For the most tender ribs, we remove the thin membrane covering the rack. It can be a bit tough when cooked, and since we love ribs that fall of the bone, the membrane has to go. You might find that the butcher has already removed this, but just in case, heres how to do it yourself.

To remove it, gently slide a knife under the membrane, and then use your fingers to pull the membrane away from the bones. If it is slippery or difficult to remove, use a kitchen towel to take hold of it and pull.

As I mentioned above, you may find that the butcher or shop you bought your ribs from has already removed the membrane. Less work for you!

Also, keep in mind that removing the membrane is optional, some people prefer ribs with the membrane left intact. For ribs with some bite or chewiness, leave the membrane alone. Its all up to you!

How Do You Make Ribs More Tender

For example, ribs cooked for four hours at 225 degrees Fahrenheit will be more tender and juicy than those cooked for two hours at 300 degrees Fahrenheit. This is a matter of personal preference but if you want super- tender, juicy ribs, you might consider lowering the temperature and cooking them for a longer time.

    What Is The Easiest Method To Cook Ribs

    Ribs cooked in a pellet smoker are the easiest method, in my opinion. The pellet smoker I use is a Pit Boss Classic and it does the job just fine. I love how there is no messing with water pans or wood chips. You just fill up the hopper with your choice of pellets, set the temperature, and start smoking.

    I have seen a lot of complicated methods for smoking ribs but none of that stuff is necessary for everyday cooking. Simply pre-heat your pellet smoker to 225F, rub your ribs with seasoning or your favorite rib rub, place the rack in the smoker and let them cook until they pass the bend test. Of course, I will go into more detail below.

    Youve probably heard this before, but ribs should not fall off the bone.

    When perfectly grilled, they should be tender and moist. You should be able to cleanly bite the meat, or pull it from the bone with your fingers, but the meat should not just fall off. When you take a bite, some meat should stay on the bone.

    Ribs that fall off the bone are an indication that theyve been boiled and steamed, or way overcooked, leaving them with a mushy, flavorless texture.

    Here are more pointers to make the best ribs:

    • Buy Baby Backs For the novice chef, try baby backs first. They are fast and easy to cook, tender and well-marbled.
    • Remove the Membrane The membrane is tough and prevents smoke and rubs from seasoning your meat.
    • Maintain consistent temperature Temperature is very important and worth mentioning again. For smoking, stabilize the temperature between 225 °F to 250 °F and for finishing, browning and sealing in the sauce glaze increase it between 325 °F to 350 °F
    • Add time for sauce Allow at least 30 minutes near the end of your cooking time. Start by brushing on the barbecue sauce then closing the lid to let the sauce dry. Re-apply every 5 to 8 minutes until you build up that beautiful shiny glaze that is the signature of a perfect rib.

    You cant hurry ribs no matter how hungry you are. Only the ribs can tell you when theyre done. Be patient and use one of the methods weve shared above. Theyll be worth the wait.

To oven- steam ribs, place ribs in a large baking pan, fill with about 1 inch of water, cover with aluminum foil and bake for about 50 minutes in a 350-degree oven.

    How To Grill Pork Ribs

    Before grilling pork ribs, it’s important to prep them before hand to get the most robust flavor that’ll have your family and friends wanting more. I described this in the section above but I’ll reiterate here.

    First, wash the slab of pork spare ribs under cold water then pat dry with paper towels. If you’re into removing the membrane from the backside, take a paring knife to lift the membrane from one edge of the backside and gently pull it back and discard. You may want to use a paper towel to grip the membrane more easily. Although some people take a few extra minutes to remove the membrane, I do not find it necessary. At this point, use a knife to remove any excess fat and discard.

    Season both sides of the slab of ribs with kosher salt and a generous amount of dry rub then gently press the seasoning with your hands into the ribs. Place the slab of ribs onto a roasting pan or baking sheet and cover with plastic wrap and allow the ribs to marinate for at least 1 hour up to 24 hours in the fridge. Remove the ribs from the fridge and allow them to come to room temperature.

    Preheat your charcoal grill then position the slab of ribs onto the grill grates and close the lid. After 30 minutes, turn the slab of ribs over to grill the other side for 30 to 45 minutes. By this time, the ribs should be a beautiful brown color and no longer pink.

    How To Tell If Ribs Are Ready To Eat

    The USDA recommends that pork and beef both be cooked to an internal temperature of 145°F to be considered done. Many professional chefs cook beef steak cuts to only 128°F or so before they are served.

    Its important to note here the difference between safe to eat and finished.

    Since ribs are tougher cuts of meat, they should be cooked longer and until they reach a higher internal temperature so that the connective tissues and fats have ample time to break down and render.

    Ribs are generally cooked until an internal temperature of 190°F to 205°F. Aaron Franklin, a BBQ idol of mine, recommends that you cook to an internal temperature of 203°F.

    The best way to tell if ribs are ready is to measure internal temperature of your meat with a probe meat thermometer. When measuring, make sure that the probe measures a thick section in the center of the slab. The bones are sure to be piping hot and will throw off your temperature reading if the probe gets too close.

    It will need 5-6 hours to cook the ribs inside the pellet grills. You will need to cook the ribs at 225 degrees F for 2-3 hours to get it tender. After that, you will need to remove it from the grill and cover it with the foil by putting some flavored juices and butter to make it tastier and juicier. And, then you will need to keep in the pellet and cook it for another 2-3 hours.

    You can check-in whether the ribs are cooked or not. Sometimes it may need 2 hours, or sometimes it may need 3 hours depending upon the size of the ribs that you are going to cook inside the Traeger grills. So, you will need 5-6 hours to cook the ribs at 225 degrees in Traeger grills.

    Should Ribs Be Wrapped In Foil When Grilling

    Wrapping the meat in foil will limit the amount of smoke on the surface of the meat thus yielding a better color and flavor on the final product. It also adds moisture and speeds up cooking time. Wrapping should be done about half way through the cooking process or when internal meat temp is 150-160 degrees.

    Ideally, you will smoke or slow roast your ribs using the 3-2-1 technique. This is the easiest rib technique to master and provides fairly consistent results. Prepare and season the ribs with your favorite rub. Preheat your smoker, charcoal grill, or gas grill to 225°F – the ideal temperature for cooking ribs. Smoke/slow cook for 3 hours using indirect heat. Wrap the ribs in foil with some liquid and continue cooking for 2 hours. Unwrap the ribs and cook one more hour, at which point you can sauce and sear, or add another 30 to 60 minutes to slow-cook the sauce on.

    Trust us: You want to add the spice rub. Like making the marinade, its simple to prep, just tossing some ingredients together in a bowl. Here, we use the remaining ½ cup sugar, plus salt and seasonings.

    Take the ribs out of the fridge. Drain and discard the marinade from the 13×9. Pat the ribs dry . Rub the spice mixture over all sides of the ribs, patting with your fingertips to encourage it to adhere.
