The battered fish is prepared following these steps:

  • Pass the fish through the freshwater jet.
  • Season it with salt better if it is fine, leaving it about 10/15 minutes to take it well.
  • At will, but generally, with perfect results, squeeze a little lemon on it. With it, the fish reaffirms its consistency, and its meat acquires an excellent white color.
  • Dry it lightly with a cloth before wiping it with flour, as the floured fish must be dehydrated and with a thin layer of powder well adhered to the meat. You can go to the frying pan if you do not want to batter. If you opt for the batter, you will then go through beaten egg, to which you can add a splash of water or, better still, milk.
  • The oil should be very hot before it starts to smoke, and the oil should be abundant and the frying pan rather deep, so that the fish will be swimming while frying. Do not overfill the frying pan with fish portions, as this will lower the frying temperature more than necessary so that the fish will end up cooking and absorbing more oil than it should. In this way, a frying crust is formed on both sides that act as a barrier, preventing the muscular water of the fish from evaporating and, consequently, from drying out.
  • Ideally, once the portion of the frying pan has been removed, place it on a grid or absorbent paper, so that you will lose the excess oil. Serve hot.
  • The best way to fry is with smaller cuts or portions of fish, such as fillets, ventresca or thin slices.

    As soon as your BBQ is ready, thread the whole chicken onto the spit and secure it in place according to the manufacturers directions. Toss the chicken thighs in the rotisserie machine and cover the grill for 30 minutes or until the skin is browned and the thigh juices flow clear when punctured. Depending on the size of the chicken, it will take anywhere from 45 to 75 minutes to cook.

    How Long To Grill A Steak On A Charcoal Grill

    For a long time Ive preached theRule of Threesfor explaining how long to grill a steak on a charcoal grill. The method is basically 3-3-3-3. That means:

  • grill steak side 1 over direct heat for 3 minutes
  • grill steak side 2 over direct heat for 3 minutes
  • Flip steak and grill on side 1 over indirect heat for 3 minutes
  • Finally turn steak and grill on side 2 over indirect heat for 3 minutes
  • Ive gotten a lot of positive comments about the method but Ive also caused a bit of confusion. Lets re-examine the method.

    When Is It Time To Cook

    There are some easy rules of thumb here, and you want to get it right.

    For high heat grilling with lump charcoal, look for all pieces being lit and for the flames to die down.

    For high heat grilling with briquettes, youll want to see the coals covered with a light gray ash before you add food.

    For low n slow smoking or indirect heat roasting, you do not need to wait for all the coals to be lit and can add the food as soon as your grill has come up to cooking temperature and has heated through.

    Option 3 Pyramid Of Coals And Firelighters

    Create a small pyramid of coals on your charcoal grate, with a couple of fire starters in there toward the bottom. Then light the firs starters and wait for the coals to catch.

    Kind of old-school, but it still works.

    This method will take a little longer because you have to wait for the fire starters to light the coals and get them going on an open grate.

    A charcoal chimney starter or Looftlighter has you ready to cook in at less than half the time!

    How And When To Apply Bbq Sauce

    Now is not the time to skimp on the BBQ sauce. A good sauce while grilling will help to lock in moisture and add tons of flavor. However, if you’re using a sweet sauce , wait to brush it on until the middle and end of cooking to prevent it from burning. Make sure to have some sauce set aside that is just for the grill and one just for serving, so you don’t cross-contaminate raw and ready-to-eat food.

    How To Grill Over Indirect Heat On A Charcoal Grill

    There are two ways to set up your grill for grilling- over direct and over indirect heat. The Indirect method means that the heat is placed either to one side or both sides of the food. You will use the indirect method for foods that take longer than 20 minutes or are so delicate that the direct exposure to the heat source would dry them out or scorch them.

    Know Whether You Need Direct Or Indirect Heat Before You Start To Cook

    How you arrange your coals will give you different heat zones and more control over your barbecue.

    Direct heat

    If you think of a barbecue as a stovetop, lighting an even layer of coal is the equivalent of cooking everything on the highest heat in the hottest pan. Although this direct method might be fine for thin cuts of meat that cook quickly , it will cremate anything that needs more time to cook through.

