  • To fire-roast the red peppers, place them over a high flame on a stove-top burner and roast, turning occasionally, until the skins turn black on all sides. Place the peppers in a medium bowl, cover with plastic wrap and allow them to steam for 10 minutes. Peel away the blackened skins from the peppers. Cut away the stems and then seed, core and coarsely chop the peppers. Place them in a food processor and puree until smooth reserve to the side.

I prefer to use my Thermapen Mk4 to keep an eye on the internal temperature as Im smoking.     Youll know your ribs are done when your thermometer slides into the meat just like butter. That tenderness should be a helpful indicator of how close your short ribs are to being done. And once they reach that perfect internal temperature, prepare yourself for some tasty, tender meat. These guys fall off the bone with barely a touch.

    Selecting Beef Ribs For The Charcoal Grill

    Pork ribs get most of the press, but smoked beef back ribs are an excellent choice for the smoker.     Bbq The Beef Short Ribs

    Get your smoker or barbecue fired up to around 225. Place the ribs on the center of the rack and if you have a temperature probe, insert it so that the tip of the thermometer is about midway through the meat, between the ribs, and not touching the bones. Our goal internal temperature is going to be 200-205, which will allow the collagen and connective tissues to break down and leave us with spoon-tender meat.

    Its important to barbecue the ribs around 225 for as long as possible to bathe them in maximum smoke. This will allow time for an awesome bark to form on the outside, and for the meat to absorb a nice, deep smoke ring. I recommend going at least 4 hours at these temps before you think about increasing the cook temp. After that, if time is of the essence, you can increase the cook temp to 250 to reach the internal temp goal faster. Once your thermometer reads 200-205, youre done. The meat should feel almost jiggly to the touch, and a toothpick or probe should slide in with no resistance.

    A quick note on spritzing during the cook: Ive cooked short ribs without any added moisture, and Ive also sprayed them with beef broth or basting sauce. Both turned out just fine in my opinion, so feel free to experiment with this for yourself.

    Season The Beef Short Ribs

    Now its time to get some flavor on these bad boys. Grab your favorite BBQ rub and a binder . For seasonings, try something with big and bold flavors to compliment the super beefy flavor of the ribs. Black pepper, hot peppers, and paprika are all good places to start. For binders, a light coating of mustard, hot sauce, or plain old olive oil will do the trick. Make sure to coat the ribs liberally on all sides, and youre good to go.

    Grilling The Short Ribs

    Cooking the ribs is also pretty easy. Basically, put them fat side down, on the hottest part of your grill. Dont touch them for a few minutes and then turn them to sear each side. Should take about 8 minutes to sear the ribs completely.

    Then move the ribs to a slightly lower heated area. If you are using charcoal, that will be around the outside of the grill. Let them cook slowly for about another 10-12 minutes in this area. Still give them a turn every once in a while, but no need to hover.

    You dont have to cover them. In fact, Gourmet advised against it!

    When these guys come off they will have some crispy charred bits and some almost medium parts in the middle. Its almost a fight to get all the meat off of a rib. They are really chewy, but that is the intended texture. What do you gain in exchange for the chewiness? A very rich, meaty flavor.

    • 4 pounds beef short ribs, trimmed of fat
    • 1 tablespoon chili powder
    • 1 tablespoon packed brown sugar
