Im a sucker for grilled short ribs. I saw these beauties in the meat case at my local grocery store – flanken cut beef short ribs, lined up in their trays – and I had to buy them. Had to, I tell you!

Flanken style short ribs are the style used in Korean grilled beef short ribs, cut across the bone, about ¼-inch thick. I wasnt in the mood for Korean, though We had stir fry for dinner last night. I had a taste for something a little more American, so I went with Smoked Spanish Paprika rub.

What does Flanken mean, anyhow? Its derived from the Yiddish and German word for flank, because the ribs are cut from the flank of a side of beef. Flanken was a cheap cut, because short ribs are tough and chewy. Normally it takes long, slow cooking to tenderize it. But, if the short ribs are cut thin enough, against the grain of the meat, they become perfect for grilling, with a big beefy taste.

How Long Grill Boneless Ribs

Boneless ribs can be grilled in as little as 15 minutes, but for best results, 20-30 minutes is recommended. For extra flavor, you can marinate the ribs in your favorite sauce for a few hours before grilling.

Boneless beef ribs are an excellent substitute for other types of beef ribs. Theres no need to shell out more money for them because theyre just as tasty and meaty. When you grill, you get a smokey flavor, but this recipe eliminates it. In addition to the hot sauce and honey, the beef ribs are marinaded with a delicious sauce. Grilling after the ribs have been marinated will require a high or medium-high temperature of 375-400 degrees Fahrenheit. Grill them over direct heat for about 5 minutes per side to char them. After moving the beef ribs over to indirect heat, slow cook them for 30 minutes at 275 degrees F. When ribs reach 200F or higher, they are done.

Grill the ribs for five minutes per side or for 30 minutes more. If the ribs have become too cooked on residue, a new sheet of foil should be used. Continue to cook for an additional two hours.

The above recipe is for medium-rare beef, which is what I prefer to cook. If you want to make it even rare, cook it for longer. I usually cook my ribs for 12 to 14 hours, depending on how well I like them. You can also cook them for 18 to 20 hours if desired.

Pork ribs are a little easier to find in most major grocery stores in the U.S. and they also tend to be a little cheaper per pound. So if beef ribs are not easily found where you live or are just not in your budget you can indeed use pork ribs instead of beef ribs. In fact, you may find that pork ribs will come out more tender than their beef counterparts.

If you substitute pork ribs for beef ribs in this recipe you may want to reduce the cooking time by an hour or two so that your ribs do not overcook and become so tender that you end up with a slow cooker full of pulled pork and bones.

The Most Amazing Bbq Beef Short Rib Smell

The smells from this if I could bottle it, it would be a a huge hit!

As I approached the kitchen the smells were just intoxicating! I removed the foil and let them bake another 30 minutes to get that deep caramelized char on top.

Once they were done I pulled them out of the oven and plated them.

Dear GOD they were GORGEOUS! I brushed them with some of the reserved bbq sauce and then with what was in the pan, I actually poured it into a fat separating container and let it sit for a bit.

Once it did, I poured out the good stuff into a pan and let the fat stuff stay behind. I brought that pan to a boil and thickened it up with some more bbq sauce and some cornstarch. No way was I letting those flavors go to waste!

By the time Mr. Fantabulous got home, I had made a pot of perfect mashed potatoes to go with these, some rolls and a nice Caesar salad.

As he walked in with his gear you could see him immediately perk up and start sniffing the air like dog.

Cutest thing ever when he does that! Immediately came his smile and I swear he ran to bring in the rest of his gear! Dinner was awesome and I was rested. That truly was a fantastic Sunday and one that I think I need more of!

How To Cook Juicy Beef Ribs

After the ribs have marinated for at least four hours, set your grill to high or medium-high with a direct heat zone and an indirect heat zone.

Where it’s cut from: The ribs. Short ribs can be cut numerous ways, but come from the area of the ribs a bit further down towards the belly than rib steaks or strip steaks . When cut into long slabs with bone sections about 6 to 8-inches in length, they are referred to as “English cut.” When sliced across the bones so that each slice receives four to five short sections of bone, they are known as “flanken style.”
