You’ll save money and have more flexibility when you buy frozen shrimp in the shell and thaw them yourself when you’re ready. Most raw shrimp in the fresh fish section of your market have been previously frozen and thawed, and their shelf life is pretty short. Convenient if you’re cooking them immediately, but you’ll pay more per pound. And when you’re choosing frozen, shrimp in the shell always give you better flavor and texture than peeled and deveined.

How To Grill Mussels

Mussels are far more delicate than oysters. For this reason, it’s best to steam them first, until the shells open, and then finish them on the grill. If they’re cooked on the grill’s intense heat for the whole time, their brittle shells can crack and break.

While steaming first may sound like an annoying extra step, it makes these delicious mollusks a marvelous make-ahead option, perfect for potlucks and parties. Just follow Smith’s steps:

  • In a pot with a steamer, bring your liquid to a gentle simmer, throw in mussels and steam until the shells begin opening, about 7 to 8 minutes for large varieties. Remove them with a slotted spoon as soon as they begin to open.

  • Once cool enough to touch, remove mussel meat with your fingers.

  • Rip the shells in half at center and discard one half.

  • Place the meat back into its half shell and top with your favorite compound butter or sauce. Either plate, cover and refrigerate or place onto grill at medium-high heat and cook just until sauce or butter melts and begins to bubble .

    Inspired by Bobby Flay, I tried something that I had never done before: grilling shrimp on a gas barbeque grill. The result was disastrous. The shrimp cooked just fine, but the shells adhered to the shrimp as if they had been glued on with epoxy.

    The only way to peel the shrimp was to pull off big pieces of shrimp flesh at the same time. I cooked the shrimp over a low heat and they still only took about five minutes to cook.     Shrimps are sea creatures that stay on the ocean floor. They have a very hard shell on their back, many feathery legs, and a tail. What we love about shrimps is that they have a soft inside. Which is full of fiber-like protein!

    All you need to do before cooking is devein and take the head, tail, and legs off. And put the shrimps into the boiling water. But, shrimps take very little time to cook in general. So its not too hard to get it overcooked, resulting in hard shells.

    Heres what happens-

    The soft inside of the shrimp has fiber-like proteins. So when its cooked, the proteins heat up and become very sticky. They stick to the shell as hard as possible. This is the reason cooked shrimp shells are hard to peel.

    What Size Is Best

    Large shrimp or jumbo prawns? This reference point whether on a bag or display is subjective, confusing and no real guide to the size on offer. Fishmongers grade shrimp by the number that you get to the pound weight so for example a shrimp graded 21/25 means that you get between 21 and 25 in 1lb.

    Note:- Whist in the UK we use the metric Kg as the unit of measure for retail sales, the sizing of prawns is still done by the pound .

    I tend to think of anything between 15 and 25 as large and ideal for grilling.

    Prepping Shrimp For The Grill

    There are two great debates when cooking shrimp: shell or no shell and;vein or no vein. Each has its advantages, and there is no right or wrong answer. Depending on the shrimp you buy, they may already be deveined and shelled with only the tail left.

    While most Americans prefer shelled shrimp without the vein, whole shrimp are preferred in much of the world. Leaving the shrimp in the shell makes preparing them fast and prevents them from drying out on the grill. Your guests will have to remove the shells while eating.

    Without the shell and vein, shrimp are easier to skewer. This is also the better choice if you’re going to use a marinade because it allows the extra flavor to get inside the shrimp, which will have more impact.;

    You must remove the shell to devein a shrimp. When shelling the shrimp, leave the tail because it makes them easier to eat by handit’s sort of a small handle. To devein shrimp, use a small pairing knife or deveiner to cut a slit along the back and remove the black, stringy vein.

    Solution : Submerge In Cold Water

    One of the most effective ways of peeling hard to peel shrimps is keeping them in cold water. This will help the shell to separate from the meat. And causing some kind of ease when peeling them.

    Heres what you have to do-

    Take a big bowl of cold water and put the shrimps in there. Leave them in the bowl for about an hour. After that, try cracking the shells or rubbing the shells off one by one.

    Remember: The shrimps become pink when they become overcooked. Only add them in cold water if they turn a little opaque pink.

