How To Make Ribs on a Charcoal Grill Easy

A gas grill is hot and suitable for fast cooking, not so much when it comes to low heat grilling. But, you can do it by making a 2-zone fire by turning off half the burners.

Once you are sure the temperature is steady at 225°F , the cooking times should be the same as the charcoal grill, about 6 hours.

Be sure to rotate the meat and wrap it in foil using the same time guideline as above.

How Long To Grill Ribs On A Charcoal Grill

Cooking time depends on grill temperature. The idea is to keep the grill at a consistent temperature of around 225°F .

Low and slow is the name of the game and why you need to give yourself plenty of prep time.

At 225°F , its going to take at least 5 hours, possibly just over 6 to cook them.

Although we want the internal temperature of ribs to be 190°F minimum, it doesnt mean theyre ready. It takes time to break down the connective tissues that make them tender, and sometimes we need to take them and slowly up to as high as 205°F

The basic timeline looks like this:

  • 3 hours of smoking unwrapped
  • 2 hours of cooking wrapped in foil
  • 1 hour of cooking unwrapped at a higher temperature to finish

Your ribs may take more or less time depending on your grill. Remember to occasionally rotate them, check fire, smoking wood & water every 30 minutes.

Test for doneness, not time or temp, and you should be ready to serve perfect ribs. Ill talk about doneness in a moment.

Which Ribs Are More Flavorful

As we discussed earlier, baby back ribs are smaller than spare ribs. But the ribs that come from the sternum part are more flavorful than the ribs that come from the rib cage. Now that our grill is ready, its time to get this rib cook-off going! Place the racks on the grate of the grill, ensuring that theyre placed on the half of the grate without charcoal underneath it, next to the water pan. Place them with the rib side of the rack facing down.

First thing is to pull the rack of St Louis style ribs out of the fridge, remove it from the packaging and place it on a surface like a large cutting board. I recommend keeping the fat on it to help keep the meat tender.

If you are removing the membrane, do it before putting the seasonings on it.

Once you place it on the surface, rub the juice from the lime over both top and bottom of the ribs. Next rub the minced garlic and dry rub all over the ribs – top and bottom. Let them sit for about 15 minutes

Gas grills vary, but you want it to be around 350-375 degrees and cook on direct heat for a slight crispy outside or indirect heat for an all around tender rack of ribs. Once your grill is heated and ready, place the ribs on the grill bone side down. Let them cook without lifting the lid for 35 minutes.

After 35 minutes, flip over and cook another 15 minutes. Grilled ribs need to be cooked to at least 145 to be a safe temperature. Let them to sit for 5-10 minutes before cutting and serving.
