Frico Grilled Cheese Sandwiches
Grilled cheese sandwiches with cheese on the inside and the outside is the stuff dreams are made of. This recipe from Smitten Kitchen makes my head spin a little, but in a good way. Inspired by classic frico, or thinly fried or baked cheese, this sandwich gets its crisp exterior from cooking the cheese on the outside of the bread until the cheese becomes golden, brown, and incredibly alluring. More cheddar is melted on the inside because we’re still making grilled cheese sandwiches here! The result is cheese two ways, which is a concept I will always appreciate wholeheartedly.
How To Prepare Grilled Cheese In A Microwave
Classic American Grilled Cheese Sandwich
- 4 slices white sandwich bread
- 2 TBS of butter at room temperature
- 4 slices of American cheese
Total time: Author: Lesly
1. Preheat your Foreman Grill for at least 5 minutes. Use the medium-high setting if your grill has that option.
2. Butter one face of all 4 slices of bread. Turn 2 slices of bread over so that the unbuttered side faces up. Place the cheese on these slices of bread, 2 slices of cheese per sandwich. Place the other piece of bread on top of the cheese with the buttered side facing up.
3. Place the assembled sandwiches on the grill and close the lid. Cook for up to 3 minutes until golden brown with light grill marks and the cheese has melted.
4. Cut the sandwiches in half and serve with potato chips or French fries with ketchup and a pickle wedge.

Tips For The Best Grilled Cheese
- Low heat it takes a little patience to make the perfect grilled cheese. Keep your heat on low to give the cheese time to fully melt while the bread gets golden and crisp. If browning too fast, turn the heat down.
- Butter generously the amount of butter may seem like a lot, but it is important for a crispy exterior.
- Use thick-sliced bread we love using Texas toast because its sliced about twice as thick as normal sandwich bread. You want bread that is about 3/4 to 1 thick, but also avoid bread that is too thick or your cheese wont melt properly. Using bread that is too thin will produce a flimsy and sometimes soggy sandwich.
