  • the chicken needs at least 20 minutes to marinate in the Sriracha and lime juice mixture, but if you have time to let it sit longer, do that. The longer it sits, the more flavorful and tender it will be.
  • Check the temp. Before pulling the chicken off of the grill, double check that the internal temperature is 165ºF.

    How To Make This Mexican Chopped Chicken Salad

    • To a medium bowl, add all the marinade ingredients. Add the chicken and toss well to completely coat. Cover the bowl and let the chicken marinate in the fridge for at least 30 minutes.
    • Grill the chicken: Heat a grill pan or an outside grill over medium-high heat. Add the chicken and cook for 5-6 minutes per side, or until golden brown and cooked through. Once the chicken is done grilling, allow it to sit for 5 minutes, then chop it.
    • Make the dressing: Meanwhile, in a small blender add all the dressing ingredients. Blend until smooth and creamy.
    • Assemble the salad: To a large salad bowl, add all the prepared veggies and top with the grilled chicken. Drizzle with the avocado dressing and garnish with chopped fresh cilantro.

    How To Dress The Southwest Grilled Chicken Salad

    This salad recipe doesnt have a dressing assigned to it. There is no one particular choice that necessarily beats out any other. The salad speaks for itself in terms of Southwestern flavor. While you wouldnt add Caesar to it, or probably Italian, you can certainly go with your gut and pick any dressing that works for you.

    The best choices for dressing are either a barbecue sauce, or ranch dressing, or some combination of the two. If you use barbecue sauce alone, I recommend a thinner sauce such as Memphis style.

    You could choose more vinegar forward North Carolina style sauce, or mustard imbued South Carolina sauce. Although Texas is the most obvious Southwestern choice, it is very thick and best used only as an added component to another dressing such as ranch.

    You can also use chipotle ranch or a creamy cilantro lime salad dressing which is almost too obvious to mention, but omitting the option here seemed just as silly. As an alternative to dressing, you can even serve this salad up with a side of some salsa and sour cream.

    Grilled Chicken Salad With Corn Black Beans And Guacamole

    While the chicken is amazing on its own, layering it over southwest inspired veggies turns it into a mouth-watering main dish salad!

    Making a southwestern-style salad with pantry frozen corn, black beans, and shredded cheese is just as easy as making the chicken, and can be done while the chicken is cooking, making this a 30-minute or less meal.

    How To Grill Chicken For Salad:

    • Preheat your grill. It needs to be over medium high heat .
    • Mix together the seasonings. Combine the chicken seasonings together in a small bowl. Brush the chicken breasts with olive oil and sprinkle the seasonings on each chicken breast.
    • Grill the chicken. Place the chicken directly on the grill grates and grill the chicken for 3 to 5 minutes on each side. You do not have to use a grill pan unless you want to. The chicken needs to reach an internal temperature of 165 degrees F.
    • Allow the chicken to rest. Move the chicken to a separate plate to rest for at least 5 minutes.

  • To begin making the Grilled Chicken Salad recipe, firstly wash and clean the chicken well.

  • To marinate, in a mixing bowl add the chicken breast with salt & pepper, parsley, lime juice, 2 teaspoon olive oil and garlic. Leave it aside for 1 hour.

  • Grill the chicken on a grilling pan on medium heat until well done on both sides. this will take about 10-12 minutes. Add the remaining olive oil while grilling the chicken and grill it until perfectly cooked.

  • Meanwhile, to make the vinaigrette in a mixing bowl combine – vinegar, olive oil, parsley, garlic, salt and chilli flakes. Set aside.

  • In a mixing bowl, add the lettuce, cucumber, capsicum, tomatoes, gouda cheese, almonds and toss it along with the vinaigrette.

  • Add in the grilled chicken pieces and cheese.

    Butter Lettuce I love the soft delicate taste and texture for this salad.

    Chicken Chicken breasts or thighs can be used.

    Balsamic Vinegar Sweeter than most vinegars. Its used in the marinade/vinaigrette. Balsamic vinegar pairs great with peaches.

    Maple Syrup Used to sweeten the marinade/vinaigrette. You can use honey as an alternative.

    Dijon Mustard Acts as an emulsifier for the vinaigrette and adds a tangy flavor.

    Olive Oil Another emulsifier in the vinaigrette. It will also help to tenderize the chicken as it marinates.

    Peaches Look for peaches that have smooth unblemished skin. They shouldnt have any green on them, but rather be golden yellow with a reddish blush color. If your peaches arent ripe, put them in a paper bag and let them ripen on the counter for 2-3 days.

    Persian Cucumbers Smaller and more narrow that regular cucumbers. Theyre extra crisp, have very few seeds and you dont need to peel them.

    Avocado Creamy, mild in flavor, and a good source of healthy fat.

    Basil Fresh basil pairs beautifully with peaches and balsamic vinaigrette.

    Feta Feta is crumbly and holds up well in this salad. I love the contrasting saltiness paired with the sweet peaches.

