Lightly coat your ribs but do not overseason. Be prepared to move your ribs to the grill within 10 to 20 minutes of applying the spices. Any longer than an hour and any rubs will begin to change the texture of the meat. Some accept this for additional flavoring.

Cook Ribs Low And Slow

When you cook ribs in a smoker, they sit for a long period of time at a low temperature. To mimic this process, you will need to set the grill to a low temperature and cook your ribs for several hours. You want the inside of your grill to hold a temperature around 225 F/110 C for the entire cooking time, which means you need to check on the grill to make sure the temperature is maintained. While youre checking the temp, take a look at the ribs it is important to keep a close eye on your ribs because once the surface of the meat starts to burn theres no going back.

If you are using wood chips, you will probably have to add more wood every hour. This is particularly important for the first 2 hours. Your ribs will be done when they become tender and the meat is loose around the bones, which can be 4 to 5 hours.

To speed up the process or to increase the tenderness of the ribs, you can pre-cook the rack. Ribs cooked on a barbecue smoker at a low temperature for several hours will be very tender. However, ribs cooked on a grill, especially a gas grill, will not be as tender, even when cooked indirectly. You can precook by either boiling the ribs for about 30 minutes or by placing them in a slow cooker. Once you are ready to grill, season the ribs and cook them indirectly until done. The disadvantage of this is that you can literally boil out the flavor of the meat and the ribs will not absorb the flavor of the smoke as well.

  • Cider vinegar the tang in homemade barbecue sauce. Sub with white wine vinegar, sherry or Champagne vinegar OR 1/3 cup normal white vinegar

  • Brown sugar barbecue sauce is sweet. If you dont like sweet, you can cut it back.

  • Garlic I really like using fresh but powder is fine too

  • Onion powder sub garlic powder

  • Mustard powder sub with dijon or normal yellow mustard

  • Worcestershire Sauce savoury element. Soy sauce is an acceptable sub

  • Cayenne for a hum of warmth. This is not overly spicy. If youre concerned, start with less and you can adjust right at the end. If you like it hot, start with the recipe amount then add hot sauce at the end.

How Long Should I Grill Short Ribs

Should I clean and season the grill grate? How much longer should my short rib cook? The answer to both questions is it depends. If you are cooking shortribs for dinner, you want to cook them medium rare . If you plan to serve them as appetizers, however, go for medium well or medium . For best results, use the same grill setting for both cooking methods. If using the oven, preheat the broiler to high.

How Long Does It Take To Smoke Beef Short Ribs

As a general rule of thumb, you should allow 6-8 hours to smoke a large rack of beef short ribs.

I wish I could give you a more accurate time estimate, but the cooking time will vary based on the thickness of the meat, the number of ribs in the rack, and the temperature you decide to smoke at.

If you are pressed for time feel free to smoke a little hotter, around 275-300°F.

Dont forget to include the time it takes to prep and heat your smoker, and an hour to rest the ribs.

So from start to eating, allow a solid 8-9 hours. This is why I like to always have more time than I think I will need because if the food is finished early I can always leave it in faux cambro for longer.

How To Season Short Ribs

For seasoning your short ribs of beef, you can use either a simple salt and pepper mixture, my Bold Rib Rub Recipe with Brown Sugar, or my favorite dry rub recipe.

Simple is best when it comes to beautiful cuts of beef like this! I love my dry rub recipe because its easy to mix together, simple, and so flavorful.

What To Serve With Beef Ribs

  • Peel off the silver membrane from the back of the ribs. 2 racks of beef back ribs
  • Rub ribs on both sides with Historic Black seasoning and refrigerate overnight1/4 cup Historic BBQ Black Seasoning
  • Remove ribs an hour before ready to start smoker. After about 45 minutes, get Traeger started. Turn to SMOKE setting. After smoke dissipates, set temp to 225º.
  • When grill is at temperature if you have a wifi thermometer insert Meater into the center of the meaty section of the ribs avoiding the bones. Be sure to leave the meater block on the grill its got a magnet. This extends the range so you can monitor from your phone in the house.
  • Set ribs on the grates, bone side down. Cook 8-10 hours until reach 203º. Check pellet hopper after 4-6 hours.
  • Remove from grill and rest with foil tent for 20 minutes

Grilled Short Ribs With Smoked Spanish Paprika Rub

Im a sucker for grilled short ribs. I saw these beauties in the meat case at my local grocery store – flanken cut beef short ribs, lined up in their trays – and I had to buy them. Had to, I tell you!

Flanken style short ribs are the style used in Korean grilled beef short ribs, cut across the bone, about ¼-inch thick. I wasnt in the mood for Korean, though We had stir fry for dinner last night. I had a taste for something a little more American, so I went with Smoked Spanish Paprika rub.

