The Best Corn For Grilling
For grilled corn, you want the freshest corn possible. Ideally its corn thats at peak season and picked as close to grilling as possible. The color of the kernels matters little, but you want ears that smell sweet, are firm when pressed, and free of blackened tassels, thats the ideal. Otherwise, just pick up what works for you.

What about soaking or brining the corn?
Brining or soaking the ears in water before grilling is thought to season and also plump the corn. There are two problems with those theories, though: In order to take on any salt from the brine, ears would have to soak for several days, at which point youre losing valuable sweetness as the ears age. Secondly, if youre buying fresh juicy corn, you cannot make it any juicier. While soaking may benefit older or off-season ears, it has no added value for fresh summer corn.

How To Grill Corn On The Cob
I have two methods for how to grill corn on the cob. They yield slightly different results, but both are delicious. Which one I pick on a given day depends on how much time I have and what Im craving. Feel free to choose whichever sounds best to you!
1. In the husk In this method, the ears of corn steam inside the husk, yielding juicy, tender kernels that are bright yellow and barely charred. I pull the husks of the corn back, leaving them attached at the base, and remove the silk. Then, I pull the husks back up and soak the corn in the husks for 10 minutes. After the corn soaks, I pat it dry and grill it in the husks until the corn is tender and light char marks form. I choose this method when Im craving really juicy, sweet grilled corn on the cob, and Im not as concerned about the char.
2. Straight on the grill Choose this method if youre all about the char! Here, I shuck the corn, removing the silk and husks, and cook the cobs directly on the grill. Cooking corn this way means that the kernels wont be quite as juicy theyll lose some of their moisture to the hot grill grates. However, theyll be nicely charred and full of smoky flavor. This method is also great if youre short on time. With no soaking required, the grilled corn cooks up in minutes.
How Many Corn Should I Eat A Day
It’s important to eat corn with moderation and as part of a balanced diet. Based on a 2,000-calorie diet, the average daily recommendation suggests eating about 2 ½ cups of vegetables, and corn certainly counts. How Do You Grill Corn On The Cob Without Husks
Corn on the cob can be grilled without the husks in two different ways. First, you can grill the corn directly on the grill grates. This results in a drier corn on the cob with a lot of smoky, grilled flavor. The sugar caramelizes in the corn caramelizes a bit more when grilled directly on grill grate, giving it a unique flavor. Second, you can grill your corn on the cob in foil. This traps steam in and creates a moist corn on the cob experience, but doesnt get as much of the smoky, grilled flavor.

Should I Add Oil Or Water
There are several schools of thought on this issue. Some folks think its best to brine the corn first, to add salt and moisture. Others swear by a spritz of vegetable oil, preferably butter-flavored, or they rub the cob in real butter. Purists maintain you can just slap the corn right on the grill exactly the way it is.
As far as brining goes, Ive seen many, many websites suggesting this is the only way to go.
A typical recipe says to soak the corn in a gallon of water with a ¼-cup of salt for up to an hour. They claim it seeps into all the pores and crevices, keeping the kernels tender and juicy. Sounds plausible
One voice stood out above the crowd as being the most authoritative on the subject, however, probably because he or she was the only one who seemed to actually test the process rather than just reiterate what others were saying. The evidence presented is compelling.
The source actually brined some corn to varying degrees, something I didnt see anyone else trying. Photographs in the article show deflated kernels after brining, and the longer the corn sat in the solution, the worse it got.
Unlike wet brining meats, which increases moisture in the final cooked product, the salt removed moisture from the corn kernels, making it tough and mealy. Not very appealing!

Smoke The Corn On The Cob
There’s not much you need to do to get smoking process started. In fact, there’s nothing you have to do. Unlike with most methods for cooking corn, all you’ll have to do to smoke it is place corn on the grill inside the husk.
To fully cook, you should let your corn stay on the heat for a minimum of two hours. Depending on how tender you want the kernels, you could let it cook for a maximum of four hours, but cooking it much longer than that could risk burns or mushiness.
As it cooks, remember to adjust heat levels and add more charcoal and wood as needed to keep the temperature within the target range. Cooking the corn over a low heat for several hours is the best way to ensure it’s evenly heated and fully cooked by the time it comes off the grill.

Tips For The Best Grilled Corn On The Cob
- Keep it fresh. Always start with the freshest corn you can find to have the sweetest, plumpest cooked cobs.
- No soak, no problem. Some people soak their corn husks in cold water, prior to grilling However, after trying it several times, I find this step to be unnecessary since;Ive never been able to tell a difference.
- Watch your cooking time. When corn is overcooked;it can become chewy because the longer heat breaks down the corns cell walls and the sugars take over,;leading the kernels to lose their crunch.
- No grill? No sweat. You can still achieve a nice charred flavor by using a cast iron grill pan or skillet. For this method, you will need to husk your corn. Put a little oil or butter in a skillet and get it hot. Place your corn in the skillet and turn every few minutes, getting a nice sear on all sides.
Why Should You Grill Corn On The Cob In Foil
When you grill corn on the cob in foil, the prep is minimal and the kernels turn out so moist and flavorful. The foil traps the steam and corn juices to keep the ears from drying out so theres no need for pre-soaking the corn.
On hot summer days, you can avoid turning on your stove by cooking foil-wrapped corn outside on the grill. Cooking corn in foil requires hardly any prep and is the easiest method. It is also quick and takes just 15-20 minutes on a grill at medium/high heat.

Easy Grilled Corn Recipe
With great enthusiasm, I went searching for a fabulous indoor grilled corn recipe. Surprisingly, there werent too many interesting ones. It seems the best way to prepare grilled corn on a griddle is to not overcomplicate it. What you do with the corn after it is grilled is another story. So, here is the simple way to grill corn using a Foreman Grill. This works best on the flat Panini style grill with the floating hinges that lift up to accommodate the height of the corn.
- 2 to 4 ears of fresh corn, depending on grill size
- Extra virgin olive oil
- Sea salt
1. Preheat the Foreman grill, with standard ridged grill plates, to 375°F.
2. Shuck and remove the silks from the corn.
3. On a plate or cutting board, brush or drizzle EVOO all over the corn, then sprinkle with salt and pepper.
4. Place the ears on the hot grill between the ridges, so they sit steady in the valleys, and cover with the top. Cook for 5 minutes. Roll 90 degrees. Cook another 3 minutes.
5. Serve with a little butter as a side dish to your favorite main entrée.
6. Note: If you want grill marks, try placing the corn horizontally at 90 degrees to the ridges. They do tend to roll doing it this way, so you will have to experiment.
