How To Cook Chicken Breast On The Grill
Nothing beats protein on a grill! Just make sure your grill is brushed with oil before putting any chicken on it.
To cook once your grill is going, start top-side down and cook for 3 to 4 minutes, then flip and put the cover on. Check in after 5 to 8 minutes, depending on the size of the breasts. Remove when they have reached an internal temperature of 150 to 155 F.

Large chicken breasts take about 20-22 minutes to cook. Medium-sized breasts take about 18-20 minutes. You also have the option of throwing on your broiler in the last 2 minutes to get crispier edges!

An Easy Marinade For Grilled Chicken Breasts
For 4 chicken breasts I like to combine the following ingredients in a ziptop bag:
- 1/2 cup olive oil
- 1 tsp. dried thyme leaves
- 1/2 tsp. garlic powder
- 1/4 tsp. coarsely ground black pepper
You could use a mixture of lemon juice and white wine vinegar, or just cider vinegar instead of the lemon, if youd like. And you can use a different herb. This one calls for thyme, but dried oregano and dried rosemary are also really nice.
Combine those ingredients in a zip top bag. Then add the chicken to the bag and seal it. Refrigerate for 30-60 minutes or overnight. Remove chicken from the bag, discard the marinade. Grill the chicken according to the instructions below.

How To Make This Recipe
Place the chicken breast in a ziplock bag together with the taco seasoning, lime juice, zest, and 1 tablespoon of oil. Mix thoroughly through the bagto coat with the marinade. Refrigerate for 1 hour to overnight.
Cut the chicken: Once ready to cook the chicken, remove it from the fridge and allow it to sit on the counter for 20 minutes to reach room temp. Cut the chicken breasts lengthways, not going all the way through, just to create pockets for the fillings.
Make the filling: In a medium bowl, combine the cheese, beans, corn, tomatoes, and cilantro.
Stuff the chicken: Stuff each chicken breast with the taco cheese mixture, and seal with a toothpick to prevent the filling from spilling.

To make the tastiest grill chicken breast you need the best grilled chicken marinade. We’ve tested more chicken marinades than we can count and this is the very best one. It’s adapted from the rub used in both the Perfect Baked Chicken Breasts and Juicy Baked Pork Chops recipes.
Since the dry heat of the BBQ can dry out chicken breasts, we’ve made this a wet marinade. It’s more like a paste and it coats the chicken in a blanket of spices which help prevent it from becoming dry. It’s also amazingly flavorful.

How Long Do You Grill Chicken Breasts For
This is the biggest question that I get. It really does end up depending on how thick your chicken breasts are. If you flattened them, as discussed, theyre going to need about 4 minutes per side over direct medium-high heat . If your grill doesnt have a thermometer, heres how to find out what temperature its at.
After 4 minutes, you flip them over and do the other side for 4 minutes. This is going to get you nice parallel grill marks on your chicken. If you want crosshatched grill marks, after the first 2 minutes, turn the breasts 90 degrees and cook for 2 more minutes. Then flip and do the same thing on the other side, 2 minutes then turn, then 2 more minutes. But note that the crosshatched ones wont be as dark as the parallel ones. I therefore prefer to just do the 4 minutes per side without turning.
Should I Use Frozen Chicken Breasts In The Toaster Oven
The frozen chicken breasts need to be brought to room temperature before putting inside the oven
Toaster ovens are resilient, but your chicken isnt always.
When you want to cook your chicken in your toaster oven, you should consider bringing it to room temperature.
This is because a frozen chicken breast will not bake evenly and some sides might end up crispy and other sides might not be properly done especially if youre not eating the right amount of heat.
You should never try to cook any frozen food in a toaster oven without thawing first to avoid ruining your food.

Alright, so heres the secret! To make perfectly baked chicken bbrrreasts, you simply need to follow this 5-step acronym: B.B.R.R.R.
Brine : Im telling you this step is an absolute must for anytime you want to bake chicken breasts in the oven. Brining chicken is super-easy, it makes your chicken extra juicy, and best of all, it can be effectively done in just 15 minutes. Plus, if you brine chicken in lukewarm water, it also helps bring the chicken to room temperature, which makes for more even cooking. Win-win!
To brine chicken, simply fill a big bowl with lukewarm water. Stir in a handful of salt until it mostly dissolves. Then add your chicken breasts and let them sit in the saltwater to brine for at least 15 minutes. If you are doing this in advance, you can cover and refrigerate the bowl of chicken and saltwater for up to 6 hours. But you dont want to let the chicken brine for much longer than that.
When youre ready to go, remove the chicken from the brine. Give it a good rinse it with cold water to wash off the salt, and then pat it dry with some paper towels. And voila your chicken is officially brined.
Really, dont skip over this step! It makes a world of difference.
Note: That said, some store-bought chicken breasts are now sold pre-brined. So double-check your packaging beforehand. And if your chicken has already been pre-brined in a sodium solution, just move onto step two. 🙂

Tips To Make Perfect Oven Baked Chicken And Rice
- Bone-in chicken thighs bake in the same time as rice, which makes them the perfect cut of chicken for this recipe! They also guarantee juicy chicken pieces without drying out. Theres nothing worse than dry chicken!
- Skin-OFF thighs work so much better when compared to skin-ON thighs! During testing, we found leaving the skin-on resulted in gluggy, sticky and half raw rice. Too much chicken fat seeped into the rice while baking.
- Chicken drumsticks can be used with skin on or off. Both work well as the amount of skin/fat on drumsticks is much less than thighs. Taste wise, we preferred skin off drumsticks.
- If you prefer using boneless chicken breasts or boneless thighs, add them in after the rice has had 20 minutes of baking in the oven .
- Arrange your chicken over the rice as the image above shows. We found chicken MUST be placed over the middle section of the rice to make sure the rice gets cooked. Leaving the middle uncovered resulted in a few crunchy grains.

Get A Meat Thermometer
Nothing makes chicken drier than overcooking it. You can buy the best chicken and have the best brine or marinade, but if you cook it even a few minutes too long, you cant do anything to fix it. Without the bones and skin adding in moisture, you have a small window of time to get it right.
But it is exceptionally easy to avoid this if you have a meat thermometer. And with some meat thermometers coming in cheaper than that family pack of chicken breasts, there is no reason not to get one. Check your meat when you are a few minutes shy of thinking youre done to ensure you stay in the right zone.
For Boneless Chicken Thighs And Breasts
- Add rice into the baking dish WITHOUT chicken. Cover with foil and bake rice in the oven for 30 minutes.
- Remove pan from oven, uncover and arrange chicken over the top. Return to the oven, uncovered, for a further 20-25 minutes, or until the chicken is cooked though and the liquid has absorbed. Rice should be soft. Continue with the recipe.
