The first step is to purchase high-quality salmon. Personally, I prefer to buy wild caught salmon whenever I can find it. To prepare it for the grill, I started by cutting it into smaller fillets so that I could make multiple foil packets. I then prepared the foil packets so that they were big enough to wrap around the fillets. I usually double wrap them just to make sure the liquid stays in.
How Do I Pick A Good Piece Of Salmon
- Go to a grocery with a fresh seafood area and ask the monger to assist you in picking out the best piece of salmon. Ask what qualities you should look for so that the fishmonger can point out the special aspects to you directly.
- Mainly, youll want to look for the vibrant pink red color with little to no gray areas on the bottom.

Its pretty easy to find a good, clean blend at the grocery store.

Fresh thyme, garlic, and lemon slices are delicious on salmon and compliment Cajun seasoning really well!

How To Tell When Salmon Is Finished Cooking
The eternal question! The greatest of salmon crimes is overcooking.
- As this Salmon Temperature Guide outlines, the best way to tell if salmon is done is to use an instant read thermometer like this one. Remove the salmon at 135 degrees F, then let it rest.
- The FDA recommends cooking salmon to 145 degrees F, but its temperature will continue to rise as it rests.
- If you dont have a meat thermometer, you can check for doneness by taking a sharp knife and peeking into the thickest part of your salmon. If it is beginning to flake, but still has a little translucency in the middle, it is done.
- If your piece is thinner check several minutes early to ensure your salmon does not overcook. If your piece is very thick , it may need longer.
Seal The Salmon In The Foil
- To seal the salmon in foil, bring up the long ends and top with a second piece of foil on top. Fold the edges under to form a sealed packet.
- You want to leave little room over the salmon when folding for tented for air circulation, but the foil ends should still be overlapping so nothing can escape.

How To Cook Foil Grilled Salmon
The assembly steps were incredibly easy. Right? You can even do that in advance and leave the salmon in the fridge, until youre ready to cook dinner.
Then, once youre ready, light the grill to medium heat . Simply slide the fish-topped pieces of foil right onto the grill.
Itll only take about 10 minutes for the salmon to cook. The internal temp goal is 145F degrees. When you start to see white liquid start to seep out of the salmon, youll know youre getting close.
Note: the thinner portions of the fillet will cook more quickly than the thicker end. Thats why I always double check to make sure it reaches that USDA safe zone of 145F degrees.
Thats all there is to it. You can slide these babies right over to the dinner table for an incredible presentation. I like to hit them with a little melted butter, a pinch of cayenne and some flaked sea salt, just to finish them off.

This citrus herb foil grilled salmon recipe is really versatile, and can be adapted based on your tastebuds and the ingredients that are readily available.
Start by laying out a sheet of Reynolds Wrap® Non-Stick Foil that is about an inch larger than your salmon on all sides. I like using the non-stick foil, because the salmon will slide right off when youre ready to plate it up. Just be sure to put the dull side of the foil facing up thats the non-stick side.
The star of this dish is the salmon. I went with two full sockeye salmon fillets. You can go with fresh, frozen, farmed or wild. You can even choose whole fillets like this or smaller pieces, if youre only serving 1-2 people. Or, you can even use trout, sea bass or any other fish you happen to enjoy.
After selecting your salmon, its time to pick out the citrus. I prefer smaller citrus fruits like lemons, tangerines and limes. If you want to be a little adventurous, try blood oranges or kumquats.
For the herbs, fresh is best, but dry will work in a pinch . Oregano, thyme and rosemary are solid choices, but you cant go wrong with parsley, cilantro, dill or tarragon either.
