Knowing how long to heat up a charcoal grill or gas grill before you put anything on it is one of the most important keys to grilling success. High heat is what gives steaks and burgers an awesome sear and gets the ball rolling.
Charcoal grills usually need about 20 minutes to get to the right temperature. Gas grills typically take a little less time, generally between 10 to 15 minutes.
Dont Start Without A Super Hot Grill
Be sure to let your charcoal fully catch and heat up before attempting to grill on it, about 20-30 minutes, says Prentiss. Your fire should have a bed of red hot coals, high, even heat across the grill, and minimal flames and smoke.
A hot cooking surface is extremely important to caramelize the outside of the steak and secure in the flavor, says Jayawardena. This method will give you a crispy on the outside, yet moist and tender on the inside steak.
How To Cook A Ribeye Steak On The Charcoal Grill Quick View
To unveil how to cook a ribeye steak on the charcoal grill, you need to follow the following simple steps. So, lets get started:
- Firstly, season the ribeye steak with kosher salt and freshly powdered black pepper adequately.
- Then take a plastic wrapping sheet and wrap the steaks in it, set aside for 12 hours or overnight.
- Next is to start the cooking process of steaks. Similarly, the charcoal grill must be hot before putting the steaks on it. Then, place the steaks on the hot charcoal grill and let the steaks grill properly. Cook the steaks until your thermometer starts showing 130 to 135 degrees Fahrenheit for medium-rare and 135 to 140 degrees Fahrenheit for medium.

How Long To Grill Steak
For a 1 1/2-inch thick steak, here are the general cooking times:
- 6 to 8 minutes for rare
- 7 to 10 minutes for medium-rare
- 10 to 12 minutes for medium
- 12 to 15 minutes for well done
Note that the USDA recommends cooking whole cuts of beef to an internal temperature of 145°F.
Keep in mind that the thickness of your steak, the heat of your grill, and your desired level of doneness will all impact the time it takes your steak to grill. How To Evaluate Grill Temperature
Temperature of the grill is the next important variable to evaluate. I find it essential to be able to use your hand to evaluate the temperature of your grill.
I use the method where you hold you hand 1 inch over the grate and start counting. The amount of seconds that pass before you need to remove your hand is the value youll use to assess your grill temperature.
For example if you can hold your hand 1 inch over the grate for 2-3 seconds you have a perfect high heat for grilling a steak.
If you can only hold your hand there for 1 second or less you have a way too hot high heat and I advise not cooking just yet.
Holding your hand for 3-4 seconds is about a medium heat and 4-5 seconds is a medium low-low heat.
This method works for Great for charcoal but this Method also can be used for the Best Natural Gas Grills as well. Just use the same tips and time considerations for gas or charcoal.
These are all estimates but the key here is that once you get a feel for your own grill setup you will be able to know how long YOUR hand can stay over top of YOUR heat source to grill a perfect steak.
Essentially youll be calibrating your own temperature measurement system. The numbers that I give above are relative to MY hand over top of MY heat source.

