Preparing Your Grilled Lamb Shoulder Chops
For this lamb recipe, we recommend using lamb shoulder chops because they are so much meatier. You can purchase you chops in the grocery store already cut. We recommend purchasing a lamb rib roast. You will save money by cutting them into individual chops. Just use a very sharp knife. We believe this is the best way to get the freshest lamb chops possible. Pro Tip: Purchase a lamb roast with meaty, round ends and straight bones.
If you prefer your lamb chops cooked until they are medium-rare, you will need to grill them for three to four minutes on each side. The internal temperature needs to reach 135 degrees Fahrenheit. For juicier meat, let your chops sit for about ten minutes before you serve them.
The flavor of lamb chops is delicious all by themselves. You will not need to use a lot of seasoning. You can use a lamb marinade for BBQ or just a little pepper, salt and olive oil. We recommend adding some rosemary and garlic as well because they will enhance the flavor of your lamb chops. Pro Tip: Add some fresh oregano or thyme to really bring out the flavor of your lamb chops. You will need:
- Eight lamb chops
- Two tablespoons chopped fresh rosemary
- Black pepper
- One teaspoon kosher salt
- Three tablespoons olive oil
- Three cloves garlic

Wine Pairing With Lamb Chops
My suggestion for the perfect pairing is simple: find some whole grain Dijon and a big red wine bursting with fruit and tannins.
Dijon Mustard: Youll find that dijon mustard is the perfect sauce to dip these grilled lamb chops into time and again. The spice and vinegar enhance the flavors of the lamb so nicely. Its absolutely fantastic. If you are making lamb with mint and lemon, I would probably not use the dijon mustard side. Maybe a lemon yogurt sauce might go well with that pairing.
Red Wine: Im a fan of big, bold reds with lamb. Some people in my family would say that an well balanced Italian red might work better. Heres the thing grilled lamb chops have lots of flavor. Lets meet it head on with big fruit and nice tannins. Youre going to need those tannins to cut through the fat to keep coming back for more.

Even if your rack has been frenched, youll still want to trim off some of the excess fat cap before grilling the rack of lamb. Thats because it takes a while for the fat to render , but the meat itself cooks fairly quickly.
Pro-Tip: Its easier to trim the fat from the lamb if its chilled first.
When the meat is trimmed of excess fat, its time for the rosemary garlic and herb marinade.

What Temperature Should Lamb Chops Be Cooked To
Lamb chops range in thickness from ½ to 1-inch in size, depending on the butcher. The tender meat needs brief high heat cooking like a steak, and its best to eat at medium-rare to medium temperatures.
Target 125°F for medium-rare, or 135°F for medium. Ensure to rest the meat for at least 10 minutes to allow for carryover cooking and hitting just the right doneness temperature. Overcooked or well-done lamb will be dry and stringy.

Dont Be In A Hurry To Carve It
Just like when grilling steak, an important tip for delicious and juicy lamb is not to immediately carve it and serve as soon as it comes off the grill. As touched on above, after removing it from the grill, cover it with aluminum foil and let it rest for roughly 5 minutes.
This not only allows for the carryover cooking to bring the internal temperature to the desired point, but it also allows the juices to redistribute throughout the meat. This results in a perfectly flavored, tender, and juicy result.
*Bonus tip: Always make sure to cut lamb against the grain.

Can I Grill Rack Of Lamb On A Gas Or Charcoal Grill
Yes! You can use either your charcoal grill or gas grill for this recipe. (We typically use our Weber Genesis gas grill because its easy to regulate the heat and because rack of lamb cooks so quickly, its just less time consuming than building a fire and waiting for the charcoal to cook down to embers, but its up to you.

Coat The Meat With Oil Before It Hits The Grill
Lamb has a tendency to stick to a hot grill more than other meats. So, it is important to make sure the meat has a good coating of oil before it goes on the grill. This can either be done by brushing it shortly before cooking it or marinating it overnight.
Lamb does well with marinades that are oil and lemon-based and this provides an opportunity to work in some of those spices and aromatics.
It also helps to use a paper towel dipped in oil and coat the grill grates before the meat goes on also.

What Are Lamb Chops
Lamb chops are typically bone-in meat chops cut from the shoulder, loin, sirloin, or animal rib. These are all loaded with flavour, tender, and cook very quickly, typically under 10 minutes depending on thickness. They are also much more affordable than a rack of lamb and simpler to prepare if you are looking for a more casual meal.
In this sense, the loin chop will have a T shaped bone for an attractive appearance. Sirloin chops are very meaty and cut from the leg with a round bone in the meat.

Middle Eastern Lamb Loin Chops
For me, lamb and Middle Eastern spices go hand in hand. For these lamb chops, I used zaatar. If you are on the facebook page, you might remember a show and tell video of my trip to Kalustyans. It is my favorite place to buy spices in NYC.
Grilled Lamb T Bones
It is to food people as a toy store is to kids. There are many different varieties of zaatar out there. Everyone makes it a little differently, but the basics of this spice blend are this: sesame seeds, thyme, oregano, sumac, coriander and salt.
Sumac is slightly bitter and lemony, like a lemon. Although zaatar might not be familiar to you, most of its ingredients probably are.
