Instead of dropping a pat of butter into a hot skillet, butter the bread for more flavor and even browning. Generously spread one side of each bread slice with softened salted butter. Or, instead of butter, spread one side of each bread slice with mayonnaise. It will give your sandwich a slight tang and help it brown beautifully.

What Cheese Is Best For Grilled Cheese

This is part personal preference and part general guidance. From a personal preference perspective, you may prefer provolone or Swiss cheese to Gruyère, for example. If thats the case, by all means switch them out. If you like things a little more spicy you might switch one of the cheeses for some pepper jack again thats personal preference. The cheeses used here are simply my favorites, and they play nicely together.

For a general guideline I would tell you to choose cheeses with high moisture content, like the ones I use. Other cheeses like blue cheese or Monterey jack are also terrific. That said, I dont recommend the harder cheeses with lower moisture content. Those cheeses dont melt as well, so keep those for your charcuterie board.

Finally, as much as I like extra sharp cheddar, I find it gets too oily when melted so I stick with mild cheddar.

    Bread For Grilled Cheese Sandwiches

How to Make the Perfect Grilled Cheese

Have you ever gone to the store thinking, I need to get bread specifically for making grilled cheese sandwiches? I sure havent! Grilled cheese sandwiches happen in my house not because of meal planning, but lack of it. Thats whats so great about them!

Sliced sandwich bread is classic. Crusty artisanal bread is great, too. Bread that has a very open, lacy interior lets too much cheese ooze through, and bread thats exceptionally dense makes for a leaden sandwich. Bread thats neither dense nor airy is what you want.

    Try these:

    • Brioche loaves

Now, that we have the type of bread figured out, lets talk about the best slice for the job. The thicker the bread slices, the longer it will take for the cheese to melt. And the bread will wind up detracting from the cheese, which is not the point!

Bread sliced over half an inch thick will impede optimal cheese melting. For perfect grilled cheese every time opt for slices between 1/4-inch and 1/2-inch thick.

Have I made grilled cheese on hot dog buns before? Yes. Are they ideal? No, far from it. But you get the picture. Sometimes a sandwich isnt a work of art. Its just food. Do what works for you!

How Much Cheese Should I Use

I know its tempting, but try to stuff in too much cheese, and it will melt out over the sides and become a mess! I suggest using between 1/4-1/3 cup cheese per sandwich. It can handle slightly more, but I wouldnt recommend over 2/3 cup grated cheese per sandwich. If youre using slices, Id use two slices stacked on top of one another.

    Heres What Youll Need:

    • 8 slices sourdough bread
    • Brie
    • Manchego

The sharp cheddar is a staple in many sandwiches in this lineup, it helps provide a bit of tanginess. To balance the cheddar, Josh recommends Monterey jack. Its mellow flavor is a lot like mozzarella, plus it gives the sandwich that much-desired stringy, cheese-pull effect many of us look forward to when eating a grilled cheese sandwich, Josh says. Brie will also give some great gooey meltiness, too. Round out your cheese blend with gruyere, which is a bit nutty in flavor, and manchego which provides saltiness and gives you those crispy cheese bits on the outer edge of the sandwich.

While the cheese is the star of the show, you cant forget the supporting cast. For this grilled cheese, Josh recommends grabbing a loaf of sourdough. A good crusty bread like this will stand up to all the gooeyness going on inside the sandwich, plus it pairs well with the creamy cheese. And the robust flavor of this bread is a good choice, according to Josh: It wont get lost when paired with the cheeses. If you prefer a softer bread for your grilled cheese, you can always use challah or brioche for a more grown-up take.

    Old way: Plain butter
Our way: Way more than just butter

The addition of mayonnaise might seem odd here, but it will really help give your grilled cheese that crisp exterior and give you exceptional browning. And that tiny bit of manchego will help give you some crispy cheese flavor on the outside.

The first big tip? I dont recommend Velveeta. Those sandwiches of my childhood stood out in my memory as the ne plus ultra of grilled cheeses, until I replicated one as an adult and found it impossibly insipid.

Oooozy melted cheese is our goal. Hard cheeses like parmesan dont get very oozy when they melt, and soft cheeses like ricotta are too high in moisture. What cheeses work best? Melting cheeses, of course. Such as:

    • Swiss
    • Havarti
    • Fontina

A cheese thats too flavor-packed can overwhelm the sandwich. My cheesemaker friend, who has weekly Grilled Cheese Thursdays at her creamerys tasting room, handles this by blending a few cheeses together for grilled cheese: about 30 percent something exceptional and expensive to 70 percent workaday .

Real talk: I make utterly satisfactory grilled cheese sandwiches with mass-market orange cheddar. Ultimately, if you are hungry, the cheese you happen to have in the fridge is plenty good enough.
