cooked on the inside. This will also cause them to dry out.
- Dont forget to let them rest, which lets the juices redistribute in the meat and makes the chicken thighs juicy!

You dont want the raw meat to sit at room temperature for an extended time. Bacteria multiply rapidly, especially in the temperature danger zone between 40 to 140°F . They can double in as little as 20 minutes, be careful on those hot summer days! Never leave food out of refrigeration for over 2 hours, or it could cause food spoilage or illness. However, its okay to let it sit at room temperature for no more than 15 minutes while preheating the grill to take the chill out of the chicken for even more cooking.

This year, Ive been really testing out different recipes to see what works on my wood pellet grill. Of course, you can smoke meat on your wood pellet grilled but you can also grill and make these Traeger grilled chicken thighs.

Uneven Grillingthe Secret To Grilled Thighs
Uneven grilling is my method to avoid both flare-ups from draining fat and burnt skin.
There are two parts to this method:1) The skin side of the thighs can burn easily so should have less time facing the flames. So with skin-on thighs, start with skin up for the first period and grill for about 5-6 minutes. Flip to skin side down for 4 minutes. Continue to go back and forth using the same timing.2) Alternate sides of the grill surface with each flip. You will get fat drainage flare-ups. Moving the chicken to the other side of the grill at the flips will allow hot spots from fat drainage to burn out.
For skinless thighs, you can skip the uneven grilling timesyou have no chicken skin you are trying to protect. But you will still need a large surface area to move around and avoid flare-ups from the fat drainage.

What Temperature Should Chicken Thighs Be Grilled To
The internal temperature of the chicken thigh needs to be at 165 degrees F. Insert the thermometer in the thickest part of the thigh to check the temperature. Make sure to use an instant read thermometer to check this.
Ill be honest I usually cook them until they are close to the 180-190 degrees F. That gets rid of any of that bloody tissue around the bones and they are still juicy and delicious!
