If youre like me, you grew up eating dry, over cooked pork chops. Even today, its not uncommon for consumers to insist on cooking chops well past the point of well done out of a fear of contracting trichinosis. The truth is, however, that trichinosis in pork has declined dramatically over the past several decades and that chops cooked to an internal temperature of 145 degrees are not only safe, they are much more moist than ones cooked well done.

Brines and Marinades*

An overnight soak in a brine or oil-based marinade is an excellent way to not only add moisture to pork chops, but to also amp up the flavor. To create a simple brine, combine 1/8 cup salt, 1/8 cup brown sugar, 2 cups water and fresh herbs and garlic then mix well until the salt and sugar have completely dissolved.   • Choose thick chops for the most tender meat.
  • Pierce pork chops with afork all over to allow the marinade to penetrate into the meat.
  • Always marinate your pork chops in the refrigerator, but bring them to room temperature about 15-20 minutes before cooking to promote even cooking and get tender meat.
  • Dont overcook the pork chops! Remove them from the heat as soon as the internal temperature reaches 140°F , as the temperature will rise a few degrees afterward.
  • Flip the chops using kitchen tongs instead of a fork, as puncturing them will cause juices to leak and the meat to dry out.

How Can I Tell When Pork Chops Are Done

Pork chops should be cooked to an internal temperature of 145°F according to the USDA. The best way to measure this is by inserting an instant-read thermometer into the thickest part of the chop. If youre cooking bone-in chops, make sure the thermometer does not touch the bone for an accurate reading. Remove the chops from the grill when the thermometer reads 140°F / 60°C, as the temperature will climb several degrees more afterward. Then let it rest covered with foil for 5 minutes.

Pork is done when an internal thermometer reads 145 degrees F.Depending on how thick the chops are, you might need to subtract or add a few minutes from the suggested cook times in our recipe below. If you look closely, the pork chop in the back of the pan is thicker than the one in the front.

When we were cooking them, we removed the thinner chop first since it reached 145 degrees a few minutes before the thicker chop. So if your chops arent all the same thickness or size, its best to check the temperature of each chop and remove them as they finish cooking.

How Long To Grill Bone

Grill time for bone-in pork chops will vary depending on thickness, so its better to asses by temperature than time. When testing this recipe, I used thick cut pork chops that were about 1 1/2 inches thick, and it took about 15 minutes over the indirect heat for them to reach 120 degrees F, which I then finished with the sear over medium high heat, another 5 minutes total.

I tested both thick-cut and regular cut pork chops on the grill, and the thick-cut were the clear winner. When you see the thick-cut chops in the meat case, at about 1 1/2 inches tall, youll think they look too thick. But the thickness is perfect for grilling because they cook at a gentler pace, whereas regular pork chops cook incredibly fast and are very easy to overcook on the grill, leaving them irreversibly dry and tough.

We’re using our favorite all-purpose or “house seasoning” on these chops, which is a simple blend of equal parts garlic powder, kosher salt, dried parsley, dried minced onion, and dried basil. Its not strictly necessary you can still use this method to make great pork chops even without brining but if you have some extra time, I recommend it. Brining actually changes the cell structure within the meat, resulting in a noticeably juicier chop. The salt brine also seasons the interior of the meat. It wont taste salty just well-seasoned. You can even add other seasonings, like garlic, peppercorns, fresh herbs, and lemon, to the brine for more flavor. If you fear bland pork chops, definitely give brining a try.
