That means you dont really need to worry about how much charcoal to add at once, so go ahead and fill the firebox to the top line. Once youve added your charcoal, bury one or two fire starter cubes in the pile. After 10 to 15 minutes, the coals around the cube will be red-hot and ready to go. Spread out the coals and close the lid. From here on out, you can use the vents to control the heat. The trick is not letting the coals get too hot. Its easier to increase the oxygen flow and heat up the coals, but its much harder to cool down the thick, ceramic walls.

One is that kamados do tend to be more limited in size than other types of grills or smokers. My issue with the Classic II standalone is much the same as I have with the Big Joe II standalone: its not much cheaper, and yet it has a much bigger drawback. While not as unwieldy as the Big Joe II, this thing is still heavy, and you gain little by the lack of wheels.
While the support carriage can generally be bought separately, its still a bit of a pain, and you can save yourself some hassle by just buying the variant that comes equipped with wheels and shelves in the first place.
Can You Grill On A Kamado
Kamados can get mighty hot. We cranked a Big Green Egg until a column of fire shot out the top, and it was like a blast furnace inside. That’s great for searing the snot out of thin meats, like skirt steak, that you just want to cook hot and fast, but once kamados get hot, they take forever to cool down. Along with the difficulty of creating a two-zone setup, this is why we believe most kamados function better as smokers and ovens than as grills.
If you really want to take your grilling skills to the highest level, then you need to master two-zone cooking and get a charcoal grill in addition to the kamado, or select a kamado that can do two-zone cooking.
