How Long To Grill Perfect Chicken Wings

After youve sauced the wings, stick them back on the grill, but this time on the direct heat.

Dont leave the grill while these are over the high heat. They can burn quickly. Use tongs to turn them pretty constantly. They shouldnt need more than a few minutes to get nice and crispy.

Serve these right off the grill with your favorite dipping sauce and lots of celery and carrots.

The Secret To Getting Crispy Chicken Wings On The Grill

To take this barroom classic from the fryer to the grill we had to figure out how to handle the fat and connective tissue from the wings, which creates a problem as it drips into the fire.

To get crisp, well-rendered chicken wings with lightly charred skin, succulent, smoky meat and minimal flare-ups, we quick-brined the wings and tossed them in cornstarch and pepper. These steps helped the meat retain moisture and kept the wings from sticking to the grill.

We then cooked them right over a gentle medium-low fire. The moderate temperature minimized flare-ups and the direct heat accelerated the cooking process. Also, though we normally cook white chicken meat to 160 F, wings are chock-full of collagen, which begins to break down upwards of 170 F. Cooking the wings to 180 F produced meltingly tender wings.

These few minor adjustments gave us crispy, juicy chicken that made a great alternative to fried wings. We also developed several easy spice rubs to take the wings up a notch if youre looking for some new flavor options.

If you buy whole wings, cut them into two pieces before brining. Dont brine the wings for more than 30 minutes or theyll be too salty.

How To Break Down Chicken Wings

You can buy chicken wings that are already broken down into drumettes and flats or get whole wings and break it down yourself.

Chicken wing consists of three parts: drumette, wingette , and a tip. Drumette is the part of the wing that looks like the leg drum and is the part that is attached to the body. Wingette is the middle, flat part of the wing. The tip is the very end of the wings and it generally gets discarded.

To breakdown the wings:

First, pull the wing apart to clearly see the joints where each part is attached.

Then, make a cut through the skin and meat between the drumette and the flat, right to the joint. Use your hands to pop the bone out of the joint and cut through the remaining meat and skin to separate the wing.

It’s advisable to marinade the wings a couple of hours before we cook them. This will allow time for the marinade to fully infused the wings with flavour down to the bone.
