The actual cooking time depends on the thickness of salmon fillets, regardless of whether theyre with skin or with skin removed. The general rule goes that you need to cook salmon for six to eight minutes at 450-500 degrees F per inch thickness of the fish. Salmon skin doesnt affect the overall grill time if you follow the time and temperature guidelines for each inch of fish.

However, as raw salmon is usually safe to eat, chances are you’ll be absolutely fine as long as the salmon that you ate was either very fresh or had been frozen. On the other hand, if you are pregnant or have a compromised immune system, we recommend that you avoid undercooked or raw salmon. Take a little extra time to make sure your fish is really thoroughly cooked to avoid any potential risk.
How To Prepare The Salmon For Grilling
If buying a whole filet:
- Remove the belly area that has bones. This is typically the area where silver skin can be seen. We slice along the top of it to keep a nice uniform shape.
- Remove the pin bones if it has not already been done with tweezers.
- Slice the salmon into four equal filets around 6 8 ounces each depending on the size of the salmon. Pat the salmon dry with a paper towel and prepare to season.
Chefs Tip on Bone-In Salmon: Ask your fish monger or butcher counter to remove pin bones. Pin bones are not fun to pick through. Any good monger or butcher will do this for you.
If you use the tail end, leave that filet slightly larger to get the same weight and note that it will cook faster than the center cut. There is no need to marinade or brine the salmon.

While the USDA recommends a minimum internal temperature of 145° F to be safe, this is overcooked in my opinion. The perfect temperature is 125° F.
Finished internal temperature: Medium-Rare: 120 to 125° FMedium: 125 to 130° FUSDA recommends: 145° F Grill temperature: medium. Not too high or the salmon will overcook on the outside before the inside cooks. Too low and the skin wont get crispy and you will miss out on extra flavors.

The Best Way To Cook Salmon On The Grill
Grilled salmon recipe with marinade
Ingredients:1tsp Black Pepper
Combine all ingredients except for the salmon itself in a gallon zipper bag.
Add the salmon filet and turn to coat. Marinate in the refrigerator for at least 2 hours.
Heat your gas grill to medium heat and spray the grate with cooking spray.
Let The Grilling Begin
As soon as you feel that the gas grill is ready, adjust the heating to a low-heat setting. To get the best grilled salmon, start placing the marinated fillets with the skin side up. Close the lid of the gas grill for cooking. The cooking time for each side of the fillet is mentioned above. Once you feel that one side of the fillet is cooked perfectly, remove the lid and flip the fillets with a thin spatula. Repeat the same procedure for the skin side.
If you want to add another layer of taste, rub both sides with olive oil or butter. Also, dont forget to place the salmon pieces at an equal distance so that they cook evenly. If set at the right heating temperature, a one-inch thick piece takes 10 minutes to cook thoroughly.
