Frico Grilled Cheese Sandwiches

How to make an Awesome Grilled Cheese Sandwich

Grilled cheese sandwiches with cheese on the inside and the outside is the stuff dreams are made of. This recipe from Smitten Kitchen makes my head spin a little, but in a good way. Inspired by classic frico, or thinly fried or baked cheese, this sandwich gets its crisp exterior from cooking the cheese on the outside of the bread until the cheese becomes golden, brown, and incredibly alluring. More cheddar is melted on the inside because we’re still making grilled cheese sandwiches here! The result is cheese two ways, which is a concept I will always appreciate wholeheartedly.

How To Prepare Grilled Cheese In A Microwave

  • 1Toast the bread in a toaster so it gets crispy. Put 2 slices of the bread you want to use in your toaster and cook them for about 3-4 minutes or until theyre golden brown. Pull the bread out of your toaster once its finished so you can use it for your sandwich.XResearch source
  • You dont have to toast the bread if you dont want to, but your sandwich wont be crispy.
  • 2Put 1-2 slices of cheese between the pieces of bread. Choose your favorite kind of cheese to use for your sandwich. Set 1-2 thin slices of cheese on top of one of your pieces of bread, and then set the second piece on top to make your sandwich.XResearch source
  • American cheese will melt the easiest in your microwave, but any cheese will work for your sandwich.
  • 3Wrap the sandwich in a paper towel so the cheese melts better. Set the sandwich on a piece of paper towel and wrap it up completely. The paper towel will help trap the heat so the cheese melts faster without making your bread soggy. Set the wrapped sandwich on a plate so its ready to cook.XResearch source
  • 4Cook the sandwich in the microwave for 15-20 seconds or until the cheese melts. Set the sandwich in the middle of the microwave and run it in 15-20 increments. When the microwaves finished running, unwrap your sandwich and check if the cheese has melted. If not, put it back in your microwave for another 15 seconds. Otherwise, unwrap your sandwich completely and serve it.XResearch source
  • The bread may get soggier the longer its in the microwave.

Tips For The Best Grilled Cheese

    • Low heat it takes a little patience to make the perfect grilled cheese. Keep your heat on low to give the cheese time to fully melt while the bread gets golden and crisp. If browning too fast, turn the heat down.
    • Butter generously the amount of butter may seem like a lot, but it is important for a crispy exterior.
    • Use thick-sliced bread we love using Texas toast because its sliced about twice as thick as normal sandwich bread. You want bread that is about 3/4 to 1 thick, but also avoid bread that is too thick or your cheese wont melt properly. Using bread that is too thin will produce a flimsy and sometimes soggy sandwich.

Were partial to regular old cheddar cheesesharp or medium, depending on your preference but a great grilled cheese sandwich can be made out of lots of different cheeses, and our grilled cheese recipe will work with almost any cheese you favor. Here are a few great melters to try:

    • Monterey Jack. This mild, creamy white cheese is an even better melter than cheddar, and is extra lovely mixed with a little sharp cheddar.
    • Gruyère. Nutty and delightfully salty, Gruyère is an Alpine-style cheese that is widely available in the U.S. and makes for a richly flavorful grilled cheese.
    • Raclette. Another gorgeous Alpine-style cheese that is quite literally made for melting. This washed-rind cheese is funkier than Gruyère and will definitely take your grilled cheese into grown-up territory.
    • Blue / Chevré. Tangy chevré or sharp blue cheeses can be delicious additions to a grilled cheese, but we like to use them sparingly and coupled with mild, melty cheeses like Jack or cheddar.

    Heat Control Is Critical

If I’m whipping out a skillet for a quick stove top job, 9 times out of 10, I’m throwing that sucker over medium-high heat. But not for grilled cheese. Here, you’re gonna wanna dial it back just a touch. Using moderate heat allows the cheese enough time to melt as the bread gradually browns. If your pan is too hot, the bread will burn by the time you reach that wonderful state gooey cheese nirvana. Nobody wants that.

How To Prepare A Classic Grilled Cheese

    The Ultimate Grilled Cheese
  • 1Butter a single side on 2 slices of bread. Pick your favorite type of bread for your sandwich and take 2 slices from the loaf. Use room temperature butter so its easier to spread and doesnt tear your bread. Coat a side of each piece of bread with the butter so it crisps up and doesnt burn when you put it in the pan.XResearch source

If you want to make your sandwich healthier, try using whole wheat, multigrain, sprouted, or gluten-free bread.

  • 2Preheat a non-stick pan on your stove over medium heat. Set your non-stick pan on your stove and turn it on to high heat. Let the pan heat up completely before you put your sandwich on it so you get an even cook. Flick a few drops of water on the pan, and if they sizzle and evaporate right away, your pans hot enough for the sandwich.XResearch source
  • Dont keep the heat too high on your stove or else it will burn the bread without melting the cheese.
  • 3Assemble your sandwich in the pan. Once the pan is hot, place the first slice of bread into the pan buttered-side down. Top the piece of bread with 1-2 slices of your favorite cheese, then put the second slice of bread on top with the buttered side face-up.XResearch source
  • American cheese melts the easiest, but you can use any type of cheese you want for your sandwich. Try using or mixing different cheeses to change the flavor of your sandwich.
  • Try using Cheddar, Provolone, Swiss, Gouda, or pepper jack for slightly different flavors.

Best Tomato Soup I Ever Ate + How To Make Awesome Grilled Cheese

How To Make a Grilled Cheese Sandwich

Yes, okay. Longest post title ever.

But Im starting to realize I cant have tomato soup without grilled cheese.

Especially now that I know all the secrets to making an amazing grilled cheese sandwich. And the worlds best tomato soups made from scratch.

When I was little, I loved grilled cheese. Back before I knew any better, those plastic wrapped bright yellow slices of Kraft, sandwiched between two pieces of white bread, and grilled up all golden brown and melty were heaven. Especially when the wind chill was around 20 below, and I just had just come in from a very long like 30 minutes in kid time day of sledding.

And them BAM! Ooey, gooey cheesey goodness. But there was always tomato soup. And I didnt even like tomatoes. The closest I got to eating a tomato as a child, was ketchup.

But we all know ketchup is just food from heaven anyway, so that doesnt even count.

I always asked my mom why I had to have tomato soup. She said tomato soup just went with grilled cheese. So in my kid brain, I assumed it was like peanut butter and jelly. Obviously youre just very strange if you have one without the other.

Now that I am older, and somewhat wiser, I suspect it was the only way she could find to get me to eat soup made of a vegetable. Very clever mom.

But times have changed, and now I actually, for realz, enjoy tomato soup!

Especially THIS tomato soup. With THIS grilled cheese. OMG, seriously you guys, this stuff is the best.
