Tips To Make The Best Crispy Grilled Chicken Wings

Make sure your grill is sitting around 300 degrees. Ive found this to be the best temperature as is renders the fat nicely without burning the wings. For my grill, I set all the knobs as low as they will go. If your grill is running hot, you can close the value to the gas source to get to the target temperature.

You will also need to pre-heat your grill for at least 15 minutes. This will allow the grates to heat up sufficiently to prevent the chicken skin from sticking. Speaking of grates, make sure to clean them as good as you can. I use a wood scraper like this. Whats nice about the wood scrapers is that they conform to your grates over time, making it a snap to clean. This particular one comes with a meat thermometer which leads me into my last point.

Last but certainly not least, make sure you cook the wings to an internal temperature of 200 degree Fahrenheit! GASP! Yes, I know that according to the FDA, chicken is cooked all the way through at 165. But cooked all the way through doesnt necessarily mean that the chicken is cooked as good as it can be! Wings, and dark meat in general, have a lot more connective tissue and fat in them as compared to the breasts. The connective tissue needs to be cooked to a higher temperature to break down, and since the wings have so much fat in them, they wont taste dried out. This also gives the skin plenty of time to turn crispy which is exactly what this is all about.

Crispy Grilled Chicken Wings Three Ways

These Crispy Grilled Chicken Wings are a summertime entertaining staple at our house. A recipe developed and perfected by my husband Mark, I am so excited to now share it with all of you.

I have to say, in the over 7 years that Tasty Yummies has existed, I cannot believe weve never had my husband Mark as a guest contributor here. While I do most of the cooking around here, the grilling duties land nearly exclusively on his shoulders and this man has truly mastered his craft.

These are a low and slow method, so they arent a quick throw them on the grill recipe, but this actually makes for a great recipe when entertaining. Our grill is front and center on our large deck, we all gather round with drinks and snacks while Mark tends to his duties. He likes having a job and I love relinquishing some of the cooking control. Dont rush these, the crispiness and lack of dryness is all thanks to the indirect method Mark developed.

What Beth Says: Mark takes his grilling very seriously and he is always tweaking and adjusting his methods, creating new ways to use old tricks. This grilled chicken wing recipe of his is by far the most popular. Based on the concept of his long-perfected beer can chicken these wings are now legendary and the reputation of these wings might just precede Mark, at this point.

Is It Better To Grill Frozen Chicken Wings

There are pros and cons when it comes to grilling the best wings. Frozen chicken wings have a particular set of challenges that cause some grill lovers to pass on this type of recipe.

First and most importantly, no one wants to consume raw chicken and risk contracting salmonella. When it comes to meat, this is not something to mess around with. Theres the misconception that grilling frozen chicken wings increases the risk of this. As long as you cook the wings thoroughly, this isnt a problem.

When you cook unthawed chicken wings, they will require extra time to achieve a complete cook. You want to make sure the internal temperature reaches 165 degrees F with an instant-read thermometer.

Then theres the fact that some are afraid this type of wings recipe will create rubbery, chewy wings because of the additional moisture. The unthawed chicken will rapidly dethaw on the grill, creating a different texture when cooked than raw chicken that has been dethawed first. Still, the chicken doesnt become too chewy or tough with this method if you follow the right steps.
