For this lamb recipe, we recommend using lamb shoulder chops because they are so much meatier. You can purchase you chops in the grocery store already cut. We recommend purchasing a lamb rib roast. You will save money by cutting them into individual chops. Just use a very sharp knife. We believe this is the best way to get the freshest lamb chops possible. Pro Tip: Purchase a lamb roast with meaty, round ends and straight bones.

If you prefer your lamb chops cooked until they are medium-rare, you will need to grill them for three to four minutes on each side. The internal temperature needs to reach 135 degrees Fahrenheit. For juicier meat, let your chops sit for about ten minutes before you serve them.

    Today I’d like to share with you my fail-safe method for tender flavorful chops!

    How To Trim Excess Fat From A Rack Of Lamb:

    Even if your rack has been frenched, youll still want to trim off some of the excess fat cap before grilling the rack of lamb. Thats because it takes a while for the fat to render , but the meat itself cooks fairly quickly.

  • Rest your rack of lamb, fat side up on a cutting board.
  • Use a very sharp knife and cut a 1 to 2 tab of fat horizontal to the roast along the top of the fat cap.
  • Hold the tab of fat, stretched above the rack of lamb and use your knife to make shallow slices a centimeter or so above where the fat connects to the meat. Keep making shallow cuts, pulling back the fat cap as you go.
  • I recommend leaving about 1/8 to no more than 1/4 of fat on the rack. A little fat adds flavor.
  • Pro-Tip: Its easier to trim the fat from the lamb if its chilled first.

    When the meat is trimmed of excess fat, its time for the rosemary garlic and herb marinade.

    Just like when grilling steak, an important tip for delicious and juicy lamb is not to immediately carve it and serve as soon as it comes off the grill. As touched on above, after removing it from the grill, cover it with aluminum foil and let it rest for roughly 5 minutes.

    This not only allows for the carryover cooking to bring the internal temperature to the desired point, but it also allows the juices to redistribute throughout the meat. This results in a perfectly flavored, tender, and juicy result.

    Quick Cooking Tips For Lamb Chops

    When you are grilling lamb chops, make sure you keep an eye on them. Heres why:

  • Lamb chops invite grill flare ups! I like the taste of the grill, but the smoke from a grease flare-up really doesnt taste great on the lamb. I keep a bottle of water with a squirt top next to the grill to tame the flame.
  • Depending on the thickness, different chops are going to finish cooking faster than others. Move the cooked chops to a cool area on the grill or to the warming rack so they dont overcook.
  • Speaking of overcooking, lamb tends to go from perfect to overcooked in no-time-flat. When the lamb is medium rare, take it off the grill. It will continue to cook while it restsresulting in perfectly pink lamb chops.

  • Stuff the lower half of a chimney starter with crumpled newspaper and set it on the bottom rack of your charcoal grill.
  • Fill the top portion of the starter with charcoal briquets.
  • Light the newspaper with a match or fire-starter and let the briquets start to slowly burn.
  • When the charcoal is covered in ash and glowing red, turn it out onto the grate into a low mound.
  • Set the top rack on the grill and cover with the lid .
  • When the heat reaches a medium high temperature* and the charcoal has stopped smoking, its time to grill.
  • Place the lamb, fat side down on the grates. Leave the lamb alone for about five to six minutes to create a good sear .

    How To Marinate Rack Of Lamb

  • Finely chop the garlic, rosemary, oregano and mint and transfer to a small bowl.
  • Zest the lemon and add to the herb mixture.
  • Add the kosher salt, black pepper and olive oil and stir to form a thick paste.
  • Coat the rack of lamb with the marinade and rub it into the meat.
  • Cover with plastic wrap and refrigerate 8 hours or overnight. The longer it marinates, the more the flavors will infuse the meat and the better it tastes.
  • Before cooking, remove the lamb from the refrigerator and let it rest on the counter for half an hour before transferring it to the grill.
