If youre worried about drying out your shrimp on the grill, we recommend marinating your shrimp and then grilling them with their shells. We also suggest grilling your shrimp at a more modest temperature of 350 degrees Fahrenheit for 2 to 3 minutes per side rather than flash-grilling over higher heat. When you flash-grill shrimp over high heat, more liquid evaporates which could cause dry shrimp.
How Long Do You Grill Shrimp On Skewers
Shrimp cook very quickly, so its imperative to watch your shrimp to make sure they dont overcook. Shrimp typically take about 2-3 minutes per side on the grill. Youll be able to tell when the shrimp are done because theyll turn pink and opaque.
You can use an outdoor grill, grill pan, or broiler to make these shrimp skewers. I typically use my outdoor grill, but when the weather isnt nice or I dont feel like firing up the grill, I cook the shrimp on the stove top in my favorite grill pan.
I use the largest shrimp I can find for this recipe. Shrimp are labeled based on their size count, or the number of shrimp you get per pound. These shrimp are the jumbo size shrimp, which are 16-20 per pound. You can go smaller if need be and the recipe will still be delicious.
Whenever I post shrimp recipes, I always get asked if the shrimp tails should be left on or removed. I typically keep the tails on when Im looking for a nicer presentation. Its really a matter of personal preference whether you leave the tails on or remove them before grilling.

How Do I Know When My Shrimp Is Done
Raw shrimp starts off translucent gray and as it cooks, it turns pink and opaque with some pink and bright red accents. Look at the crevice in the back of the shrimp where the vein was removed. When the base of this crevice becomes opaque, the shrimp is done.
If your shrimp isnt charred but is still opaque, it is done dont be tempted to grill it a second longer! To achieve more charred shrimp next time, heat your gill to high heat then turn the heat down to medium-high once you add the shrimp skewers.
You can also grill our shrimp on an indoor grill pan. Take are care to grease the pan and heat to medium-high heat. Follow the same instructions, grilling 2-3 per side, just until opaque.

Pack Shrimp Tightly On Skewers Before Grilling
An individual shrimp sitting on a grill grate faces two serious dangers: it will probably fall through the grate, and if it doesnt it has a very high probability of overcooking. After all, its just one tiny shrimp sitting there, surrounded by flame. To overcome both these hurdles, we need to think about how we situate our shrimp, and it turns out we should do it like sardines.

- Make sure you preheat the grill and clean it before placing the shrimp on. I usually lightly grease the grates so that none of my shrimp is left on the grill.
- Shrimp are done once the entire body turns an orangy-pink. This should take around 5 minutes. I usually flip them at about 2 ½ minutes.

To get a fast, hard sear on your shrimp, youll need a hot, hot grill. If youre using a charcoal grill, pile up a full chimney of hot coals under one half of the grill and cook over those coals. If youre cooking with gas, turn your burners to full and let the grill heat up for at least 15 minutes before you cook .
Brush your shrimp with oil and garlic, and toss the double skewers onto the direct heat. Let them stay on that first side for a solid 22 ½ minutes, then flip. As each skewer reaches temp, pull it from heat and set it aside on a clean platter.