What does Flanken mean, anyhow? Its derived from the Yiddish and German word for flank, because the ribs are cut from the flank of a side of beef. Flanken was a cheap cut, because short ribs are tough and chewy. Normally it takes long, slow cooking to tenderize it. But, if the short ribs are cut thin enough, against the grain of the meat, they become perfect for grilling, with a big beefy taste.

Making Beef Ribs On A Pellet Grill

Step 1: Start your pellet grill and set temperature for 250 °F. I like to use oak or hickory pellets for beef short ribs but use your favorite.

Step 2: While the grill is preheating, trim off any excess fat on the beef short ribs. There usually isnt much, but if there is, just clean it up with a sharp boning knife so they look like this:

Step 3: Whisk together all ingredients for the rub in a bowl. Generously coat the beef short ribs with the rub, ensuring you coat the sides. Dont worry about getting the bone side of the ribs. Youre not eating that side where the membrane is, so seasoning it is a waste.

TIP: Unlike pork ribs where the membrane should be removed, on beef short ribs leave the membrane in place to hold them together while youre smoking the ribs.

Step 4: Place ribs on a wire cooling rack inside of a cookie sheet. This allows for easy cleanup and prevents your grill from getting filthy with the dripping rendered fat. Place the ribs on the smoker, and close the lid.

Step 5: Mix beef broth, hot sauce, and soy sauce and pour into a spritz bottle. After the ribs have been on the smoker for one hour, give them a light misting of the liquid. This moisture helps the ribs take on some smoke and builds an incredible bark. Repeat every hour for the first four hours.

Step 8: Remove beef short ribs from grill, cover with aluminum foil and wrap in an old towel. Let ribs rest for at least an hour, but preferably 90 minutes, before opening up and slicing.

What Is The Best Temperature To Cook Ribs On The Grill

Place meat on grill pan and cook for 20 minutes on each side. Then place meat back on heat and continue cooking for 10 minutes longer. This will take care of any remaining marinade. You can also brush the meat with the marinate before grilling. Grill the pork ribs until they are cooked through, about 1 hour and 15 minutes per pound. Serve with your favorite barbecue sauce. For a delicious side dish, serve the barbecue ribs with baked beans and cornbread. If you want to make this recipe even more delicious, add a few tablespoons of honey to your sauce when you add the water. Honey adds a sweetness that complements the smoky flavor of your ribs.

The options for serving with these are many, but I would keep whatever else you are serving in a few categories. You either want it light and fresh like a salad like maybe this creamy kale slaw. The other option would be to pair them with something rich that would cut through some of the meatiness of the short ribs. Basically, Im thinking of mac and cheese here like maybe this One Pot Spinach Mac and Cheese.

Grilled Flanken Beef Short Ribs – Amazing Steak!

Heres the thing about smoking any meat you actually dont need hardly any ingredients! Some folks even say just meat, salt & black pepper! For these beef ribs, I used:

  • Beef Back Ribs back ribs are very meaty and great for the barbecue scroll down for more on the difference between back and short ribs
  • BBQ seasoning I always use Historic BBQ but you can use your favorite seasoning. I feel like every Traeger owner has their favorite spices & dry rub!
  • What about sauces? I prefer a dry rub rib but if you like sauce feel free to baste on for the last 30 minutes.

What Is The Time It Takes To Cook Ribs On A Charcoal Grill

2 Make a charcoal fire with an indirect cooking technique like the snake. Fill a small aluminum pan halfway with water and place it on the void side of the grill. Place the ribs meat-side up on the grill grate when the charcoal grill reaches 250F and cook for 2 hours and 15 minutes over indirect heat.

Can You Eat Short Ribs Medium Rare

Medium rare is no problem. The reason you cook beef ribs all the way through is so that you can get them to fall off the bone and fork tender. If you cook your ribs too long, they will still be tough, but thats not the point.

The point is to get the meat tender enough that it can be sliced and served with a side of mashed potatoes and gravy. If you dont want to cook your ribs for a long time, then youll need to cut them into bite-sized pieces and serve them on a bed of rice or pasta.

How Long Do Short Ribs Take To Grill

Salt and pepper the short ribs thoroughly before placing them directly over the embers. Cook for 8 to 10 minutes total, rotating often, until browned on all sides and a probe thermometer put into the thickest portion of the steak registers 125F. Transfer to a chopping board and let aside for 5 minutes, covered with foil.

  • Preheat the grill to medium-high.
  • Half of the ribs should be placed in a single layer in the center of a large piece of heavy-duty foil. Raise the long sides of the foil.
  • Grill for 45 minutes to an hour, or until the ribs are cooked through. Return the ribs to the grill after removing them from the foil wrappers.
