Grilled Candied Sweet Potatoes
4 large Sweet Potatoes
Freshly cracked Black Peppercorns for seasoning
1 C Orange Juice
1 Tbsp freshly grated Ginger
1 C lightly packed Brown Sugar
1 stick Unsalted Butter, cut into small pats
Vegetable Oil for brushing
Freshly cracked Black Peppercorns for seasoning
Heat grill to medium heat.
Wash, dry then slice sweet potato into rounds of about 3/4 inch thick. Using a brush, coat all flat sides of the sweet potato with vegetable oil. Flip cauliflower gently so that it remains intact. Season both sides with salt and pepper.
Place sweet potato on heated grill. After roughly 5 minutes, or until charred grill marks are clearly visible, flip and grill another five minutes.
While sweet potato is grilling prepare the glaze by mixing orange juice and ginger in a clean bowl.
Once sweet potato is grilled on both sides, transfer to a 13 x 9 oven safe dish. Place as many grilled sweet potatoes that will fill the pan in a single layer. Spoon half of the orange ginger mix over the sweet potato, followed by half the pats of butter and half the brown sugar.
Place remaining grilled sweet potato over the first layer, spoon the rest of the ginger mixture over the second layer, followed by the rest of the pats of butter, then the remaining sugar. Cover the dish tightly with aluminium foil, place on grill and close the lid of the bbq, cook for 20 minutes.
Remove the foil from the pan and let it cook another 20 minutes.

What Kind Of Pan Should You Use To Make Grilled Sweet Potato Casserole
When Im putting something like this on the pellet grill, I will always prefer cast iron.
For this particular dish and for most of my casseroles, I use a Lodge Stoneware 9×13 inch pan, and LOVE it. You can also use a metal pan, but it is thinner and you may be more apt to get some scortching on the bottom, so watch out for that.

- 3 or 4 medium red skinned potatoes
- Extra virgin olive oil to coat
- 2 tsps paprika
- 1/8 tsp cayenne pepper
- Sea salt and cracked pepper to taste
1. Heat the GF grill to high.
2. Peel the sweet potato. Cut in half horizontally. Slice the halves into rectangular fries that are 1/4 to 1/2 approximately.
3. Toss the potatoes in EVOO, garlic, cayenne, salt and pepper to evenly coat.
4. Cook the fries on the grill with the top closed for approximately 10 minutes. The timing will depend on how much moisture is in the potatoes. After 5 minutes you may want to turn the fries, as the bottom sides tend to cook faster and darker.

So for this dish, you can use either the white fleshed or the yellow fleshed sweet potatoes, or a mix of the two.

What Are The Best Potatoes For Grilling
The best potatoes for grilling are waxy, less starchy potatoes.
- White potatoes
- Yukon Gold potatoes
- Fingerling potatoes
Because they have less starch, these potatoes are denser, and hold together better on the grill. Starchy potatoes such as russets or sweet potatoes, are prone to crumbling when cooked on a grill.
However, if you have a Traeger grill, you can roast starchy potatoes whole at high temperatures — the perfect way to cook russets and sweet potatoes .
Should You Boil Potatoes Before Grilling
Its a good idea to boil potatoes in salted water for about five minutes before direct grilling them. The salt in the water will help flavor the potatoes. Also, boiling will partially cook the potatoes which will let you direct grill at a higher temperature, for a crispier exterior.
