The general rule goes that you need to cook salmon for six to eight minutes at 450-500 degrees F per inch thickness of the fish. On the other hand, if you are pregnant or have a compromised immune system, we recommend that you avoid undercooked or raw salmon. Take a little extra time to make sure your fish is really thoroughly cooked to avoid any potential risk.

If buying a whole filet:

  • Remove the belly area that has bones. This is typically the area where silver skin can be seen. We slice along the top of it to keep a nice uniform shape.

  • Slice the salmon into four equal filets around 6 8 ounces each depending on the size of the salmon. Pat the salmon dry with a paper towel and prepare to season.

Chefs Tip on Bone-In Salmon: Ask your fish monger or butcher counter to remove pin bones. Pin bones are not fun to pick through. Any good monger or butcher will do this for you.

If you use the tail end, leave that filet slightly larger to get the same weight and note that it will cook faster than the center cut. There is no need to marinade or brine the salmon.

  • Buy Fillet Portions: Flipping a fillet portion is going to be a lot easier than flipping a huge fillet. Trust me. Or buy the fillet and cut it into 4-6oz. portions yourself.
  • Skin on: Grilling with the skin on gives you a barrier to the heat when grilling. Pro Tip: if you sprinkle the skin with salt before grilling it will easily peel off after being cooked.
  • Farm Raised vs. Wild Caught: Honestly this is up to you. I like wild caught better because theres more flavor however the farm raised have less of a fish taste and my kids like that better. Farm Raised will be cheaper than wild caught, but wild caught will be better for you. Its up to you.

    While the USDA recommends a minimum internal temperature of 145° F to be safe, this is overcooked in my opinion. The perfect temperature is 125° F.
