What Are Short Ribs
As the name implies, this type of beef rib is shorter than other types. Although they come from several different parts of the cow, the best and meatiest short ribs come from the chuck section of the cow.
Meat from the chuck is full of fat and collagen. As a result, smoked beef short ribs have the best flavor after the fat melts away!
When searching for the best cut in the grocery store, keep an eye out for meat with as much marbling and meat as possible. And, of course, be sure to choose bone-in for extra flavor and even cooking. Boneless short ribs are best for other cooking applications.

What To Serve With These Short Ribs
The options for serving with these are many, but I would keep whatever else you are serving in a few categories. You either want it light and fresh like a salad like maybe this creamy kale slaw. The other option would be to pair them with something rich that would cut through some of the meatiness of the short ribs. Basically, Im thinking of mac and cheese here like maybe this One Pot Spinach Mac and Cheese.
Or you could kind of combine both concepts with something like this Charred Scallion Macaroni Salad!
Let The Beef Rest While You Make The Gremolata
As the beef relaxes off the heat, you can, too. The only thing left to do is make a simple take on gremolata to sprinkle on top of the short ribs. Combine minced garlic, parsley, orange zest, and salt and pepper in a small bowl, then use your fingers to rub the mixture together, releasing the flavors into the gremolata. Thinly slice the scallions you grilled, then stir them in, too.

Go For A Robust Rub Rather Than A Marinade
First things first: Begin by brushing your short ribs with salty, umami-rich fish sauce. That’ll also deliver a bit of moisture, which will help the rub adhere to the meat. All you need for the rub is brown sugar and finely grated garlic. The combination of sweetness and garlicky flavor will create an irresistible coating with a minimum of effort. And don’t worry about the saltyou’ll be adding that at the end.

Smoked Bbq Beef Short Ribs
When purchasing beef short ribs, choose ribs that are well-marbled. This will ensure the meat is full of flavor and, if cooked correctly, should be fall-off-the-bone tender.
This recipe makes the most of that wonderful marbling , and uses a simple salt and pepper-based rub to enhance the incredible beefy flavor of the meat. You dont want to overpower these, rather use what mother nature gave you and compliment the meat. Finish up with a good smoke and you have everything you need.
Between the meat, the seasoning, and the great smoke, youll have an all-around delicious beef rib that will be a memorable experience.
Smoked Beef Short Ribs Internal Temperature
Beef short ribs cook at a higher temperature than other smoked beef. They tend to soften somewhere between 205 and 210 degrees F. I prefer to use my Thermapen Mk4 to keep an eye on the internal temperature as Im smoking. The ThermoPop is a good budget-friendly option if youre needing something smaller that will still get the job done well.
Youll know your ribs are done when your thermometer slides into the meat just like butter. That tenderness should be a helpful indicator of how close your short ribs are to being done. And once they reach that perfect internal temperature, prepare yourself for some tasty, tender meat. These guys fall off the bone with barely a touch.

Selecting Beef Ribs For The Charcoal Grill
Pork ribs get most of the press, but smoked beef back ribs are an excellent choice for the smoker. Since the meat requires this type of long, slow cooking in order to achieve that fall-off-the-bone tenderness, its a perfect match. The cooking process itself should take at least four hours any less, and your ribs may come out too tough and chewy.
To cook beef ribs on a charcoal grill, youll want to start with some high-quality beef back ribs. The back ribs come from the rib roast , so the meat is naturally more tender than the tougher, fattier short ribs, which are located on the lower portion of the animal. Remember that short ribs might also be labeled as braising ribs, crosscut ribs, flanken ribs, English short ribs, or Korean short ribs. If youre unsure as to whether the cut youve picked out will be suitable for the grill, ask your butcher.
Pro Tip: Always strive to maintain cordial relationships with the people who work in your local meat department. A knowledgeable butcher is an invaluable asset to the home griller.
Bbq The Beef Short Ribs
Get your smoker or barbecue fired up to around 225. Place the ribs on the center of the rack and if you have a temperature probe, insert it so that the tip of the thermometer is about midway through the meat, between the ribs, and not touching the bones. Our goal internal temperature is going to be 200-205, which will allow the collagen and connective tissues to break down and leave us with spoon-tender meat.
Its important to barbecue the ribs around 225 for as long as possible to bathe them in maximum smoke. This will allow time for an awesome bark to form on the outside, and for the meat to absorb a nice, deep smoke ring. I recommend going at least 4 hours at these temps before you think about increasing the cook temp. After that, if time is of the essence, you can increase the cook temp to 250 to reach the internal temp goal faster. Once your thermometer reads 200-205, youre done. The meat should feel almost jiggly to the touch, and a toothpick or probe should slide in with no resistance.
A quick note on spritzing during the cook: Ive cooked short ribs without any added moisture, and Ive also sprayed them with beef broth or basting sauce. Both turned out just fine in my opinion, so feel free to experiment with this for yourself.

Now its time to get some flavor on these bad boys. Grab your favorite BBQ rub and a binder . For seasonings, try something with big and bold flavors to compliment the super beefy flavor of the ribs. Black pepper, hot peppers, and paprika are all good places to start. For binders, a light coating of mustard, hot sauce, or plain old olive oil will do the trick. Beef short ribs can be seasoned simply with cracked black pepper, kosher salt, and some garlic powder. Theres nothing wrong with keeping it good and simple, and if this is what you have on hand, I say go for it. Youll be plenty happy with the results.

Grilling The Short Ribs
Cooking the ribs is also pretty easy. Basically, put them fat side down, on the hottest part of your grill. Dont touch them for a few minutes and then turn them to sear each side. Should take about 8 minutes to sear the ribs completely.
Then move the ribs to a slightly lower heated area. If you are using charcoal, that will be around the outside of the grill. Let them cook slowly for about another 10-12 minutes in this area. Still give them a turn every once in a while, but no need to hover.
You dont have to cover them. In fact, Gourmet advised against it!
When these guys come off they will have some crispy charred bits and some almost medium parts in the middle. Its almost a fight to get all the meat off of a rib. They are really chewy, but that is the intended texture. What do you gain in exchange for the chewiness? A very rich, meaty flavor.

I didnt slather the ribs with the chimichurri. Instead people kind of spoons what they wanted over their ribs as they ate. The spicy chimichurri coupled with the strong meaty ribs is a perfect combo.

In a bowl of medium size, add 1 teaspoon of salt and garlic powder from each. Then add 1 tablespoon each of paprika, brown sugar, and chili powder in the same bowl.
