When purchasing boneless breasts, cuts that are 10 ounces or more take much longer to grill and can result in dry, stringy meat. Opt for pieces that are between five and eight ounces they’ll cook faster and retain more moisture.

Breasts are naturally thicker on one end, and the large ones can vary by almost two inches from end to end, so it’s smart to prepare them for even cooking. For average to smaller cuts, use a meat pounder to even out the thickness and, if grilling up something larger, butterflying is best.

How To Make BBQ Grilled Chicken – Grilled Roadside Chicken Recipe – Weber Grill

The main reasons for meat like chicken, fish or beef sticking to your grill grates are that the meat isnt hot enough, or that your grill grates are either dirty or dont have enough oil to act as as a lubricant.

In scientific terms, its when the proteins in the meat bond with the metal of the grates, which can only be undone once the outer layer of the meat starts to dry and develop grill marks.

As well as this, if your meat has rich seasonings or sauces on them then the sugar content of these can turn to carbon as they cook and stick to the grates.

Grill time for drumsticks and thighs takes at least 40 minutes. There are two schools of thought here.

One method uses direct heat the entire time. Using medium-high or 450°F means youll need to turn them every 5 minutes to prevent burning.

The other method is to use indirect heat for 30 minutes and direct heat for the last 10 minutes or so to brown them off.

Regardless of the method you choose, if you want to add sauce, do it during the last 10 minutes, so the sugar doesnt burn.
