What Is The Best Charcoal Grill To Buy

Best Overall Charcoal Grill

The best charcoal grills you can buy
  • Extremely versatile with cooking methods
  • Size an issue if grilling for a crowd
  • Built-in thermometer isn’t accurate enough to use

When you talk about charcoal grilling, you start with Webers kettle. The brand continues to represent the ideal mix of performance and price. Its customary porcelain-enameled steel body is sturdy enough to lock heat in and light enough to tow around without throwing out your back. Its construction is such that moving parts, screws and levers are kept to a bare minimum, which means it lasts much, much longer than other grills under $200.

This is the slightly suped-up version of the classic Weber kettle, and if you’re going to be charcoal grilling often, the one you want. The biggest difference between the original and the premium versions is the latter’s ash catch, which makes cleanup significantly quicker and more tidy. Another bonus of investing in Weber kettles is the vast collection of aftermarket accessories you can get for one.

Using the grill, the ovoid shape shape is immediately useful. Using a rectangular grill, the edges of the grill are usually off-limits to most food, because when you close the angled lid it brushes up against the food, and the edges are typically cooler. The Weber’s dome lid doesn’t have these issues. The shape also allows you to get creative with your coal placement and with what you’re cooking. Consider the snake charcoal placement method for low-and-slow smoking, or a more traditional two-zone setup.

Picking The Right Grill For You

A charcoal grill is not determined by its price or any one deciding factor. In order to understand exactly what makes a fantastic grill, you need to understand the mechanics of grilling. Reading our charcoal grill reviews will assist you in making a decision by narrowing your choices down to a few good ones.

The most important part of grilling well is understanding heat management. Once you know how to manage the heat inside of your grill, it becomes very clear what kind of features are needed to assist you in getting the perfect amount, in the perfect place, for the perfect meat.

Where you place your coals and the locations of the vents will have a direct impact on how well your food turns out at the end of the grilling process, so you should be looking out for grills with multiple vents that work independently of the others and convenient ways to add coals without having to move your food.

Flaws But Not Dealbreakers

The 22-inch Weber Original Kettle Premium is short. The grates are just 27 inches from the ground. Compare that against the standard kitchen-counter height of 36 inches, and you quickly grasp the reality we experienced: Its a literal, if passing, pain in the ass to spend a lot of time working over the grates. Granted, you spend 90 percent of your grilling time standing around waiting for stuff to cook, not leaning over the coals. But the Napoleon, which we otherwise didnt love, is a generous 34 inches in height at the grate, and that made it a pleasure to work on. Given Webers attention to engineering details, we suspect the low height is by design. For the same reason, we believe Weber could do things differentlyand better.

The Weber grill has three legsan inherently stable design, because having three points of contact means the legs will automatically find their level even on bumpy ground. That said, the Napoleon models four legs felt just as stable, and more stiff, on a garden-variety concrete patioand also allowed Napoleon to install a big, square shelf underneath the grill. The Weber grill has a smaller, triangular shelf, but its far less useful.

Finally, the Weber model doesnt come with a grill cover. We think every grill should, even though most dont. Weber sells one for its 22-inch kettle for about $40.

Types Of Charcoal Grills

Kettles are deep and rounded. As you pile the briquets high on top of each other, rather than spread them out in these grills, they do a good job of holding in heat. Youll find them good for foods like chicken, a side of salmon, or a leg of lamb that you want to cook low and slow until theyre done. It can be tricky to add more charcoal to a kettle during grilling as you have to lift the grate.

Barrels are so-named because they look like a barrel lying on its side. Wide and shallow, they require a substantial amount of charcoal but give you room for a whole lot of food on their broad grates. As they cook quickly, barrels are best for grillers who stick to the basics. Its easy to add charcoal to barrel grills if you want to keep the party going all afternoon.

Ceramics or Kamados really hold in the heat and keep it at a steady temperature, giving you lots of control over cooking. Theyre ideal for serious grillers who want to master items like slabs of ribs, pork shoulders, and brisket. They also make a mean steak. The downsides are that kamados are pricey and heavy, and dont have a very big cooking surface.

Do I Close The Lid After Lighting Charcoal

If you’re using the grill basin to start your charcoal, leave the lid open while the coals light. The increased air circulation will help the coals light faster. Same applies if you’re using a chimney starter: keep the chimney uncovered.

Once the charcoal is fully lit , cover the grill for about 10 minutes or so to heat the grill itself. Then, you’re ready to start cooking.

The Greatest Pellet Grills You Can Buy Today

If you love hosting al fresco bashes but wish you were a better barbecue chef, this is the grill for you. Many American barbecue aficionados swear by pellet grilling because it infuses food with a truly authentic wood smoke flavour that is difficult to attain using charcoal, let alone gas. It is also arguably the easiest type of barbecuing because its all controlled by a computer leaving you, the host, to chill out and relax safe in the knowledge that the food will be cooked to perfection with almost zero intervention. Its also ideal for a range of cooking styles, from fast grilling to slow smoking and roasting.

Like all pellet grills, compressed wood pellets are transported from a large hopper via an electrically-powered auger to a small furnace pot beneath the main grill grate. The whole pellet delivery process is controlled by a computer processor Traegers own D2 Direct Drive that ensures consistency and reliability, just like an indoor oven. Hence, once youve set the temperature on the Traegers display panel or its superlative app, it remains at that temperature for as long as there are pellets in the hopper.

How To Build A Charcoal Grill

Charcoal grills can be as elementary as you want them, so yes, you can absolutely build a charcoal grill if you have some time and patience. Pitmasters have cut barbecues out of 55-gallon steel drums for generations, and while that’s a little more involved, it’s not unfeasible.

One of the easiest methods, as told to us by Olunloyo, is a three-walled structure with a fourth side exposed, using cinder blocks and cement, making sure to start on a safe surface:

  • The size and shape are entirely up to you, but stack the cinder blocks in a U-shape as high as you’d like, but not so high that the heat from your fire below won’t reach the grate you’ll place on top.
  • Once you’ve decided on your dimensions, you can cut or order a grate from any industrial metal supplier that sells fencing or square grates, and ask for 3/16″ or ¼” stainless steel to be cut to size. This will be the costliest portion of the build, but also the most crucial.
  • Once you have the grate or flat top, be sure to hone the rough edges for safety, and then place it on the cinder-block structure and wipe or spray it with any cooking oil , saturate it, and get it plenty hot before cooking.

Go All Natural Hardwood

Equipment Review: Best Charcoal Grills

When picking your fuel, only go for bags labelled hardwood lump charcoal or 100% all natural. Non natural briquettes are convenient to use, bit theyre always packed with chemicals, fillers and binders. These will heavily impair the quality of your meal while also being incredibly bad for the environment.
