Whether using a charcoal grill or a gas grill, these are the basic tips to keep in mind when learning how to grill vegetables.

  • Wash and dry the vegetables.

The reason that veggies should be gently tossed with a little oil, cooking spray or melted butter is to prevent them from sticking to the grates.

Marinating vegetables is also a great way to introduce more flavor, just beware that marinades will quickly absorb into soft fresh vegetable flesh so an hour of marinating time is generally considered plenty. If vegetables spend too much time in a marinade, they will end up tasting like straight marinade.

  • Use metal skewers. Wood skewers burn easily on the grill!

    When we talk about seasoning grilled vegetables, it’s as uncomplicated as cooking them was. For the most part, toss them with some Kosher salt and some freshly ground black pepper. A squeeze of fresh lemon juice is indispensable as are fresh chopped herbs like thyme, oregano, or rosemary.

    A drizzle of balsamic vinegar or even a simple pesto sauce would also be a welcome finisher.
