How to Grill a Sirloin Steak

A good estimate of total cooking time with a hot grill is 9 to 12 minutes. There are many variables: the exact grill temperature, the thickness of the steak, and your desired final temperature.

A sirloin is from a well-used muscle area of the cow, so it tends to be tougher. It is also leaner than many other cuts, so it is best cooked on the rarer side. If you like your beef well done, you should pick a different cut of meat.

YOUR TIME WILL VARY and NEVER COOK BY TIME ALONE. There you have it. I apologize for “yelling,” but I can not emphasize those points enough.

Like most cooking, there are many variables.

  • The size and thickness of the meat
  • The exact temperature of the meat
  • The grill temperature at the start of cooking
  • How much heat your grill loses during flips
  • Your desired final internal temperature

You must have an instant-read meat thermometer to do this correctly.

Doneness

Please note images may vary some since they are from several cookings over time.

Trim two sirloin steaks, about 8 oz. each and about 1 inch thick.

Clean and oil grill. Preheat the grill on high. Wait to preheat if using the marinade.

Optional: Use a mechanical meat tenderizer if available to prep meat. If not available, use a narrow knife and puncture each side about 20 times.

Remove and let rest for 5 minutes.

A Primer On Sirloin Cap Steak

If youve ever ordered a coulotte steak in a restaurant, congratulationsyouve already had a sirloin cap steak, even if you didnt know it. The two terms are interchangeable. Both refer to the flat triangular muscle just above the top sirloin.

Another name for the coulotte or sirloin cap steak is picanha, a term thats found on the menus at Brazilian steakhouses (also known as churrascarias. In these cases, the meat is placed on skewers before its grilled, sliced, and served to customers. If youve only had picanha under these circumstances, you may not recognize the cut when you first encounter it in its raw form.

The sirloin cap can either be prepared whole or trimmed into narrower steaks. Youre more likely to find the smaller version, but both are set at an affordable price point, making them appealing to budget shoppers.

If you opt to purchase the sirloin cap roast whole and trim it into steaks yourself, youll see that theres a generous layer of fat covering the top. You can trim as much of this as you like, but we would recommend leaving a thin membrane along the edges to ensure that the cooked steaks are as juicy as possible.

Some less knowledgeable butchers might confuse the sirloin cap with the popular tri-tip cut. Seasoned professionals, however, should be able to tell the difference easily. For more details about how these cuts differ from one another, take a look at this video tutorial.

  • How to Use a Smoker Box for Gas Grilling
  • Top sirloin, while not as tender — or nearly as expensive — as tenderloin or cuts from the short loin like New York strip, is more than tender enough for high heat grilling. This flavorful, versatile steak can be cut into individual or kabob-sized portions for grilling and pairs well with a number of marinades and rubs. However, you can also get delicious results using a large, thick cut top sirloin — preferably a 2 1/2 to 3 pound steak — and simple rub of salt and pepper.

  • Heat your grill on high heat, and brush your steaks lightly with oil.
  • Once the grill comes to temperature, place the steaks on the grill.
  • Flip steaks over every three minutes, and check the temperature regularly.
  • Remove the steaks from your grill once your desired temperature is reached.
  • Allow the steaks to rest for at least five to ten minutes, and then enjoy.

    Common Grilling Steak Times

So, how long do you cook steak on the grill? That answer largely depends on the thickness of the meat youre cooking. You can cook thin or thick cuts on the grill just fine, but youll definitely want to alter your times to cook your desired cuts to the right doneness, which, again, is a matter of preference.

One good tip to keep in mind is to use a meat thermometer for thick cuts of steak and a timer for thin ones. A steak thats ¾ of an inch thick or less may be difficult to get an accurate temperature reading from, so a timer can help. But a meat thermometer can give you a more precise idea of the doneness of your steak to make sure its right.

For a;medium-rare doneness, you typically will need to grill your steak between 4 to 6 minutes on each side, depending on thickness. For medium cooks, shoot for closer to 5 to 8 minutes on each side. Its always best, though, to start with the lower grilling steak time and check with your finger to see if it might need a bit more time, instead of allowing it to cook for a couple of extra minutes. You can always cook it a bit longer if required, but you cant get back tenderness you lose from overcooking.

