Did I make it? Not even close, the waitress said, smiling sweetly. “Good try, though, especially since you’re so skinny, but you’d need to eat another 40 wings to get on the board.”
The thought of eating another 40 wings made me want to hurl, so we paid up and left as soon as we could.
This grilled chicken wings recipe is as close to Big Barry’s BBQ wings as I’ve been able to make. They go down real easy, so make more than you think you’ll need. But I’d advise stopping before you hit 100, OK?

How Long To Grill Perfect Chicken Wings
Grilled chicken wings are todays most popular addition to menus. It is important to know how long to grill chicken wings, chicken wings temp for grilling and also recipes that are easy to prepare and taste as good as they look.
To know how to grill chicken wings that are picture perfect, there are several things to consider. The grill temperature settings are usually found in the manual that accompanied your grill at the time of purchase.
Chicken wing recipe instructions are equally crucial to the final result. Some grilling chefs prefer ready-made marinades and grilling sauces to homemade recipes for barbecue sauce.
The Direct Heat Phase
Id say at a minimum your wings will need to be on the indirect heat for 45 minutes. An hour is better. They are hard to overcook. You could leave them on for two hours. Assuming your grill isnt too hot, the wings will just get more tender because more of the fat will break down.
Before you move on, Id recommend testing a wing to make sure its cooked through.
Now its time to toss with your sauce of choice. This might be a classic buffalo sauce or, in my case, this killer jerk rub.
After youve sauced the wings, stick them back on the grill, but this time on the direct heat.
As my friend Matt would say, BLAST EM!
Dont leave the grill while these are over the high heat. They can burn quickly. Use tongs to turn them pretty constantly. They shouldnt need more than a few minutes to get nice and crispy.
Serve these right off the grill with your favorite dipping sauce and lots of celery and carrots.

The Secret To Getting Crispy Chicken Wings On The Grill
To take this barroom classic from the fryer to the grill we had to figure out how to handle the fat and connective tissue from the wings, which creates a problem as it drips into the fire.
To get crisp, well-rendered chicken wings with lightly charred skin, succulent, smoky meat and minimal flare-ups, we quick-brined the wings and tossed them in cornstarch and pepper. These steps helped the meat retain moisture and kept the wings from sticking to the grill.
We then cooked them right over a gentle medium-low fire. The moderate temperature minimized flare-ups and the direct heat accelerated the cooking process. Also, though we normally cook white chicken meat to 160 F, wings are chock-full of collagen, which begins to break down upwards of 170 F. Cooking the wings to 180 F produced meltingly tender wings.
These few minor adjustments gave us crispy, juicy chicken that made a great alternative to fried wings. We also developed several easy spice rubs to take the wings up a notch if youre looking for some new flavor options.
GRILLED CHICKEN WINGS
Makes: 24 wings
Start to finish: 1 hour and 30 minutes
If you buy whole wings, cut them into two pieces before brining. Dont brine the wings for more than 30 minutes or theyll be too salty.

If you purchase fresh chicken wings from a butcher, chicken wing parts can be pre-sliced into two pieces, leaving wing tips to be used for creating chicken broth later.
The two parts of chicken wings people cook most are drums and flats. However, wing tips are favored by some for their crispy texture after cooking. Your local butcher may also debone the drums and flats if preferred.
If you purchase chicken wings from a grocer, depending on the grocer, you need to remove the wings from the whole chicken and use the remainder of the chicken for grilling, soups or roasting in the oven.

For the marinade:

- 1/3cupdark soy sauce
- 1/2cupolive oil
- 2tspeach of granulated onions and dried oregano
- 1tspeach of kosher salt, granulated garlic, dried parsley, and black pepper
- 1/4tspeach of dried thyme and dried basil

How To Break Down Chicken Wings
You can buy chicken wings that are already broken down into drumettes and flats or get whole wings and break it down yourself.
Chicken wing consists of three parts: drumette, wingette , and a tip. Drumette is the part of the wing that looks like the leg drum and is the part that is attached to the body. Wingette is the middle, flat part of the wing. The tip is the very end of the wings and it generally gets discarded.
To breakdown the wings:
First, pull the wing apart to clearly see the joints where each part is attached.
Then, make a cut through the skin and meat between the drumette and the flat, right to the joint. Use your hands to pop the bone out of the joint and cut through the remaining meat and skin to separate the wing.
Finally, do the same at the joint of the tip and the flat. Discard the tips.

There are many options for the marinades. if you don’t have time, you can always use a store bought pre-mixed sauce. However whipping up our own marinade is also very easy and fun.

How Long Does It Take To Grill Chicken Wings
Whether you grill or smoke wings, cook them over direct high heat the grill temperature should be around 450 F for 25-30 minutes, or until an internal temperature of 165F is reached. Its no fail! No need to complicate it further with lots of marinades or seasonings. Sometimes the best things in life are the simplest.

It’s advisable to marinade the wings a couple of hours before we cook them. This will allow time for the marinade to fully infused the wings with flavour down to the bone.
Alternatively, if you’re running short of time and can’t wait a couple of hours, you can first line a tray with foil. Then place the chicken wings on the tray and brush with the marinade before transferring straight to the heat.

How To Make Grilled Chicken Wings