    Unfortunately, cold water cannot help all sorts of hard to peel shrimps. This method usually works best for

    • Over-boiled shrimp
    • Overcooked Shrimp

    Some people dont like to get messy when eating in a restaurant and I certainly appreciate that. However, youve ever been to a crab shack you know that sometimes it is fun to get messy especially if it makes the meal taste better. They finally put one of those restaurants nearby where they serve you a bag of seafood with your choice of seasoning or sauce. I order my seafood with Old Bay butter and that is messy as all hell.; But you know what?; I dont care because its delicious.; I will be using shell on red Argentinian shrimp from Omaha Steaks for my version of this recipe.

    When Is It Okay To Grill Shrimp Without The Shell

    There are a number of times where it is perfectly fine to grill shrimp without the shells left on.

    • If you’d like to impart a smoky flavor, then remove the shells and use a charcoal grill or a gas grill with wood chips. The shell will actually block and absorb the smoke in this instance, so it is best to remove it.
    • If you are marinating the shrimp, then there is no need to cook them with the shells on. The shells can keep the marinade from infusing the shrimp meat. Not only that, but marinade adds moisture to this delicate seafood, meaning that it is less likely to dry out.

    Solution : Colander Method

    If your shrimps are frozen, its ideal not to microwave the shrimps to defrost. Or even use hot water or heat. Because that causes the shell to stick to the meat more than before.;

    What you can do is take a colander and put the shrimps in it. And store the colander in the refrigerator overnight. Keep a bowl underneath to catch the dripping water. This way youll have the shrimps defrosted gently.

    After a day, youll see the shell and the meat has a kind of separation. This is your chance to start peeling the shells. The colander process will need some time, but the result is worth the wait. Just dont try to force the shrimps open!

    Grilling fast-cooking foods is always a balancing act. Hot and hard is the only way to develop those characteristic deep brown grill marks and charred spots that give grilled foods their unique flavora process called the Maillard reaction that takes place rapidly at around 300°F and higher. On the other hand, for the most tender, juicy meat, gentle and slow is the way to go. This is never more true than when you’re cooking shrimp.

    You see, shrimp happen to be quite moist, and since the Maillard browning reaction can’t begin to take place until surface moisture has evaporated, you need plenty of high heat to get those shrimp browned and flavorful. On the other hand, shrimp meat is also quite delicate. It goes from tender and juicy with a nice snap to overcooked and rubbery within the span of a few degrees.

    With a big fat steak, it’s relatively easy to get the best of both worlds. You can brown the exterior before the interior overcooks. Shrimp, on the other hand, are so darn small* that even with the most powerful grill and ultra-high heat, it’s very difficult to brown them significantly before they begin to overcook. Under normal conditions, you’ve got two choices: flavorful and rubbery, or tender and bland. I’m not particularly happy settling for either of those.

    *I mean, they’re shrimps, after all.

    How To Grill Clams

    When buying clams, make sure all the shells seal tight. If you find one that does not, discard it. When youre ready to grill, heres what to do:

  • Grill cleaned clams over direct high heat for 5 minutes. Make sure the lid is down. After 5 minutes check the grill and remove any clams that have opened.
  • Grill clams for 2 to 3 more minutes, then check again. Replace the lid and check 2 to 3 minutes later, removing the remaining opened clams. If any have not opened, discard them.
  • Add smokiness if you want! From here, enjoy the clams immediately, or to add a layer of smokiness, return them to the grill under indirect low heat and smoke with apple or cherry wood for another 20 minutes.

    How To Put Shrimp On Skewers

    The best way to put shrimp on skewers is to start at the thickest part of the shrimp and thread no more than 5-6 on each skewer. This ensures the shrimp adhere to the skewer without overcrowding.

    Here are a few helpful tips:

    • Metal or Wood: Metal skewers are a great option if you already have them on hand, but I actually prefer wooden skewers as it adds to their charcoal flavor. If using wooden skewers, make sure to soak skewers in water for at least 20 minutes to prevent them from disintegrating.
    • With Shell or Without Shell: I find the shrimp are easier to eat without the shell, but with the tail still intact. That being said, you can leave the shell on to lock in those essential shrimp juices, but remove the vein. Check out Easy Shrimp Marinade for more info on how to do so.
