Can I Use Frozen Shrimp

When making this recipe, you can use fresh shrimp that you get at the meat counter or purchase frozen shrimp. If you purchase frozen shrimp, make sure to let it thaw before cooking. It will take about 20 minutes to thaw out.

To let it thaw, place shrimp in a colander and let it run cold water until thaw. You can also put the frozen shrimp bag in the refrigerator and let it thaw overnight.

To ensure that everything is ready to eat at the same time, choose small red potatoes that cook quickly.

I usually buy a bag of Steamables potatoes because theyre smaller than the ones the grocery store usually sells loose. To give them a little more of a head start, pop the bag of potatoes into the microwave for 5 minutes to par-cook them before adding them to the foil packets.

Cutting the corn into 1 to 1-1/2-inch thick rounds also helps speed up its cooking time and makes it easier to eat!

Once the ingredients are prepped, I toss it them all in seasoning and tuck them into foil packets with a heaping teaspoon of ghee to cook the rest of the way on the grill.

Kick back with a glass of white wine or some spa water and youre ready to feast!

Quick And Easy Lemon Garlic Foil Packet Shrimp | Simple Grilling Recipe by Forkly
  • butter
  • cayenne powder
  • cajun seasoning
  • parsley
  • lemon

I am currently on a Cajun kick. I literally cannot get enough of the stuff. Originally I had thought to just do a simple lemon butter sauce, but then I remembered CAJUN! With so much awesome flavor, Cajun Shrimp Foil Packets were the clear winner. I like to think of it as my version of a shrimp boil.

As far as the spice level, thats up for you to decide. If you are super sensitive to spicy foods, or you just dont like spicy food, then I advise against adding any cayenne to your shrimp. On the flip side, if you are a spice lover like me, then your shrimp with asparagus will thank you.

Preparing Your Grill Foil Packets

To give your potatoes a little bit of a headstart, first place them in the microwave and put them on the potato setting for 5 minutes. I often poke a few holes into the potatoes with a fork and wrap them in a damp paper towel for this step. This allows the potatoes to start cooking and will ensure they are fully cooked when you remove them from the grill.

Next, place a piece of aluminum foil down and fold in the corners of the foil.

  • Add the shrimp, potatoes, and corn.
  • Add in a Tbsp of butter
  • Then sprinkle a Tbsp of your seasoning mix.
  • Cover the ingredients with the foil and secure packet.

When cooking shrimp on the grill in foil, place the shrimp foil packets on the heated grill and cook for a full 20 minutes. Carefully remove your foil packets from the grill and keep the foil wrapped tightly until you are ready to serve.

When its time to eat, unwrap and enjoy.

How To Cook Noodles With Foil

When I go camping, I love cooking dishes that people wouldnt normally expect like seafood paella foil packets, where the rice cooks right inside the foil.

I figured, if it works for rice, maybe it will work for pasta.

In the past, I used to boil my pasta at home and bring it to the campsite. While that works okay, the pasta tends to stick to itself, so its not as great as when its freshly cooked.

In order to cook noodles in a foil packet, I recommend using thin noodles. Either thin spaghetti or angel hair pasta, because both cook faster. Using Reynolds Wrap® Non-Stick Foil prevents the pasta from sticking to the bottom of the packet.

The cooking liquid is going to be a combo of white wine, chicken broth and butter. .

Does Shrimp Size Matter

Now that youve picked your deveined, peeled, tail-on shrimp, its time to choose the size. This is really a matter of preference and again, cost. The larger the shrimp, the higher the price.

The bags will be marked by shrimp count per pound. Small shrimp generally yield 51-60 shrimp per pound. If you choose that size, use about 14 shrimp per foil packet.

If you go with the medium , use about 10 shrimp per foil packet.

Large yield 31-35 per pound, which is about 8 succulent shrimp per foil packet.

The jumbo shrimp yield 16-20 per pound.

One other tip. Shrimp is naturally high in sodium, so if youre watching your sodium intake, use unsalted butter and low-sodium chicken broth in this recipe. Youll reduce the sodium by about 500 grams per serving.

How To Fold A Foil Packet

With some recipes, you can get by fine using one layer of foil, but I recommend using two sheets for this grilled shrimp scampi recipe.

Heres why. When you fold the foil over the pasta and liquid, youre going to create steam, which will escape and drip out. If you add another sheet of foil over the original packet, youll collect the steam in that layer, making cleanup a breeze.

This recipe is for four foil packets, so start by tearing off eight 16-inch sheets of Reynolds Wrap® Non-Stick Foil. Im using their Non-Stick Foil to prevent the pasta from sticking to the bottom. They also just released new foil boxes with a tab that makes it easier to open and close the box. The new boxes are color coded by foil type, look for the yellow color for non-stick foil.

Stack two sheets on top of each other with the dull side facing up. The dull side is the non-stick side. You should have four stacks.

Because were working with liquid, lay the sheets on a rimmed sheet pan. This will create a slight concave, keeping the liquid from spilling out.

Layer the pasta and liquid onto the center of the foil sheets along with the butter, garlic, pepper flakes, salt and pepper.

Working with just the top sheet, bring the long sides of the foil up to the center. Join them so theyre even and touching. Fold the foil over about 1/2-inch a couple of times.

Then, fold the short ends in about 1/-2 inch toward the center a couple of times.

Packing The Shrimp In Foil

Shrimp Boil Foil Packs

If you are making saucy shrimp, you can wiggle the foil into a bowl shape or place the piece of foil over a bowl. Put your shrimp inside, and then fold the foil close. You can use the same concept when adding veggies or extra food items with the shrimp.

You want to make sure you add the shrimp on top of any veggies for grilling so the shrimp doesn’t get done too quickly while the vegetables are not yet tender.

You can mix it all in if you are grilling in the oven with a broil setting because the primary heat is above.

With dry spiced shrimp, it will be best to try and lay the shrimp out in an even layer as flat as possible. That helps all the shrimp cook evenly at once without overlapping shrimp releasing extra juices onto the bottom pieces.

Before you close the foil, remember to drizzle some olive oil or place a few blobs of butter around the shrimp. It will help cook the shrimp by keeping it tender and adding flavor. In addition, you could also add a few lemon slices for more flavor.

  • The grains: You can cook pasta, rice, and grains in foil packets. Just make sure they are small, quick-cooking shapes and that they are first in the packet and therefore closest to the grill grates.
  • The proteins: The recipes below call for a variety of protein some are sliced, some are kept whole. Consider the other ingredients in the packet when choosing which proteins to use and how to prepare them. For example, whole chicken breasts should be paired with long-cooking potatoes, while quick-cooking shrimp is best paired with quick-cooking orzo and asparagus.
  • Cooking liquids: Packets with grains like rice require more liquid such as water and broth while vegetable and protein-only packets just need a simple sauce like pesto or salsa. For the shrimp packet, the shrimp and asparagus let off enough liquid to cook the orzo pasta.

How Long Do You Cook Shrimp On The Grill In Foil

The amount of time these packets take to cook will depend on how large your shrimp pieces are. We used medium-size shrimp that we already cooked and peeled, so we just needed to heat them through and make sure the potatoes were cooked completely. This took about 20 minutes. If the shrimp you have are salad-style and are tiny, you may want to cook the potatoes longer in the microwave so the packets dont have to be on the grill as long.