    The Rest Of This Grilled Chicken Salad Recipe

    • Lettuce: just use your favorite lettuce! I like to chop it up so it incorporates well with all of the other fruits and veggies.
    • Pineapple: grilled for a sweet and smoky flavor and insanely juicy texture. I use a pineapple corer to make the slices just the right size.
    • Tomato: I use halved grape tomatoes.
    • Red Onion: since red onion has a pretty strong flavor, I recommend chopping it up pretty small so you dont get way too much in each bite.
    • Avocado: chopped avocado adds delicious creaminess and provides another source of healthy fat.
    • Quick Lime Vinaigrette: were making a simple lime vinaigrette with olive oil, apple cider vinegar, lime juice, raw honey, and a sprinkle of sea salt.

    How To Meal Prep A Salad

    This salad is great to make for meal prep, with a few modifications. Meal prep this salad to have a separate container for the salad components and another for the chicken, that way the meat can be heated up on its own or eaten separately if desired.

    And of course, with most salads, youll want to keep dressing separate and add right before eating.

    Just be careful about what salad components you choose. Obviously, something like sliced avocado will not keep well, so dont use something that wont keep well if intending to make this for meal prep.

    Keeping all of this in mind, this salad will keep well for 3-5 in the refrigerator.

    This salad comes together quickly and easily with simple ingredients, many of which you probably already have on hand. I’m using boneless and skinless chicken thighs, which stay juicier than chicken breasts and cook very quickly.

Whisk together the oil with lemon juice, Dijon mustard, shallot, herbs and spices. Divide the mixture in half. Place the chicken in half the mixture, and save the other half as the dressing. Let the chicken sit in the marinade for at least one hour, then grill the chicken until its golden brown. Slice the chicken, then place it in a bowl with romaine lettuce, corn, red onion, tomatoes, bacon, avocado and blue cheese. Drizzle the remaining dressing over the top, then serve and enjoy.

    What Type Of Grill Should I Use

    You can use any type of grill you have for the grilled teriyaki chicken salad. I used a cast iron grill pan on my stove top. I didnt want to turn on my gas grill because its so hot.

    You can absolutely use your gas or charcoal grill and if you are making this recipe for more than two people its probably a good idea.

    Having the option to use the cast iron grill pan to make this grilled teriyaki chicken salad gives you flexibility when its raining or too hot.

    If you grill over a fire, be careful and watch for flair-ups. Theres sugar in the marinade that could burn.

    Chipotle Spice Rubbed Chicken Ingredients

    This chipotle spice rub has SO much flavor as both a chicken marinade and a spice mix for vegetables!

    You will have rub left over , which is great since it makes a wonderful spice for roasted or grilled potatoes and vegetables, too, adding just a bit of heat.

    You will need:

  • Mix all spice rub ingredients in a small bowl.
  • Use your hands to rub the spice mixture over all sides of the chicken pieces.
  • Grill immediately or let the chicken marinate in the dry rub 30 minutes to four hours ahead.
  • Grill Boneless Chicken: If using boneless chicken, youll only need to grill about 8-10 minutes on each side, or until the thickest part of the meat reads reads 165°F on a thermometer.
  • Grill Bone-In Chicken: Grill skin-side down over direct heat until skin is well marked and crispy, 5 to 8 minutes. Turn pieces over and move to indirect heat. Grill, covered, until a thermometer registers 165°F when inserted into thickest part of the chicken, 15-20 minutes for legs, 20 to 30 minutes for thighs and breasts , turning halfway through grilling.
  • Im constantly amazed how taking a few minutes to mix some spices together and rub them onto chicken 30 minutes to a few hours before grilling is all thats needed to create a restaurant-worthy dish.

    Its truly a flavor game-changer.

    PRO TIP: Grill more than you need and refrigerate the leftovers to make salads, wraps, sandwiches, and more. The smokey-grilled flavor just cant be beat!

    Grilled Chicken Thighs With Charred Corn And Summer Squash

    Simple Grilled Chicken Salad

    Here’s another weeknight dinner that’s made entirely on the grill. Boneless chicken thighs are one of our favorite cuts, they’re more economical than chicken breasts, and they’re more flavorful, too. But the essence of this recipe is versatility you could make it with chicken breasts, either pounded into paillards or left as cutlets if you prefer.

    After it’s grilled, the chicken is tossed with a minty lemon dressing. Next up, corn and zucchini on the grates. Then transfer the vegetables to a platter and top with the chickenthe sauce will dress everything.

  • Combine olive oil, salt, pepper, garlic powder, and oregano in a medium bowl. Place chicken breasts in a bowl and let marinate for at least 30 minutes.
  • Heat a grill to medium-high heat and brush with more olive oil. When ready, add chicken and cook about 5 minutes on each side, until internal temperature reaches 165°F. I always recommend using a meat thermometer and using my Chicken Temperature Chart!
  • Remove chicken to a cutting board and let rest while you prepare the rest of the salad.
  • In a large salad bowl or serving plate, add spinach and veggies.
  • Slice the chicken and toss with the salad.
  • Top with homemade Buttermilk Ranch Dressing, or your salad dressing of choice.
  • Serve and enjoy!
  • Why Roast The Corn

    You can simply add corn to the salad without roasting it, but roasting corn is easy and it enhances the overall quality of the salad. Roasted corn is sweeter and crunchier, plus you get some kernels with that fabulous char that brings even more complexity to this incredibly flavorful salad.

    If you really want to add to the complexity of the salad, you can squeeze some fresh lime juice and sprinkle on some chili powder as you toss the corn in the pan.