    When you touch the center of your steaks, a medium rare cook will spring back slightly, yet still feel squishy. A medium cook will be more springy than squishy. If all else fails, you can always cut a small slit in the center of your steak to check its color, but this should only be used as a last resort.;

How Do I Cook The Perfect Sirloin Steak

Any grill master worth their salt is going to tell you that the most important thing that you need when it comes to cooking the perfect steak is TEMPERATURE.

Temperature plays in several aspects of cooking your steak.

First, the temperature of your steak itself. NEVER cook a steak thats straight from the fridge. Fresh is always best, of course, but if your steak comes from the fridge, make sure to rest the steak until it comes to room temperature.

Cooking steak at room temperature allows the heat to evenly penetrate the steak and cook it through properly.

If you try to cook cold steak, the outside of the steak could burn before the interior even warms up!

Second, the temperature of your cooking method. Whether youre grilling steak on a charcoal grill or cooking it on the stovetop, you want to make sure that the cooking surface is screaming hot.

The high temperature is necessary to sear) your steak and seals the juices inside. Plus, you get that nice, charred surface!

    If the cooking surface isnt hot enough, youll end up with a rubbery, gray steak.;;

Finally, the temperature of your cooked steak. We know its tempting to jump right in and carve up a hot steak, but you need to let it rest!

Giving the steak time to rest allows the muscle fibers to relax and to reabsorb all that juicy goodness so that you end up with a tender, moist, and flavorful cut of meat.

  • More tender cuts of steak, like the sirloin, ribeye and new york strip should marinade for 20 minutes, up to 2 hours.
  • Tougher cuts, like a flank or strip steak should marinate for 4-8 hours.
  • I do not recommend marinating for more than 8 hours. After then, the acidity of the marinade will start to break down the proteins and can cause the steak to become mushy.
  • Coconut aminos can be substituted for soy sauce to make the marinade soy-free and gluten-free.;;Coconut aminos are much lower in sodium than soy sauce, so I do recommend adding 1/2 teaspoon salt to the marinade if you replace the soy sauce with coconut aminos.

Sirloin steak comes from the rear back portion of the cow, and comes in two parts; the top sirloin and the bottom sirloin. The top sirloin is the more tender cut, and is typically labeled as top sirloin on the packaging. Bottom sirloin is less tender, and is typically just referred to as sirloin or sirloin steak. There is the “top sirloin,” which costs the most of sirloin and is most tender. It will definitely be labeled as top to fetch the premium price.

How To Cook The Steaks In A Skillet

If you dont have a grill handy, you can also cook these steaks in a hot skillet on the stove. I recommend a cast iron skillet, if you have one, but if not, any heavy-bottomed skillet will work.

  • Place the skillet on the stove and turn the heat on the stove to high. Wait for the skillet to get hot before adding the steaks. Just like when cooking steaks on the grill, adding them to a hot skillet will ensure that perfect seared crust on the outside of the steaks.
  • Add a small amount of oil to the skillet to prevent sticking and give the steaks a nice sear. Depending on how large the skillet is, 1-2 teaspoons will do.
  • Pat the steaks dry before adding them to the skillet. When placing steaks on the grill, any excess marinade will drip through the grill grates. When cooking the steaks in a skillet, the marinade has no where to go, so it will stay in the skillet and you wont get that beautiful sear on the outside of the steak.
  • For a perfect medium rare steak, cook a 1 inch thick steak in the skillet for 4-5 minutes per side. For a steak that is 1 1/2 inches thick, add 1-2 minutes to the cooking time per side.
  • Insert an instant read thermometer into the steak. Remove the steak once it reads 130°F for a medium rare steak. For a medium steak, wait until it reaches 140°F and for a medium well steak, wait until it reaches 150°F.

Rib eye steaks should be cooked to 130 degrees for medium-rare doneness, which typically takes about 5 minutes on each side. For medium doneness, cook a grilled ribeye steak to 140 degrees for about 7 to 10 minutes on each side.
