How To Make Ribs on a Charcoal Grill Easy

A gas grill is hot and suitable for fast cooking, not so much when it comes to low heat grilling. But, you can do it by making a 2-zone fire by turning off half the burners.

Once you are sure the temperature is steady at 225°F , the cooking times should be the same as the charcoal grill, about 6 hours.

Be sure to rotate the meat and wrap it in foil using the same time guideline as above.

How Long To Grill Ribs On A Charcoal Grill

Cooking time depends on grill temperature. The idea is to keep the grill at a consistent temperature of around 225°F .

Low and slow is the name of the game and why you need to give yourself plenty of prep time.

At 225°F , its going to take at least 5 hours, possibly just over 6 to cook them.

Although we want the internal temperature of ribs to be 190°F minimum, it doesnt mean theyre ready. It takes time to break down the connective tissues that make them tender, and sometimes we need to take them and slowly up to as high as 205°F

The basic timeline looks like this:

  • 3 hours of smoking unwrapped
  • 2 hours of cooking wrapped in foil
  • 1 hour of cooking unwrapped at a higher temperature to finish

Your ribs may take more or less time depending on your grill. Remember to occasionally rotate them, check fire, smoking wood & water every 30 minutes.

Test for doneness, not time or temp, and you should be ready to serve perfect ribs. Ill talk about doneness in a moment.

Which Ribs Are More Flavorful

As we discussed earlier, baby back ribs are smaller than spare ribs. But the ribs that come from the sternum part are more flavorful than the ribs that come from the rib cage. As we know, baby back ribs are easy to cook. So, you have to season these ribs before cooking. Secondly, you can also add the flavor of your taste to get tasty ribs for you.

Quick And Easy Grilled St Louis Ribs

Pin on Grilled ribs charcoal

An easy way to grill St Louis ribs without cooking them all day, they cook in about 50 minutes on the gas grill. These ribs are made with a simple dry rub along with lime juice and fresh garlic. They are very juicy and tender!

Want some amazing grilled ribs without marinating for hours or cooking half of the day? I know that around an hour isn’t as quick as some would think, but it is compared to a 4 hour cook time! These ribs are so easy and use a simple dry rub with some fresh lime juice.

Can I tell you a secret? I have never slow cooked ribs before, ever. I have had them cooked that way and personally do not enjoy them slow cooked. From my experience eating them, St Louis ribs seem to dry out a bit when you cook them for hours. I know it is a thing that many people insist on and we all like what we like, but we prefer ribs to be juicy and tender!

We do not use a marinade either. Marinating isn’t something we do much here for any meats. Why is that? Well mainly because salt and vinegar can actually pull the moisture out of meats. A dry rub works great for just about any meat even grilled NY strip steaks and grilled pork chops!

This recipe is for St Louis style ribs cooked on a gas grill.

Video #4 Smoking Ribs Using A Slow N Sear

The Slow N Sear is a fun accessory that is essentially a massively oversized charcoal basket with a built in water reservoir. Some folks claim that the steam produced by the water reservoir helps adds moisture to the meat. Im not sure of how accurate that claim is but I can attest that it is easy to maintain Low and Slow for at least eight hours on a single load of charcoal.

How To Wrap Ribs

Another hour later, check on the ribs. We want them to curve slightly without breaking. If theyre yet to reach this point, allow them to cook for a little longer. However, if they are bending nicely then double wrap the ribs in aluminum foil. We do this to help increase the internal temperature of the meat while also holding in moisture, making them extra juicy.

Place the wrapped ribs back on the grill. Check on the coals and water again. Dont add more wood chunks this time as the ribs will have absorbed enough smoke.

Should Ribs Fall Off The Bone

For the love of God, NO! Rib meat should not fall off the bone. Fall off the bone ribs are simply overcooked ribs. This phrase was invented by crappy restaurants who’s ribs fall apart during the exceptionally long holding period before they are served. Any pitmaster worth his salt aims for the meat to be like an exceptionally tender steak.

The meat should gently come clean from the bones when pulled, but NEVER should fall off the bone on its own. Rib meat falling off the bone will be mushy, featuring an egregious lack of texture.

Should Ribs Be Wrapped In Foil When Grilling

Wrapping the meat in foil will limit the amount of smoke on the surface of the meat thus yielding a better color and flavor on the final product. It also adds moisture and speeds up cooking time. Wrapping should be done about half way through the cooking process or when internal meat temp is 150-160 degrees.

How To Make Bbq Ribs

If you want to grill BBQ Ribs, and who doesn’t? You simply need a BBQ dry rub for ribs and/or your favorite homemade BBQ sauce. I prefer to use both, but you can use either based on your personal preference.

Dust the ribs liberally with the dry rub prior to grilling, this can even be done the day prior if desired. The BBQ sauce will be applied to the ribs during the final hour of cooking. The heat from the grill will transform the BBQ sauce into a delectable sticky jam clinging to the meat! You can even make great BBQ ribs in the oven when it isn’t grilling season!

Tips To Remember About Your Ribs

Youve probably heard this before, but ribs should not fall off the bone.

When perfectly grilled, they should be tender and moist. You should be able to cleanly bite the meat, or pull it from the bone with your fingers, but the meat should not just fall off. When you take a bite, some meat should stay on the bone.

Ribs that fall off the bone are an indication that theyve been boiled and steamed, or way overcooked, leaving them with a mushy, flavorless texture.

Here are more pointers to make the best ribs:

  • Buy Baby Backs For the novice chef, try baby backs first. They are fast and easy to cook, tender and well-marbled.
  • Remove the Membrane The membrane is tough and prevents smoke and rubs from seasoning your meat.
  • Maintain consistent temperature Temperature is very important and worth mentioning again. For smoking, stabilize the temperature between 225°F to 250°F and for finishing, browning and sealing in the sauce glaze increase it between 325°F to 350°F
  • Add time for sauce Allow at least 30 minutes near the end of your cooking time. Start by brushing on the barbecue sauce then closing the lid to let the sauce dry. Re-apply every 5 to 8 minutes until you build up that beautiful shiny glaze that is the signature of a perfect rib.

You cant hurry ribs no matter how hungry you are. Only the ribs can tell you when theyre done. Be patient and use one of the methods weve shared above. Theyll be worth the wait.

Happy grilling!
