Carry over cooking is when you pull the meat off of the heat source, and the temperature in the center most part of the meat continues to rise in temperature as heat travels from the warmer outer portion of the meat, to the inner or cooler portion of the meat. The larger the cut, the more the temperature will temp up.
When cooking on the grill the heat generated from your fuel cooks from the outside of the meat in. Heat wants to travel from hot to cold, so when you are cooking chicken, you can target 160 degrees as the finished temperature , but actually pull the chicken when the coolest part of the chicken is around 155 degrees. Once you pull, it will temp up to 160 degrees and be safe to eat .

Since legs and thighs have the biggest bones, it takes longer to cook than the breasts or wings.
Youll want to grill whole chicken legs over indirect heat for 30 to 40 minutes, turning every 15 minutes. Finish over direct heat for about 10 minutes, 5 minutes per side.
Because of the dark meat and bones, you want to wait until the internal temperature is 180 °F to 190 °F before taking them off the grill. 165 °F is safe, but at 180 °F the meat tastes much better, and it will be tender.

This is a long, slow cooking process, that will take approximately 1-1/2 to 2 hours, depending on the size of the bird and how well your grill maintains temperature.
However, if you spatchcock the chicken, you can reduce the time significantly!
If you spatchcok a chicken, because the overall thickness of any part is severely reduced, and heat can get more readily to every part of the bird, you can reduce the cooking time for a whole bird down to 30 to 40 minutes!
Just remember thermometer tells you when the chicken is done, not the clock! Use a reliable thermometer and make sure every part is cooked to 165 degrees Fahrenheit.
Can I Substitute Table Salt In The Brine
We don’t recommend using table salt in this brine. There’s a big difference between the size of kosher salt flakes and table salt grains. Using table salt will add much more salt to this brine recipe, and the chicken will come out too salty.
If table salt is all you have, use 1 1/2 tablespoons of table salt in this recipe. You can also use 1 1/2 tablespoons of fine sea salt.

Tip #: Pound The Breasts Before Grilling
Chicken breast is a very unforgiving meat. As soon as it tips over its ideal temperature, it will almost immediately begin drying out. The physical shape of the breast isn’t kind in this respect, as its uneven height means the bulky center cannot be cooked through without the thinner portions of the meat overcooking first.
There’s an easy solution to this problem: Even out the height. This involves giving the chicken a nice beating, which is also great for relieving any pent-up aggression.
I like to put the chicken in a resealable plastic bag for the poundingthe thick plastic won’t break when whacked, and the sealed bag ensures chicken juice doesn’t splatter all over the kitchen.
Once it’s safely in a bag, I go at it with a heavy skillet or a meat pounder, bashing the thicker parts of the breast until they match the height of the thinnest part. But don’t go too thin here keep the height around three-quarters of an inch. A chicken breast that’s pounded out too thin will be more susceptible to drying out over high heat.