How Hot Should The Grill Be For Steak
Raichlen recommends establishing two cooking zones in your charcoal grill: one thats very hot for searing the steak, and one thats medium for finishing the steak and cooking it through.
On a gas grill, heat the grill to 450°F with two burners going, which should only take about 10 minutes, then turn one of the burners down to medium to create two cooking zones.
Not sure if the grill is hot enough? Raichlen’s tip is to hold your hand 3 inches above the grill grate and count “1 Mississippi, 2 Mississippi…” If you can only hold it there for a second or two, the grill is hot and you’re ready to cook.
I followed Raichlens advice, and started my steak in the hot zone, then moved it to the medium zone to finish cooking. It worked like a charm.
How To Cook Steaks On A Weber Genesis Gas Grill
Americas love affair with grilling began right after World War II, according to Born to Grill, and based on the proliferation of grills available, it appears that the feelings havent waned. In 1952 an employee of Weber Brothers Metal Works took advantage of Americas passion and created Webers first grill. Weber introduced the Genesis gas grill 30 years later with an innovated system of metal bars to distribute the heat evenly. The Weber Genesis gas grill requires proper timing and correct temperature to achieve your favorite degree of doneness in your steak.
Move the Genesis grilling grates so they sit 4 inches above the burners. Spray the grates with a light coating of vegetable oil cooking spray.
Check the control knobs on your Weber Genesis gas grill to confirm they are in the Off position. Turn the gas cylinder valve counterclockwise to supply gas to the grill.
Turn the middle or front burner knob to Start/High. Press the electronic igniter button or use a barbecue lighter to light the burner on your Weber Genesis grill.
Turn all the burner knobs to High and close the lid on the Genesis grill. Allow the grill to preheat for 10 to 15 minutes.
Cook over high heat for 10 minutes for steaks 1 1/4-inch thick and thicker. Cook over medium heat for 4 to 5 minutes for steaks less than 1 1/4-inch thick.

How Hot Should Charcoal Grills Be For Steaks
When searing steaks, you need to ensure that the charcoal grill has enough heat to create that beautiful brown and crispy crust on the outside but not too hot to burn it.
At 450 degrees to 500 degrees Fahrenheit, you will be able to create that crispy crust on the steak within 2 minutes on each side.
However, you will not be able to cook the interior of the steak.
That is why I recommend using the two-zone technique so that if you are done putting that beautiful crust on the steak, you can use lower heat to cook the interior of the meat.
How To Cook A Tender Sirlion Steak On A Charcoal Grill
Sirloin steak is often used as a grilling steak because the meat is tender and lean. There are more expensive cuts of steak, but people watching their fat consumption tend to prefer this cut because of its low fat percentage. Meat may come already tenderized — a process done with a tenderizing mallet — but you can also achieve this effect at home. If desired, massage the meat with your fingers to help tenderize it before applying seasonings.
Season your steak as desired. For example, rub it with a steak seasoning mix, garlic or pepper and salt. Olive oil and various herbs can also be used, depending on the flavor you want to achieve in your steak.
Build a large pyramid of charcoal briquettes almost up to the grill grate. Light with a match or lighter, and let the briquettes burn. Once a layer of ash covers the briquettes, topple the pyramid, and spread the charcoal evenly across the bottom of the grill.
Place the sirloin steak on the grill, and cook according to its thickness. A steak should be cooked for four to five minutes per side per inch of thickness to achieve a medium-well steak. Medium-rare should cook for two or three minutes, and rare may only need one or two minutes per side.

Im going to tell you five quick and easy steps to grilling the perfect steak on your charcoal grill!
Step 1 Prep and season the steak
The first thing you will want to do is take your steak out of the fridge and season it on both sides with your favorite rub or the one we used below. After you have seasoned the steak let it sit for 30 minutes. Seasoning the meat and letting it sit for this time will help it cook faster and more evenly while holding the seasoning better.
Also, if there is any excess fat please trim that off to avoid flare ups while grilling the steak.
Step 2 Fire up the grill
For steaks you want your charcoal grill to be as hot as possible. Ideally anywhere for 550-650 degrees F.
You can either use a chimney for your charcoal or light a pile of about 100 Kingsford Hardwood Charcoal Briquettes.
When the coals are ready you will want to arrange them into two zones. Essentially you want all the coals on oneside of the grill for direct heat and then the otherside that doesnt have any coals will be your indirect heat.
Replace your top grate, allow the great to heat up. Place cover on the grill. Remember all vents on the grill should be fully open.
When ready to grill pour cooking oil onto a folded paper towel and oil the grate using a long-handled tongs.
Step 3 Grilling the Steak
Flip the steak over and sear the other side.
After the steak is properly seared move it to the warm side where there are no coals.

Prop your lid back on the grill, but dont fully cover itthe fire needs oxygen to thrive and stay lit. Let the charcoal burn until the edges turn white. Now youre ready to grill.
