To be certain that chicken is done, youll want to test it with an internal thermometer. Chicken should test at 165º Fahrenheit. We actually prefer our chicken on the bone to be done just a little more than this. Ill take it off the grill when it is about 170-175º Fahrenheit.

How To Make It

  • Making the seasoning mix is as simple as combining all of the herbs and spices and mixing well.
  • For the chicken, I like to lay it on a baking sheet and sprinkle both sides with the seasoning. Once it is evenly covered with the spice mixture, place the chicken in a ziplock bag or a container with a lid.
  • Refrigerate! I like to refrigerate a minimum of 1 hour, but 4 hours is my sweet spot!
  • Grill the chicken, turning it a time or two until it is cooked through.

    Reheating With The Microwave

    • Any extra seasoning you wish to add.

    Step 1:

Place your chicken on a plate or dish. You need to make sure its a microwave-safe plate or dish, as you dont want any accidents or explosions in the process of re-heating a bit of chicken!

If youre reheating more than one piece of chicken, make sure you place the bigger pieces on the outside and the smaller pieces at the center.

This is because, in a microwave, food on the outer edge cooks a lot faster, and the bigger pieces of chicken require that extra power of reheating so they can get done at the same time as the smaller pieces.

    Step 2:

To ensure that the chicken comes out with regained moisture, its recommended that you cover it in some sort of liquid-based sauce or flavoring. That way, it can absorb the moisture and gain some flavor at the same time.

You could cover it in something such as teriyaki or barbecue sauce.

    Step 3:

Place a piece of microwave-safe plastic over the dish or plate to cover the piece or pieces of chicken.

Make sure that the plastic doesnt actually tough the chicken, as it could melt onto it and leave it full of nasty chemicals that you dont want to eat.

    Step 4:

Reheat the chicken for around two to three minutes.

Stop the microwave, turn the piece or pieces of chicken over onto their other side, and stir the sauce to be properly absorbed. Then reheat the chicken again for another two to three minutes.

    Step 5:

    • Pound the chicken breast to an even thickness. This will help to ensure that the meat cooks evenly and quickly so that you don’t end up with half of a breast that’s too dry, while the other half is still raw.
    • Get the grill nice and hot. Chicken breast is a very lean meat, so it stays juiciest when cooked quickly over high heat.
    • Wait to baste the chicken with the barbecue sauce until the final 3-4 minutes of grilling. This will prevent the chicken from burning on the grill. Serve additional sauce on the side.
    • The total grilling time will vary depending on a number of different factors, such as the temperature of your grill, the temperature of your chicken when it goes on the grill, and the size and thickness of your chicken. As a result, it’s always best to use a meat thermometer to know exactly when your chicken is done. You’re looking for an internal temperature of 165° F for chicken breast.
    • Allow the meat to rest for at least 5 minutes before slicing. The juices will redistribute throughout the meat so that the chicken breast stays nice and juicy.

When Is Chicken Safe To Eat

One of the single biggest secrets to perfect grilled chicken is understanding the internal temperature of when your chicken is done. With the salmonella potential of chicken, there is good reason to make sure the meat is cooked to proper temperature, but most people heavily overcook it to be safe, and as a result the chicken turns out dry and way overcooked.

The USDA encourages chicken to be cooked to 165 degrees Fahrenheit to kill any bacteria. And while that is true when trying to set one temp countrywide, there is a process when grilling or cooking chicken that is important and plays into when you pull your chicken. By holding chicken at lower internal temperatures for longer periods of time, you can still kill off the harmful bacteria.

That means you can achieve bacterial death in chicken with an internal temperature of 155 degrees F, if you hold that temperature for just under 50 seconds. This is a very important point for juicy breast meat versus the dry stuff you may have had in the past.

Thermoworks has a very detailed article about the nuances of internal chicken temperature and how long it needs to be held for safe cooking using USDA pasteurization tables.

The other thing to consider is that chicken thigs and drumsticks actually have better texture if you take them to an internal temperature of 170 degrees F. This allows for a better texture because more of the intramuscular connective tissue breaks down.

