The USDA recommends cooking poultry until the internal temperature reaches 165°F. Keep in mind that in whole birds the internal temperature will rise 5 to 10 degrees during resting. Check the thigh meat by inserting the probe of a thermometer into the thickest part . If you dont have a thermometer, cut into the center of the meat. The juices should run clear and the meat should no longer be pink at the bone.

A: No, you should not attempt to use a metal dish for this process. This is because the acidity from the marinade will pull out the metallic flavor from the metal bowl. What Can You Do With Grill Mates Marinades
With this method, you make the mixture and coat the meat. You will want to use a large glass bowl or reusable plastic bag to make sure that you are getting all sides of the meat. This will give you the best flavor profile in the end. Coat the meat fully, then turn it and coat the underside and other areas of the meat as much as possible. You will want to refrigerate the meat with the marinade for at least 15 to 30 minutes.
This is an important part of the process because it gives the marinade time to soak into the meat so that when you cook it, the inside of the meat will have plenty of marinade to flavor it and it will not just sit on the top like a sauce. The longer you allow the marinade to sit on the meat, the stronger the flavor will be, so you can choose to leave it refrigerated a bit longer if you would like a more potent taste.
You need to cover all the meat, but you want to save a little bit of the marinade mixture to use for later. So, you should save about two tablespoons of marinade that you will use to coat the meat once it has been cooking and has about ten minutes left. Then, you use up the last of the mixture to add another coat to the meat to give it a last-minute boost of flavor to the outside layer so it comes out ready to serve.

Give Your Marinade The Brush Off
Dont put your meat on the grill just yet. The final step before cooking is an important one that most people forget: clean up your meat for the grill.
If theres a lot of oil in the marinade when the marinade drips into the grill, the flames will flare up, says Proto. Another reason to brush the marinade off prior to grilling is, if you have small pieces of onion and garlic in the marinade, they will burn before the meat cooks fully.

Find The Flavor Balance
Before applying your marinade to your meat make sure the flavors are where they need to be. I always tell my students to taste your food, and this goes with items like marinades as well. But remember that its not meant to be eaten alonethe marinade should be slightly over seasoned, says Frank Proto, Director of Culinary Operations at the Institute of Culinary Education.
If, however, the acid of the marinade is overpowering when you taste it, Proto suggests adding something sweet or saltya pinch at a time, tasting in between, to find the perfect ratio. If the marinade is too salty, add something sweet, like honey, maple syrup, or brown or white sugar. To increase acidity, try lemon juice, lime juice or vinegar and for salty flavors, play around with ingredients like salt, soy sauce, or fish sauce, said Proto.

How To Grill Chicken Breasts Perfectly
One of the challenges of grilling boneless, skinless chicken breasts is that their thickness varies from end to end. To remedy this, youll need to cut it or pound it to an even thickness before you grill.
Step 1: Cut the chicken and/or pound it so that its the same thickness from top to middle to bottom . Place the chicken in between plastic wrap before pounding it with a rolling pin or mason jar.
Step 2. Marinate the chicken with your favorite McCormick Grill Mates seasoning, olive oil and a touch of vinegar or lemon juice. Ideally, you would have the chicken marinating for a minimum of 30 minutes, up to 12 hours. A classic chicken seasoning is the McCormick Grill Mates Montreal Chicken Seasoning which has the perfect blend of garlic, onion, salt, pepper, lemon and herbs. Coat the chicken in oil and add your favorite seasoning, allowing the flavors to seep into the chicken.
Step 3: While the chicken is marinating, heat the grill to medium-high.
How hot should my grill be for chicken breasts?
Depending on the size of your chicken breasts, a two-zone fire is the way to go. If you have really small chicken breasts, you can get away with medium-high heat, because by the time you have nice grill marks on both sides the chicken will be cooked through as well. For larger chicken breasts, get your sear marks on both sides over medium-high heat, then move them to low heat to finish cooking.

Cook wine, let it cool and then add it to your marinade for a classic coq au vin flavor.