    Indirect heat

    Push the coals to one side of the barbecue and keep the other side free to get a range of temperatures use the coal-free side to cook by indirect heat. Hot coals on just one side also enable you to cook on one half and keep food warm on the other. If you have a kettle BBQ, this is one set-up for indirect low-and-slow cooking of large pieces of meat.

    The second way is to sit an old roasting tray in the middle of the barbecue and stack the coals around it, then cook the food on the grill over the tray, again covered by the lid. The heat circulates around the barbecue giving you a hot smoker/spit-roast effect.

    Indirect cooking is perfect for larger joints and meat on the bone, such as chickens and lamb. Its also great for more delicate items, such as fish fillets. Plus it gives some direct heat where the coals are stacked should you want to brown other items quickly. Cooking indirectly means food wont burn or scorch.

    How Long Does It Take To Cook Chicken Breast On A Charcoal Grill

    Do you want to know how long to grill chicken breast? Grill for 9-10 minutes, depending on how hot your grill is. Halfway through the cooking time, turn the chicken breasts over. For the most part, I like to grill my chicken breasts for around 10 minutes each side, turning them midway through, in order to achieve lovely sear marks on both sides of the chicken.

    Tips For Grilling The Perfect Steak:

    Prepare the grill for direct cooking over hot charcoal or high heat.

    Place the meat on a well-oiled, hot grate and cook it to the desired doneness turning with tongs. Dont pierce the meat with a fork unnecessarily piercing allows flavorful juices to escape

    Allow the steak to rest away from the fire for five minutes before serving.

    For medium-rare, cook the steak for about four minutes per side for a 1-inch thick steak.

    Use tongs to turn the steak dont use a fork that will pierce the meat and let flavorful juices escape.

    Test for doneness by pressing the meat with your finger if its soft, its rare if it springs back, its medium-rare when pressed firmly, its well done.

    For a 2-inch steak, increase the time to six minutes per side. For a 1/2-inch steak, decrease the cooking time to three minutes per side.

    When checking for doneness, remember that the steak will continue to cook after it is removed from the grill.

    Let the steak rest for 5 minutes before serving so the juices have a chance to redistribute.

    For a charred crust, allow the steak to cook for an extra minute or two per side.

    How Long Does A Whole Chicken Take To Cook On A Charcoal Grill

    Grill the chicken breasts until they are cooked through. Close the cover and let the chicken to cook for 60 minutes without opening the lid during the process. After 60 minutes, remove the lid and check the doneness of the meat with an instant-read meat thermometer every 10 to 15 minutes until it is done. Grill-roasting a four-pound chicken will take around 90 minutes on a standard grill.

    How To Cook A Brisket On Charcoal Grill

    The first point to do is prepare your grill for cooking. Start by heating your coals until they are nice and hot. Then, set the brisket fat-side under the grill and cover it with the lid. Grill your brisket for around 1.5 hours per pound or until it touches an internal heat of 165 degrees F.

    And when you use charcoal smoker grills, you need to add coals to the side of the grill to maintain a constant temperature. You can go ahead and flip your brisket over onto a new piece of aluminum foil at 165 degrees F, so the fat side is up.

    Then return it to the grill, plus add your coals to the opposite side. Grill it for another 1-1.5 hours until the inside warmth touches 205 degrees F. Step to cook brisket on charcoal grill.

    Prepping the brisket before cooking

    Prepping your brisket before it goes on the grill is key to ensuring that it comes out with a nice smokey flavor. The first step is to season and marinate your beef brisket to add extra flavor and moisture during the grilling process. And you want:

    • 1 cup of water
    • 1/4 cup of Worcestershire sauce
    • A couple of tablespoons of liquid smoke
    • 2 cloves of garlic, minced
    • A tablespoon each of salt and pepper

    After youve mixed up your ingredients into a marinade, generously coat your beef brisket in it and then let it sit in the fridge for at least 4 hours, but preferably overnight.
