    I usually make Grilled Cheese Sandwiches with slices of Cheddar Cheese. I especially like American Cheddar, the orange cheese slices found in the USA. Here in Australia, we don’t dye our cheese orange, so all our cheddar is white. Maybe it’s nostalgia from my childhood, but I love the orange coloured cheddar cheese! Don’t get me started on my love of marble cheese. I’m lucky Costco has opened up, and I get a steady supply of orange cheese!

    You want to use an easy melting cheese, and it’s even tastier when mixing your cheese flavors together. Edam Cheese, Gouda, Swiss Cheese with Cheddar cheese. I’d avoid Blue Cheese and Cream Cheese!

    My father is obsessed with pickles and grilled cheese.

    My grandparents always used to joke that my father as a little boy was the pickiest eater. They could only visit restaurants that served crispy grilled cheese, hamburgers or pizza. To this day, one of my dads favourite lunches or last minute dinners is homemade Gruyere Grilled Cheese. He usually serves it with a bowl of tomato soup alongside a squirt of ketchup and pile of pickles.

    When I was growing up, every Sunday at lunch my family would enjoy homemade grilled cheese with a bowl of soup and plate topped with charcuterie, crunchy apple slices and an assortment of Dill Pickles, Bread & Butter Pickles and Spicy Cucumber Pickles.

    Over the years our family recipe has evolved. I think weve now perfected the perfect Gruyere Grilled Cheese recipe.

    01 – Spread each slice of bread with butter.

    02 – Place four slices in large skillet and cook over medium heat until turning light golden .

    03 – Sprinkle the slices with Parmesan Cheese and flip over.

    04 – Sprinkle toasted sides of bread with half quantity of cheddar and cook until it melts and turning brown.

    05 – Once the Cheddar is melted, turn 2 of the slices onto the other two and press together to sandwich.

No matter how you decide to serve these sandwiches, adding more cheese on the outside of the bread just made sense !

    Besides all the cheese, the bread is an important part of a grilled cheese sandwich. There is no need to stick with the processed white bread with all the options out there. I went with a loaf of sourdough bread, cut into hearty slices and buttered on both sides.

    • Once you have your bread sliced and buttered, add a piece of the bread to a pan over low heat.
    • Top the slice of bread with about 1/2 cup of both the cheddar and white cheddar cheeses.
    • Place the second slice of buttered bread on top and cook each side for about 3 minutes. A key to a perfectly grilled cheese is weight, or chefs press. This is the tool that makes smash burgers so good and helps sear a piece of meat more evenly. You dont have to have the actual tool to use as the weight. Just grab a small pan and use the bottom of it! The whole point is to help the sandwich cook at an even rate and get as close to the heat as possible.
    • Next, remove the sandwich from the pan and add a 1/8 cup of each type of cheese to the pan.
    • Place the grilled cheese back into the pan, on top of the cheese. Slowly remove it from the pan, add another 1/8 cup of each kind of shredded cheese and repeat with the other side. You will have a crispy cheese crust.