    More Recipe Notes And Tips

    • The cooking time will vary depending on the thickness of your breasts. The best way to check that the chicken is done is to use an instant read thermometer which should register at 165F.
    • Cook the chicken on a medium-high heat. If the grill is too hot, the outside of the chicken will burn and the middle wont be cooked through.

    How To Grill Chicken

Start with chicken pieces. Each piece will cook at a different time because of the size, so the chicken can be pulled separately when each is done. When grilling chicken, cooking with Direct and Indirect method is also very important.

    Break it down into steps:

    • Grill First Over Direct Heat
    • Move to Indirect Heat to Finish
    • Add Glaze at the End

Direct and Indirect method is having the charcoal or heat source on one side of the grill for searing, and the other side with no charcoal or heat source. This allows the next important technique, to sear the chicken over the direct heat getting the crust on each side, and then moving to indirect heat to finish to the desired internal temperature. This is the key to perfect grilled chicken.

Why does the direct indirect method matter? Because as high heat sears the chicken, the fat from the chicken will render out faster and drip into the coals. This can cause flare ups that send large flames and potentially burn the chicken, creating the crusty dark burnt skin, while still having an under-cooked interior. After searing the chicken to your desired crust, moving the chicken to indirect prevents the fat from causing flare ups and roast like an oven.

Have a gas grill? Unlike a charcoal grill, you can lower the flame. That said, it is still easy to use this method with a gas grill to avoid burning the chicken, even with a lower flame.

    How Long To Cook Bone

Bone-in chicken breasts tend to have more flavor than their boneless siblings but take longer to cook. Allow 30-40 minutes total cooking time with 10 minutes over direct heat and 20-30 over indirect heat. When testing the temperature, be sure to avoid touching the bone which will be hotter than the internal meat.

What Kind Of Chicken Is Best For Grilling

You can really choose whatever type of chicken you like best for grilling. We like chicken thighs, chicken breasts and even wings for grilling. Chicken breasts are great for marinades and for chopping for grilled chicken salads.

Skin on chicken helps to hold in the moisture of the chicken when grilling.

Drumsticks and smaller chicken pieces dont take long to grill, but a whole chicken leg or small chicken will take potentially over 30 minutes to grill.

    Step 2:

Place the baking sheet in the preheated oven and allow for it to warm until the inside of the chicken reaches 165F on a meat thermometer, as is recommended by the USDA Food Safety and Inspection Service.

    Step 3:

    Pro Tip:

To make sure the chicken skin regains its crispiness and flavor, you can add a light layer of olive oil onto the chicken before you wrap it in the aluminum foil to be preheated.

How To Make Grilled Chicken Breast Juicy

These are the few tips that would ensure your Grilled Chicken Breast is tender and juicy.

    • Begin by pounding the chicken breast to an even thickness. This step might not seem important. But this is one of the important steps and should not be missed. The chicken breast is not of uniform thickness. So when cooked the thinner part of the fillet drys out while the thickest part is still undercooked. Fillet of uniform thickness ensures even cooking.
    • Or else use a meat tenderizer or a simple rolling pin, keep the fillet in between cling film and gently flatten the thick side of the fillet.
    • This step is important if you have refrigerated the marinated chicken for more than an hour. Make sure you take the marinated chicken out of the refrigerator at least an hour before cooking. Chicken fillets should be at room temperature while grilling, else it might not be cooked uniformly.
    • Last but not least is the cooking/ grilling time. Once the fillets come to room temperature heat up your grill to the highest or if using a grill pan heat it. Grease the grill pan lightly. Grill each side for 3 minutes each side. Needless to say, overcooking would make the fillets dry and hard.
    • Bast chicken with melted butter in between to keep the meat moist.
    • If you are still not sure about the cooking time then check the internal temperature of the grill. It should be around 155 F – 160 F.
    • Once the chicken is done, cover and let it rest for 7-8 minutes before serving.
